Cronobacter are common pathogenic bacteria that can cause meningitis, septicemia and necrotizing enterocolitis in neonates and infants. Severe infections may lead to neurological sequelae, posing a serious threat to infant food safety and public health. Therefore, the establishment of efficient and accurate detection methods is great significance. This review systematically summarized recent advances in the detection technologies for Cronobacter in foods and organized them according to a hierarchical framework of “culture-based confirmation-rapid screening-viable-cell quantification-on-site detection-intelligent interpretation”. Conventional culture-based methods remain fundamental for obtaining viable isolates, confirming results and supporting subsequent source-tracing analysis. Immunoenrichment, real-time fluorescent quantitative polymerase chain reaction/digital polymerase chain reaction and isothermal amplification technologies had improved the screening efficiency and quantitative capability for low-abundance samples. Matrix-assisted laser desorption/ionization time-of-flight mass spectrometry, metabolomics, surface-enhanced Raman spectroscopy and flow cytometry had expanded the application boundaries of rapid identification, phenotypic characterization and cellular state evaluation. Nanomaterials, microfluidic chips, biosensors and portable platforms had further promoted the integration, field applicability and high sensitivity of detection methods. In addition, the application of artificial intelligence in genomic source tracing, sensor signal analysis, image recognition and multi-source data fusion provides new perspectives for the intelligent interpretation of detection results. This review focused on the complementary relationships, applicable scenarios and translational bottlenecks of different detection methods, thereby providing stronger technical support for food safety supervision.

Foodborne pathogenic microorganisms are the primary causative agents of food safety incidents and public health risks. Traditional detection methods exhibit limitations in detection cycle, sensitivity, and adaptability to complex matrices, failing to meet the modern food supply chain’s demands for rapid, high-throughput, and intelligent monitoring. The rapid advancement of artificial intelligence (AI) technology has opened new technical pathways for the transformation and upgrading of microbial detection systems. This article systematically reviewed the application progress of AI in the detection of foodborne pathogenic microorganisms, focused on 3 major directions: Molecular biology detection, spectral analysis techniques and mass spectrometry detection. It highlighted the functional mechanisms and technical effects of machine learning and deep learning algorithms in amplification signal analysis, spectral feature extraction, mass spectrometry data mining and multi-source information fusion. The analysis indicated that the introduction of AI had effectively enhanced the sensitivity, specificity and automation level of detection systems, accelerating the transition from laboratory analysis to on-site rapid screening and intelligent early warning. Meanwhile, this article identified the current deficiencies in standardized dataset construction, model generalization capability verification, algorithm interpretability and cross-platform data fusion standards, and proposed future development recommendations from the perspectives of data governance, regulatory adaptation and industrial collaboration. This article aims to provide systematic literature reference and theoretical support for the integration and optimization of intelligent detection systems in the field of food safety.

    Objective

To investigate the effects of the betA and betB genes on stress resistance and virulence of Cronobacter.

    Methods

Using Cronobacter sakazakii as the experimental subject, this study emplored betA, betB,and betAB gene knockout and restoration strains to invesitage the effects of betA and betB on biofilm formation ability, stress resistance and cellular virulence of Cronobacter.

    Results

The biofilm formation ability of each strain was detected, and found that deletion of betA and betB led to a decrease of biofilm formation. It was speculated that betA and betB promote biofilm formation in Cronobacter by controlling betaine synthesis. The effects of different temperatures and pH on Cronobacter were examined using fluorescence microscopy and flow cytometry. The results showed that under high temperature and acidic conditions, the survival rates of all Cronobacter strains decreased.Specifically, survival rates at pH 7 and pH 9 were significantly higher than at pH 5 (P<0.05), and survival rates at 48 ℃ were significantly lower than at 25 ℃ and 37 ℃ (P<0.05). The assessment of Cronobacter virullence in cell infection revealed that bacterial infection was led to changes in the levels of tight junction proteins within cells, for the CS 34, ΔbetB, ΔbetAB, cpbetA, cpbetB and cpbetAB strains caused significantly greater damage to cells after drying treatment compared to before drying, resulting in a decrease in cell viability and leading to a significant decrease in tight junction-associated proteins (P<0.01). When the betA gene was deleted, desiccated Cronobacter did not cause a significant decrease in cell viability compared to non-desiccated bacteria.

