    Objective

To investigate the blood glucose regulatory effects of Pediococcus acidilactici AUI2505 and Limosilactobacillus reuteri AUI2506 on hyperglycemic Danio rerio.

    Methods

The in vitro probiotic properties and safety of 2 strains of lactic acid bacteria were evaluated through simulated gastrointestinal fluid tolerance tests, antibiotic susceptibility assays, hemolytic activity assessment and analyses of hydrophobicity and auto-aggregation ability. A hyperglycemic Danio rerio model was established by immersing the fish in water containing 3% glucose to induce blood glucose metabolism disorder, after which the Danio rerio were treated with the bacterial strains. After intervention, the survival rate, blood glucose levels, insulin levels, inflammatory factors and glucose tolerance of the Danio rerio in each group were measured.

    Results

Strains AUI2505 and AUI2506 exhibited survival rates greater than 80% in simulated gastric fluid and greater than 40% in simulated intestinal fluid, respectively. Both strains were sensitive to most antibiotics tested and non-hemolytic. The 2 strains exhibited favorable hydrophobicity and auto-aggregation capacity. In the hyperglycemic Danio rerio model, it was demonstrated that following intervention with bacterial suspensions of AUI2505 and AUI2506, all experimental groups exhibited normal larval survival rates, blood glucose and inflammatory cytokine levels were significantly decreased (P<0.05), and glucose tolerance was significantly enhanced (P<0.05). Additionally, a significant reduction in insulin level was shown in the AUI2505 group (P<0.05).

    Conclusion

Pediococcus acidilactici AUI2505 and Limosilactobacillus reuteri AUI2506 have significant hypoglycemic effects, providing a theoretical foundation for their use in adjunctive probiotic treatment for type 2 diabetes mellitus.

    Objective

To evaluate the hypoxia tolerance activity and mechanisms of action of a compound formulation consisting of Olea europaea fruit-Lycium barbarum-Panax quinquefolius compound (Olea europaea fruit polyphenols:Lycium barbarum extract:Panax quinquefolius extract 5:5:1, m:m:m).

    Methods

BALB/C mice were orally administered the compound for 30 consecutive days. Hypoxia tolerance was assessed using a normobaric hypoxia test (referencing Health food functional evaluation methods, 2023 edition) to determine survival time. The hypoxia tolerance mechanism was investigated by analyzing lactate dehydrogenase (LDH) activity, malondialdehyde(MDA) content and superoxide dismutase (SOD) levels in brain and lung tissues.

    Results

The Olea europaea fruit-Lycium barbarum-Panax quinquefolius compound significantly prolonged hypoxia survival time in mice [low, medium and high dose groups: (30.35±5.63), (37.53±6.72) and (39.13±8.73) min, respectively, significantly outperformed the control group (22.91±1.61) min; P<0.05 or P<0.001], and the effect was dose-dependent. Its effect was superior to that of the positive controls [Rhodiola oral solution: (26.50±2.44) min; Hongyi capsules:(28.93±6.67) min]. The mechanism was that it reduced LDH activity (reducing anaerobic metabolism) and MDA content (inhibiting lipid peroxidation), and increased SOD activity (enhancing free radical scavenging ability) in brain and lung tissues.

    Conclusion

The Olea europaea fruit-Lycium barbarum-Panax quinquefolius compound exerts hypoxia tolerance effects by modulating oxidative stress pathways, including free radical scavenging, lipid peroxidation inhibition and antioxidant enzyme activity maintenance, and thus possesses the potential to be developed as a functional food.

    Objective

To evaluate the protective effects of α-ketoglutarate (AKG) on oxidative damage induced by D-galactose (D-gal) in rats and explore its potential mechanisms.