    Conclusion

This study finds that deletion of the betA and betB genes weakens the biofilm formation ability of Cronobacter and reduces its tolerance to acid and high temperature. It is also observed that when the betA gene is present, bacteria that survive under desiccated conditions tend to have stronger virulence and cause greater cellular damage.

    Objective

To analyze the genomic epidemiological characteristics, antimicrobial resistance mechanisms and cross-sector transmission risks of the Salmonella Kentucky ST198 lineage in Yangzhou from 2019 to 2025 based on the “One Health” framework.

    Methods

Salmonella Kentucky isolates were recovered from clinical patients, retail foods, healthy food handlers and sewage in Yangzhou. Antimicrobial susceptibility testing was performed. Whole-genome sequencing and bioinformatics tools were utilized to identify ST, resistance genes and plasmid structures. A phylogenetic tree based on core genome single nucleotide polymorphisms was constructed to evaluate the genetic relationships among isolates from different sources.

    Results

Among 23 ST198 isolates,ST198.2-2 was identified as the predominant subtype. ST198.2-2 isolates typically harbored blaCTX-M-55, tet(A),genes. Notably, a novel IncFIB(K) plasmid carrying 8 kinds of resistance genes, including qnrS2, was first identified in an ST198.2-1 isolate. Phylogenetic analysis that food isolates and clinical case strains were highly clustered at the core genomic level, suggesting the possibility of foodborne transmission. The rmtB gene was detected in strains derived from health practitioners, suggesting that this group mought constitute a hidden drug resistance pool.

    Conclusion

The ST198.2-2 subtype has become the dominant lineage in Yangzhou, presenting severe drug fast challenges. Animal-derived food serves as the primary infection route, while occupational carriers and sewage facilitate the environmental dissemination of resistance determinants. An integrated surveillance system covering the“farm-to-fork” chain, with specific focus on healthy food handlers, is urgently recommended.

    Objective

To evaluate the protective effects of ergothioneine against D-galactose (D-gal)-induced oxidative damage in rats and elucidate the underlying molecular mechanisms.

    Methods

Oxidative damage in rats was induced by intraperitoneal injection of D-gal (200 mg/kg) once daily for 6 consecutive weeks. Male SD rats were randomly assigned to 5 groups: The control group, which received intraperitoneal saline injection, and the model group as well as the low-dose (EGT-L, 1.4 mg/kg), mid-dose (EGT-M, 2.8 mg/kg) and high-dose (EGT-H, 5.6 mg/kg)ergothioneine groups, which were administered intraperitoneal D-gal. Starting from week 3 and continuing through week 6, each treatment group received daily intragastric administration of ergothioneine, while the control and model groups were given an equal volume of saline, for a total duration of 4 weeks. The levels of oxidative stress markers, including malondialdehyde (MDA) as a marker of lipid peroxidation and protein carbonyls as markers of protein oxidation, antioxidants such as reduced glutathione (GSH), and antioxidant enzymes including catalase (CAT) and superoxide dismutase (SOD) were measured in the serum and liver of rats using colorimetric assays. A preliminary network pharmacology analysis was performed to investigate the potential mechanisms underlying the antioxidant effects of ergothioneine, and further validation was carried out using western blotting to assess the impact of ergothioneine on the hepatic protein expression levels of Acetyl-FOXO1, FOXO1 and SIRT1.

    Results

Compared with the model group, ergothioneine-treated groups decreased MDA and protein carbonyl levels in serum and liver, and increased SOD and CAT activities and GSH content. Western blotting indicated that ergothioneine administration reduced the ratio of Acetyl-FOXO1/FOXO1 and upregulated SIRT1 protein expression in liver tissue.

    Conclusion

Ergothioneine exhibits significant protective effects against D-gal-induced oxidative damage in rats. The underlying mechanism may predominantly involve modulation of the FoxO signaling pathway.