    Methods

Male SD rats were used as experimental subjects. Oxidative stress injury was induced by intraperitoneal injection of D-gal solution, and the animals were randomly divided into 5 groups: Control group, model group, low-dose AKG group (AKG-L, 50 mg/kg),medium-dose AKG group (AKG-M, 100 mg/kg) and high-dose AKG group (AKG-H, 200 mg/kg). Rats were administered the respective treatment once daily for 4 weeks. The levels of oxidative biomarkers, including malondialdehyde (MDA), protein carbonyls, as well as antioxidant indicators and enzymes such as catalase (CAT),superoxide dismutase (SOD) and reduced glutathione (GSH), were determined using colorimetric assays in plasma and liver tissues. Histopathological examinations were conducted to assess the protective effects of AKG against D-gal-induced oxidative damage. Furthermore, 16S rRNA sequencing and ultra performance liquid chromatography-tandem mass spectrometry were performed to analyze gut microbiota composition and short-chain fatty acids levels in each group, in order to investigate the potential antioxidant mechanisms of AKG.

    Results

Compared with the model group, AKG administration significantly reduced MDA and protein carbonyl levels in plasma and liver, while partially enhancing the activities of SOD and CAT as well as GSH levels. Additionally, AKG could modulate the structure of gut microbiota and increase the relative abundance of Lachnospiraceae NK4A136 group, Prevotella and Clostridia vadinBB60 group. Compared with the control group, the levels of the short‑chain fatty acids valeric acid, butyric acid and isobutyric acid in the intestines of rats with oxidative damage were significantly reduced. Following AKG intervention, the levels of these 3 kinds of short‑chain fatty acids were markedly increased, with butyric acid and isobutyric acid showing the most pronounced improvement (P<0.01),approaching those of the normal control group.

    Conclusion

AKG exerts a significant protective effects against D-gal-induced oxidative damage in rats. This protective effect is accompanied by improvements in gut microbiota composition and short‑chain fatty acid levels. These findings suggest that the gut microbiota-short‑chain fatty acid axis and antioxidant effects may jointly contribute to the protective action of α‑ketoglutarate.

High-value edible vegetable oils, such as camellia oil or olive oil, have drawn much attention from the market for their authenticity of origin due to their unique nutritional value and economic attributes. However, issues like fraudulent origin labeling and adulteration have severely compromised the protection of geographical indication products and industry development. Currently, discriminant techniques, including near-infrared spectroscopy, inductively coupled plasma mass spectrometry, stable isotope ratio mass spectrometry, fatty acid profiling and electronic nose, etc., have widely been applied for origin traceability. Multisource data fusion combined with machine learning has demonstrated superior accuracy and robustness compared to single-technique approaches. This article systematically summarized the research progress of the aforementioned detection technologies in the traceability of high-value vegetable oils. It also focused on analyzing the main problems existing in the current research: Most of the existing studies concentrated on the identification of large-scale differences across countries or provinces, while there was a relative lack of detailed traceability research at the county-level and smaller scales, and there was also a lack of unified data preprocessing standards and a multi-source information collaboration framework. Based on this, this paper proposed that in the future, efforts should be made to establish standardized preprocessing procedures and shared databases. Through the deep integration of multi-dimensional data such as spectra, elements, isotopes and volatile components, as well as the optimization of intelligent algorithms, a leap from precise identification of small-scale production areas to dynamic verification should be achieved. The construction of an intelligent traceability platform integrating data management, feature comparison and model reasoning will provide solid technical support for ensuring product authenticity, improving regulatory efficiency and promoting the sustainable development of the high-value vegetable oil industry.

With the social development and the improvement of living standards, consumers’ requirements for the quality and safety of agricultural products have been continuously increasing. As one of the important means for identifying the authenticity of agricultural products, origin traceability has garnered widespread attention in recent years. Stable isotope analysis, characterized by its low sample requirement, high accuracy, strong applicability and resistance to human interference, has been widely employed in origin traceability research for various agricultural products. However, relying solely on stable isotope analysis sometimes fails to achieve the desired accuracy in traceability. Consequently, combining stable isotopes with other techniques has become a significant direction for improving traceability precision. Currently, the integration of stable isotopes with techniques such as multi-element analysis and organic component analysis has demonstrated effective application in origin discrimination for various agricultural products, including grains, fruits and medicinal herbs. This paper reviewed the research progress over the past 5 years regarding the combination of stable isotope analysis with other techniques in the origin traceability of plant-derived agricultural products. It summarized existing challenges in practical applications and offered insights into future development directions, aiming to provide a reference for achieving more accurate origin traceability of agricultural products.

To establish a technical method based on untargeted metabolomics, analyze the differences in metabolites after blending glacial acetic acid (ethanol fermentation method) in brewed vinegar, and screen characteristic markers for adulteration identification.

    Methods

Taking Ninghuafu traditional aged vinegar as the research object, ultra performance liquid chromatography-quadrupole-Orbitrap tandem mass spectrometry(UPLC-Q-Orbitrap MS/MS) was used to collect metabolite components of vinegar samples with different dilution degrees (acidity ranging from 6.0%–8.0%). Combined with multivariate statistical analysis methods such as principal component analysis and partial least squares discriminant analysis, differential metabolites were screened and identified.

    Results

A total of 5 markers with significantly differences were identified, including oleamide,N-benzyl-linoleamide, triethylcitrate, dibutyladipate and monopalmitin. When the content of oleamide was significantly lower than 479.99 µg/kg, and the content of N-benzyl-linoleamide, triethylcitrate, dibutyladipate and monopalmitin were higher than the levels in traditional brewed vinegar (0.92, 0.89, 10.82 µg/kg and 56.56 mg/kg,respectively), these compounds could effectively distinguish whether the vinegar had been adulterated. The content of oleamide showed a significant downward trend with increasing glacial acetic acid concentration, with a content of 39.40 µg/kg in samples with an acidity of 8.0%. N-benzyl-linoleamide (9.50 µg/kg) reached peaks in the sample groups 7.0% acidity. Triethylcitrate (4.22 µg/kg), monopalmitin (129.26 mg/kg) and dibutyladipate (27.66 µg/kg) in the 8.0% acidity sample reached 4.75, 2.29 and 2.56 times that of traditional vinegar.

    Conclusion

The untargeted metabolomics method based on UPLC-Q-Orbitrap MS/MS established in this study screens out significantly differential biomarkers, which provides a novel technical approach for the authenticity identification of vinegar, and guarantees the quality of vinegar products as well as protects the health rights and interests of consumers.

To establish a rapid identification method for the authenticity of honey botanical origin, based on an isothermal amplification approach for honey pollen gene detection, combined with a time-resolved fluorescent microsphere lateral flow strip (TR-LFS).

    Methods

A rapid DNA extraction method for honey pollen was constructed to obtain the effective maturase K (matK) target gene template of Robinia pseudoacacia within 20 min.Denaturation bubble-mediated strand exchange amplification (SEA) was employed to achieve exponential amplification of the target sequence under a constant temperature of approximately 65 °C. To enhance amplification efficiency, single strand DNA-binding protein (SSB) was added to inhibit non-specific annealing of single strands, significantly improving primer hybridization efficiency and amplification specificity. When target pollen DNA was present in the honey, the SEA amplification generated double-stranded products labeled at both ends, which were subsequently detected visually via the TR-LFS based on fluorescence.

    Results

The fluorescence signal intensity of the TR-LFS allowed for visual determination of honey botanical origin authenticity. Using Robinia pseudoacacia honey as a model, the naked-eye detection sensitivity of this method for the target content reached 1% (V:V), and no cross-reaction was observed with other botanical honey sources.

    Conclusion

The detection method established in this study significantly enhances the amplification efficiency of SEA technology through the introduction of SSB.Combined with the high sensitivity and stable fluorescence output characteristics of TR-LFS, and eliminating the need for complex thermal cycling equipment, this method is suitable for on-site rapid detection, providing reliable technical support for authenticating honey floral sources.

To establish a method for the detection and identification of lysozyme in complex food matrices by gold nanoparticle (AuNP)-aptasensor array.

    Methods

The 3 lysozyme-specific aptamers were selected as recognition elements, and a sensor array was constructed using AuNP color changes as the response signal. Based on the differences in binding affinity between lysozyme and the 3 aptamers, combined with the aggregation state and color change rules of AuNPs under salt-induced conditions, the characteristic color response differences of the samples were employed as lysozyme “fingerprints”. Supervised machine learning via linear discriminant analysis was applied to enhance model orthogonality, enabling recognition and prediction of unknown samples.