Veterinary drug residues, pesticides, mycotoxins and their metabolites are widely present in food and environmental matrices at trace levels and pose potential carcinogenic, teratogenic and endocrine-disrupting risks, thereby necessitating the development of sensitive, rapid and high-throughput screening methods. Immunoassays employing antibodies as recognition elements are widely used in food safety monitoring owing to their low cost, rapid response and suitability for on-site analysis; however, their analytical performance largely depends on the availability of monoclonal antibodies with high affinity and specificity. Owing to the dual immune mechanisms of high-frequency somatic hypermutation and gene conversion, rabbit antibody repertoires exhibit remarkable diversity and superior epitope resolution, making rabbits an important source of monoclonal antibodies against small-molecule food contaminants. At present, high-affinity antibodies used in food safety immunoassays are predominantly rabbit polyclonal antibodies, which suffer from inherent limitations such as batch-to-batch variability, complex epitope composition, and difficulties in standardization and long-term stable supply, thereby restricting the engineering and industrialization of immunoassay methods. In contrast, rabbit monoclonal antibodies offer distinct advantages, including high affinity, single-epitope specificity, excellent reproducibility and amenability to genetic and structural engineering, highlighting their significant potential in small-molecule immunorecognition. This review focused on the design of small-molecule haptens and rabbit immunization strategies. It reviewed the recent advances in rabbit monoclonal antibody discovery platforms, including hybridoma technology, display libraries and single B-cell–based approaches, for the generation of rabbit monoclonal antibodies against small molecules. This review compared the strengths and limitations of these platforms in terms of screening throughput, preservation of native heavy- and light-chain variable region pairing, control of false-positive clones and antibody engineering potential. It also summarized the applications of rabbit monoclonal antibodies against small molecules in enzyme-linked immunoassays, lateral flow immunoassays and electrochemical and optical immunosensors discussed the opportunities and challenges associated with complex matrix tolerance, multi-residue detection and methodological standardization. Finally, this review highlighted the continued development of single-cell omics, microfluidics and computer-aided antibody design, which was expected to facilitate the development of rabbit-derived high-affinity antibodies against small molecules through more standardized and scalable workflows, thereby providing more reliable immunorecognition elements for food safety and environmental monitoring.

To investigate the bacterial community diversity and functional differences in Litopenaeus vannamei during mid- and late-storage at room temperature and under refrigeration.

    Methods

The bacterial community structure of Litopenaeus vannamei during mid- and late-storage at room temperature and under refrigeration (4 °C) was characterized by 16S rDNA sequencing. The Kyoto encyclopedia of genes and genomes(KEGG) database was used to predict the functional differences of spoilage bacteria in Litopenaeus vannamei stored at room temperature and under refrigeration during different storage periods.

    Results

Phylum-level analysis revealed Firmicutes as the predominant lineage (>95.5%) in spoiled Litopenaeus vannamei. At the genus level, mid-stage room temperature storage was characterized by the co-dominance of Family_XI_unclassified (32.59%), Tissierella (19.97%),Vagococcus (8.00%) and Kurthia (6.00%). This assemblage transitioned to a Peptostreptococcus (26.60%),Family_XI_unclassified (26.56%), Vagococcus (12.90%), Tissierella (5.95%) consortium at late-stage room temperature storage. Conversely, refrigeration significantly attenuated the relative abundance of spoilage-associated Kurthia and Peptostreptococcus, while concomitantly enriching Vagococcus (16.03%→22.86%), Peptoniphilu (9.24%→17.34%),Family_XI_unclassified (<0.5%→12.04%) and Tissierella (0.06%→10.11%) at terminal storage. KEGG-based functional prediction revealed that mid-stage bacterial communities under room-temperature storage upregulated nutrient acquisition, energy metabolism, and nucleotide biosynthesis pathways, conferring competitive growth advantages. Compared with room temperature storage, the abundance of certain nucleotide biosynthesis pathways was downregulated during mid-refrigerated storage, which contributed to the suppression of spoilage bacterial growth. At the end of storage, bacteria coped with adverse conditions by upregulating genetic material synthesis to repair temperature-induced DNA damage, and enhancing amino acid metabolism and cell wall reinforcement pathways to improve survival and adaptability.

    Conclusion

The dominant spoilage bacteria in Litopenaeus vannamei stored at room temperature and under refrigeration partially overlap, yet their relative abundances differ significantly.Refrigeration exerts a certain inhibitory effect on spoilage bacteria of Litopenaeus vannamei, altering the community structure of dominant spoilage bacteria, and consequently resulting in functional differences.

To clarify the mechanism of the effects of cold plasma-sun drying process on pesticide residues during the drying process of Lycium ruthenicum Murr.