    Results

The 3 aptamers exhibited distinct binding affinities for lysozyme, with dissociation constants (KD) of 141.528 nmol/L(Seq-1), 67.671 nmol/L (Seq-2) and 38.404 nmol/L (Seq-3). The limits of detection of lysozyme for the 3 aptamers Seq-1, Seq-2 and Seq-3 alone were 14.45, 15.739 and 1.95 nmol/L, respectively. The difference in binding affinity leaded to different degrees of protection for AuNPs by aptamers, causing AuNPs to present different aggregation states under salt-induced conditions and exhibit gradient color changes from red to blue. Characteristic “fingerprint spectra” were formed based on the color differences between food matrices with and without lysozyme added. A linear discriminant analysis model was constructed based on the data matrix of “3 nucleic acid aptamers ×18 kinds of food matrices ×5 parallel experiments”, achieving 100% accurate identification and classification of 18 kinds of food matrices with 100 nmol/L lysozyme added. The variance contribution rates of the 3 discriminant factors were 88.0%,7.6%, and 4.4% respectively. In addition, the recognition accuracy of this model for 36 blind samples reached 100%,indicating that this method could effectively distinguish lysozyme in different food matrices.

    Conclusion

This study presents an AuNP-aptasensor array integrating pattern recognition and machine learning strategies, enabling reliable lysozyme detection in complex matrices. The approach provides a novel paradigm for the developing aptamer-based detection methods that mitigate matrix effects.

To evaluate and analyze the rapid detection products for tropical fruit.

    Methods

The representative tropical fruits (litchi, banana, mango) were selected as the research objects, and the mainstream colloidal gold rapid detection products for common risk factors were selected. The quality of the products was evaluated and verified by 2 kinds of methods: Laboratory standard blind sample evaluation and actual sample verification. It mainly investigated the false positive rate, false negative rate, product type, brand difference and so on.

    Results

A total of 98 rapid detection products participated in the blind sample evaluation with additional standards, with a matching rate of 46.9%; 26 products participated in the actual sample verification, with a matching rate of 42.3%. Among the 16 different batch numbers of the same product that participated in the verification by 2 kinds of methods, 9 results were consistent, accounting for 56.3%. Overall, the matching rate of single-card was higher than that of multi-card, and the false negative rate exceeding 5% was the main reason for the inaccuracy of tropical fruit rapid testing products, which also showed significant brand differences.

    Conclusion

The total matching rate of rapid detection products for tropical fruits is relatively low. It is necessary to increase research and development efforts, improve product quality and perfect the product evaluation system. This paper can provide data support and theoretical reference for the optimization, standard formulation and scientific application of rapid testing technology for the quality and safety of tropical fruit.

Benzo[a]pyrene, benzo[a]anthracene, chrysene and benzo[b]fluoranthene (collectively known as PAH4), generated during the thermal processing of oils and fats, represent significant carcinogenic contaminants.Existing research indicates that PAH4 formation primarily follows a free radical-mediated lipid thermal oxidation pathway, with its content significantly influenced by factors such as fatty acid composition, heating temperature and duration. Effective control strategies include selecting high-oleic acid oils, adding suitable antioxidants, improving heating processes and implementing end-of-pipe treatment technologies like adsorption purification. This paper aimed to systematically elucidate the intrinsic relationship between fatty acid composition and PAH4 formation during the thermal processing of oils and fats, and established a theoretical framework linking the structural characteristics of fatty acids to the formation behavior of pollutants. Future research should focus on the in-situ analysis of reaction mechanisms and the development of novel inhibitors, while integrating oil composition and processing parameters to establish a PAH4 risk-warning and process optimization system tailored for industrial production. This will provide a theoretical foundation and technical support for ensuring the quality and safety of lipid-based foods.

In recent years, microplastics have been consistently detected in various types of drinking water sources and end-use water samples, and their environmental distribution has gradually drawn attention. Due to their small particle size, complex sources and relative stability in the environment, drinking water is now considered one of the primary routes of human exposure to microplastics. Compared to other exposure pathways, ingestion via drinking water typically involves chronic exposure, low doses and is often imperceptible. Once microplastics enter the body, they first come into contact with the digestive system. Their transport, retention and excretion within the gastrointestinal tract may be closely related to subsequent physiological responses. Based on this, this article reviewed the sources, forms and exposure characteristics of microplastics in drinking water, with a particular focued on their mechanisms of action within the digestive system, including their effects on intestinal mucosal barrier function, inflammatory responses, oxidative stress and the gut microbiome. Concurrently, by integrating existing experimental studies and limited population data, this paper provided a comprehensive analysis of the potential health impacts on vulnerable populations, including children, pregnant women, the elderly and patients with chronic intestinal diseases. While most current evidence stems from in vitro and animal studies, with direct evidence at the population level remaining relatively limited, the findings demonstrated a degree of consistency regarding underlying mechanisms. The aforementioned analysis may serve as a reference for further assessment of the health risks associated with microplastics in drinking water.

Fragaria anansissa Duch fruits are characterized by thin skin, high flesh water content, and vigorous postharvest physiological metabolism, rendering them highly susceptible to mechanical damage and microbial infection during storage and transportation, which results in rapid decay and a short shelf life. To reduce losses and enhance commercial value, the development of safe and efficient preservation technologies is essential. This paper systematically reviewed recent domestic and international research on postharvest Fragaria anansissa Duch preservation, focused on physical, chemical, biological, nanomaterial-based and integrated preservation technologies, and provided an in-depth analysis of their preservation mechanisms and application effects. Physical preservation delayed fruit senescence by controlling environmental conditions to suppress metabolic processes. Chemical preservation employed exogenous chemical compounds to inhibit microorganisms and exert antioxidant effects.Biological preservation utilized naturally derived substances or antagonistic microorganisms to control pathogens and water loss. Nanomaterial-based preservation exploited the unique properties of nanomaterials-such as strong antimicrobial activity, controlled-release capability and enhanced barrier properties-to improve the efficacy of preservatives or the performance of packaging materials. Furthermore, the synergistic effects achieved by combining multiple technologies also demonstrate promising application prospects. Based on current research, future efforts should strengthen the use of multi-omics approaches to elucidate preservation mechanisms, promoted the development of novel bio-derived preservatives, and explored the application of smart responsive packaging materials, driving preservation technologies toward the integration of green, efficient and intelligent strategies. This review aims to provide a theoretical basis for research on Fragaria anansissa Duch postharvest preservation and offer scientific guidance for process optimization and industrial application.

Perchlorate is a typical persistent environmental pollutant that poses a potential health threat by competitively inhibiting iodide transport, thereby interfering with human thyroid function. The complex matrix of animal-derived foods and the trace levels of perchlorate residues present challenges for accurate detection. This review summarized the residual characteristics of perchlorate in animal-derived foods and the advances in detection methods. In terms of residual characteristics, through a systematic analysis of representative literature from the past decade, the residual levels of perchlorate exhibited a distinct pattern across different food categories: The highest concentrations were found in honey, followed by dairy products, eggs and the lowest in livestock and poultry meat. This distribution was closely associated with matrix water content, biological excretion pathways and processing-induced concentration effects. In terms of detection techniques, liquid chromatography-tandem mass spectrometry and ion chromatography-tandem mass spectrometry were currently the predominant methods. Liquid chromatography-tandem mass spectrometry offered wide applicability and high sensitivity, while ion chromatography-tandem mass spectrometry exhibited superior anti-interference capability, making it particularly suitable for complex matrices such as milk and eggs. Sample pretreatment mainly involved acetonitrile for protein precipitation combined with solid-phase extraction. Currently, no uniform standards for perchlorate in animal-derived foods exist domestically or internationally. The residue characteristics and technological status outlined above can serve as a fundamental reference for the selection of monitoring methods and the establishment of regulatory limits.

    Objective

To systematically investigate the synergistic influence mechanism of different storage temperatures and pre-harvest fertilization treatments on the post-harvest quality of Pyrus sinkiangensis Yu, determine the most ideal preservation strategy.

    Methods

The study utilized a 3 (fertilization)×3 (temperature)×3 (biological replicates) experimental setup. Pears subjected to different pre-harvest fertilization treatments [melilotus officinalis green manure (CM), sunflower green manure (DK) and no fertilizer (CK)] were stored at different temperatures (4,12 and 20 °C). Over a 55 d storage period, a texture analyzer was used to periodically determine 8 texture parameters:Weight loss rate, hardness, fracturability, cohesiveness, springiness, chewiness, gumminess, resilience and adhesiveness.