    Methods

The 6 kinds of commonly used pesticides in Lycium ruthenicum Murr, namely acetamiprid, carbendazim, imidacloprid, pyridaben, fenpyroximate and zeta-cypermethrin, were selected as the research objects. The pesticide residues in each drying stage were determined by ultra performance liquid chromatography-tandem mass spectrometry (UPLC-MS/MS), and the dynamic changes of processing factors (PF) and degradation rates were systematically analyzed. The residue change mechanism was explored in combination with the physicochemical properties of pesticides and process parameters, and a dietary exposure risk assessment was conducted.

    Results

Each drying procedure exerted significantly different effects on pesticide residues. Water washing exhibited the best residue removal performance, with degradation rates of 34.88%–73.14% for acetamiprid, carbendazim, imidacloprid and pyridaben. Only fenpyroximate and etoxazole underwent degradation after cold plasma treatment. After the drying process, all target pesticides did not show degradation effects. The dietary exposure riskassessment showed that the acute risk rate and chronic risk rate of the 6 kinds of pesticides were 0.001%–0.233% and 0.001%–0.167 % respectively, both far below the safety critical values.

    Conclusion

The study confirms that the combined drying process of Lycium ruthenicum Murr is safe for consumption and can provide theoretical basis and data support for pesticide residue control and process optimization in Lycium ruthenicum Murr processing.

It was found that 17 kinds of pesticide residues were detected in 150 batches of Fragaria ananassa in Qingdao, and 10 kinds of pesticides were registered for use in Fragaria ananassa, accounting for 58.8% of the total number of pesticides detected. The 7 kinds of unregistered pesticides were detected in Fragaria ananassa, accounting for 41.2% of the total detected pesticides. The types and quantities of pesticides detected were fungicides>insecticides>acaricides, and plant growth regulators were not detected. In the 5 different harvest periods, the highest pesticide residue levels and the detection frequency were detected in Februry and March. The risk coefficients of the 17 kinds of detected pesticides were all less than 1.5, indicating that the detected pesticides were at a low risk. The dietary intake risk of the detected pesticide residues in fresh Fragaria ananassa was also relatively low. This suggested that the impact of the 17 kinds of detected pesticides on the safety of Fragaria ananassa was acceptable.

    Conclusion

Through the monitoring of pesticide residues of Fragaria ananassa in Qingdao, it is found that the qualified rate of pesticide residues in Fragaria ananassa is relatively high, the quality and safety status of Fragaria ananassa is good and acceptable. However, judging from the monitoring data, the use of unregistered pesticides in Fragaria ananassa still occurs, so the supervision of the use of unregistered pesticides in Fragaria ananassa should be further strengthened.

    Objective

To investigate the pollution conditions of neonicotinoid pesticides in fruits and vegetables sold in Xingtai, and assess the dietary exposure risk of neonicotinoid pesticide residues to local residents.

    Methods

A total of 210 vegetable and fruit samples were collected from markets in Xingtai from 2021 to 2024. The 12 kinds of neonicotinoid insecticides were determined by ultra performance liquid chromatography-tandem triple quadrupole mass spectrometry. The detection and over-limit situations of neonicotinoid pesticides were evaluated in accordance with GB 2763—2021 National food safety standard-Maximum residue limits for pesticides in food. Chronic and acute dietary exposure risk assessments of neonicotinoid pesticides were conducted by the point assessment method. Hazard evaluation of the detected pesticides was performed by the food safety index.

    Results

Among the 12 kinds of neonicotinoid insecticides monitored in this study, 8 were detected at varying levels, with detection rates ranging from 0.5% to 34.8% and exceedance rates from 1.0% to 6.7%. Moreover, multiple pesticides were detected in a single sample. Both the chronic and acute dietary intake risk values of the 12 kinds of neonicotinoid insecticides were below 100%, the food safety index of each individual pesticide was less than 1, and the overall food safety index was also below 1.

    Conclusion

Certain neonicotinoid insecticides are detected and found exceeding standard limits in vegetables and fruits sold in Xingtai City. However, the dietary intake risks identified in this monitoring are all within acceptable ranges, indicating an overall good safety level.

    Objective

To understand the status of fungicide residues in fruits and vegetables sold in Xingtai City, and conduct acute and chronic dietary intake risk assessments on the detected fungicide residues in fruits and vegetables.