    Results

Storage temperature played a crucial role: The 4 ℃ treatment considerably restricted the final fruit weight loss to within the range of 0.13%–0.31%, performing better than the 12 ℃ (0.14%–0.41%) and 20 ℃ (0.28%–0.74%) treatments, and also maintained texture more effectively. For instance, by the 50th day of storage, the fruit hardness at 4 ℃ stayed at a relatively higher level, while the CK+20 ℃ group dropped to 8.86 kN.Under the same 4 ℃ condition, the fertilization treatment had a notable effect, with the melilotus officinalis green manure (CM+4 ℃) exhibiting the overall best performance: Its elasticity value was still 0.60 on 30 d, which was notably higher than CK+4 ℃ (0.32) and DK+4 ℃ (0.28), and cohesion and other parameters mostly remained stable at various time points.

    Conclusion

The combined application of “4 °C low-temperature storage” and “pre-harvest melilotus officinalis green manure management” effectively maintains the postharvest weight and edible quality of Pyrus sinkiangensis Yu through an internal-external synergistic mechanism. This strategy provides clear practical guidance for preserving the postharvest quality of Pyrus sinkiangensis Yu.

To explore the influences of sesame cake protein modified by cold plasma (CP) with different power on the quality of chicken mince gel.

    Methods

Protein from sesame cake was modified by CP with different power (400–800 W), and then was added to chicken mince. The cooking yield, water holding capacity of chicken gel were analyzed, and their texture properties, microstructure and water distribution were measured by texture analyzer, scanning electron microscope and low-field nuclear magnetic resonance.

    Results

The cooking yield, water holding capacity, the springiness and resilience of gel texture increased first and then decreased, and reached the maximum of T4 group at CP power level of 600 W. Compared with the upper value of the control group, the value of T4 rose by 4.89%, 2.30%, 1.78% and 19.52%, respectively. Both the hardness and chewiness reached the highest value of T5 at 700 W, and their value was 7457 g and 4832 g, respectively. While, there was no significant difference compared to either of T4 group (P>0.05). The L* declined continuously, and a* and b* first rose and then declined. With addition of CP modified sesame cake protein, the transverse relaxation time of T2 changed in the direction of short relaxation time, and the proportion of immobilized water in chicken mince gel rose significantly while that of free water decreased. The change of storage modulus value showed that the addition of CP modified sesame cake protein could improve the gel forming ability of chicken mince, especially T4 group with CP power level of 600 W had the best gel forming ability. Additionally, when the cold plasma treatment power was 600 W, the chicken mince gel of T4 was obtained with more compact and uniform microstructure and smaller pores.

    Conclusion

Sesame cake protein modified with CP power level of 600 W could enhance the quality of chicken mince gel. The results of this study could provide certain scientific basis for improving the value-added of sesame cake protein and broadening the application of sesame cake protein in meat foods.

To investigate the aluminum contamination level and its sources in Amorphophallus konjac K. Koch products in Southern Shaanxi in 2022—2025, and assess the dietary exposure risk of aluminum from these products.

    Methods

A total of 109 Amorphophallus konjac K. Koch products were systematically collected from Southern Shaanxi. The aluminum content was determined according to GB 5009.182—2017 National food safety standard-Determination of aluminum in foods. The average daily consumption was estimated under 2 kinds of extreme assumptions, namely the tuber consumption estimation method and the dietary fiber recommended intake back-calculation method. Combined with the aluminum content data, the chronic hazard quotient (cHQ) was calculated using the point assessment approach to evaluate the dietary exposure risk of aluminum.

    Results

The detection rate of aluminum in 109 samples was 78.0%, with a median content of 28.8 mg/kg. Among the 29 samples with aluminum content exceeding 100 mg/kg, bulk products accounted for 65.5% and non-ready-to-eat products accounted for 86.2%. Under the general consumption level estimated by the tuber consumption estimation method, the cHQ values of all samples were less than 1, indicating acceptable risk. Only when the theoretical consumption(0.0982 kg/d, based on the average recommended intake) calculated by the dietary fiber recommended intake back-calculation method was combined with the 90th percentile (P90) aluminum content (261 mg/kg), the cHQ value was greater than 1, suggesting a theoretical potential risk.

    Conclusion

The overall aluminum content in Amorphophallus konjac K. Koch products in Southern Shaanxi is relatively low, and conventional consumption by the general population is safe. However, localized contamination is prominent, and bulk non-ready-to-eat products are high-risk categories for aluminum contamination. It is recommended that small workshops and farmers’ markets be taken as key supervision targets to further reduce the dietary aluminum exposure risk of residents.

    Objective

To establish a detection and evaluation system for nutritional components of representative Chongqing Jianghu cuisine.

    Methods

Using freshly prepared stir-fried pork kidney and twice-cooked preserved pig snout as the research subjects, the edible portions were sampled, the content of 26 kinds of nutritional components and 37 kinds of fatty acids was determined according to the GB 5009—2016 series of testing methods. The dishes nutrient index (DNI) model was used to evaluate their nutritional value.

    Results

The 2 kinds of dishes of the stir-fried pork kidney and twice-cooked preserved pig snout detected 22 and 24 kinds of nutritional elements, respectively, the moisture content in both exceeded 50 g/100 g, the protein content was 13.8 g/100 g and 23.9 g/100 g,respectively, while the fat content was 10.8 g/100 g and 19.2 g/100 g, respectively. The vitamin A content was 0.0806 mg/100 g and 0.0255 mg/100 g, respectively, and the vitamin C content was 5.64 mg/100 g and 1.68 mg/100 g, respectively. The detection rates of the 2 dishes among 37 kinds of fatty acids were 64.8% and 62.2%, with total fatty acid content of 9.69 g/100 g and 14.80 g/100 g, respectively, predominantly unsaturated fatty acids, accounting for 67.9% and 73.4%, respectively. Among the 10 kinds of mineral elements, sodium content was the highest in both dishes, at 817 mg/100 g,1480 mg/100 g, respectively. The iron and selenium content of stir-fried pork kidney cuisine were high with 3.920 mg/100 g and 0.2120 mg/100 g, and 7 kinds of mineral content such as calcium, copper, magnesium, zinc, potassium, phosphorus and manganese were higher than twice-cooked preserved pig snout dishes. The DNI model comprehensive evaluation results indicated that the nutritional index of stir-fried pork kidney was 6.485, suggesting it could be consumed in moderation, while twice-cooked preserved pig snout had a nutritional index of –1.402, indicating that its intake should be limited.

    Conclusion

Clarify the nutritional characteristics of stir-fried pork kidney and twice-cooked preserved pig snout, both dishes contain rich nutritional components, but their sodium content is high, with a notable high-sodium and low-potassium profile. This study establish a quantitative nutrition detection and evaluation system, providing empirical data for the construction of a nutritional assessment system for Chongqing Jianghu cuisine,as well as data support for the healthy reform of dishes and rational consumption by consumers.

    Objective

To establish a method for the determination of total arabinoxylan content in cereals by microwave digestion-high performance liquid chromatography-evaporative light scattering detection.

    Methods

Following digestion with 1.0 mol/L trifluoroacetic acid at 120 ℃ for 30 min, the samples were de-acidified,re-dissolved and subsequently analyzed. Separation was performed on an NH2 chromatographic column (4.6 mm×250 mm, 5 µm) with isocratic elution using acetonitrile-water (90:10, V:V) as the mobile phase. Detection was conducted using an evaporative light scattering detection, quantification was performed by the external standard method, and the developed method was applied to the analysis of common cereal samples.

    Results

After methodological verification, good linearity was observed for xylose and arabinose in the range of 0.2 to 2.0 mg/mL,with coefficient of determination exceeding 0.999. The limits of detection were 1.0 mg/g for xylose and 1.5 mg/g for arabinose, and the corresponding limits of quantitation were 2.5 mg/g and 5.0 mg/g. Recoveries ranged from 86.8% to 93.1% (relative standard deviation all less than 3.5%).

    Conclusion

The method is accurate, reliable and sensitive, making it suitable for the determination of total arabinoxylan in cereals and providing a reference for cereal quality evaluation, processing adaptability analysis and dietary nutrition research.