    Methods

A total of 399 samples of fresh fruits and vegetables were collected in Xingtai City from 2021 to 2025. Liquid chromatography-tandem triple quadrupole mass spectrometry was used to detect 10 kinds of common fungicides, and the percentage of acute reference dose and the percentage of acceptable daily intake were calculated to conduct acute and chronic dietary intake risk assessments.

    Results

From 2021 to 2025, the detection rate of 10 kinds of fungicides in fruits and vegetables sold in Xingtai City was 39.35%, and the non-compliance rate of samples was 0.25%. Fungicide residues were detected in 8 categories of vegetables and 4 categories of fruits. Among vegetables, the detection rate of leafy vegetables was the highest, reaching 56.47%; and among fruits, the detection rate of stone fruits was the highest, reaching 50.00%. Among the 10 monitored fungicides, dimethomorph had the highest detection rate of 24.56%. The calculated ranges of acute and chronic dietary intake risks were 0.2016%–84.1602% and 0.1264%–47.2337%, respectively, both of which were less than 100%.

    Conclusion

From 2021 to 2025, the overall situation of 10 kinds of fungicide residues in fruits and vegetables sold in Xingtai City,Hebei Province is good, and the detected fungicide residues are within the acceptable range for the safety status of fruits and vegetables sold in Xingtai City. However, there are varying degrees of fungicide contamination and mixed use in fruits and vegetables. It is necessary to focus on leafy vegetables, solanaceous vegetables, stone fruits and other categories. Additionally, the intake risk of consumers in the 2–10 years old children group is significantly higher than in other age groups, which requires particular attention.

    Objective

To understand the content of benzo(a)pyrene in commercially available edible vegetable oils in a city of Guangxi.

    Methods

A total of 113 samples of edible vegetable oils sold in large supermarkets and farmers’ markets across 8 counties (districts, cities) of a certain city were collected from 2024 to 2025. Molecular imprinting solid-phase extraction-high performance liquid chromatography was used to detect the content of BaP. The study analyzed the impact of the type of vegetable oil, processing methods and packaging methods on the BaP content in edible vegetable oils.

    Results

The detection rate of BaP in the 113 commercially available edible vegetable oils sampled was 69.0%, with detection ranges of 0.21–5.60 μg/kg and an average of 0.56 μg/kg, all meeting GB 2762—2022 National food safety standard-Limits of contaminants in foods. However, 5 samples exceeded European Union standards, accounting for 4.4% of the total sample population. BaP levels varied significantly among different edible vegetable oils depending on brand, production process and packaging. The detection rates, ranked from highest to lowest, were:Blended oil>peanut oil>corn oil>camellia seed oil>rapeseed oil. The average content, ranked from highest to lowest, was: Camellia seed oil>blended oil>peanut oil>corn oil>rapeseed oil.

    Conclusion

The study find that the BaP content in commercially available bulk camellia seed oil is significantly higher than that in other types of edible vegetable oils, highlighting the high-risk characteristics of small-scale workshop-pressed oils and bulk oils. This finding warrants heightened attention from regulatory authorities, who should strengthen oversight of commercially available edible vegetable oils, enhance food safety awareness campaigns, improve monitoring efforts, facilitate public supervision channels and continuously reinforce food safety safeguards.

    Objective

To analyze the formula registration data for formula milk powder for older infants from 2017 to 2024, investigate the differences between domestic and imported products and their compliance with standards.

    Methods

Registration data for 786 formula milk powder for older infants disclosed released by the State Administration for Market Regulation during 2017—2024 were summarized. Compliance analysis was conducted according to the current GB 10766—2021 National food safety standard-Follow-up formula for older infants and other relevant standards. A comprehensive comparison of nutritional components was performed between compliant domestic and imported products. Furthermore, the test results were compared with the Chinese dietary reference intakes and European Union standards.

    Results

From 2017 to 2024, the overall qualified rate of formula milk powder for older infants reached 46.06%. Among them, there were 289 qualified domestic products with a qualified rate of 46.50%, and 73 qualified imported products with a qualified rate of 44.51%. The product compliance level showed an upward trend year by year. Both compliant domestic and imported products met the national standard GB 10766—2021 but exhibited differences. Domestic products had relatively higher content of protein, carbohydrates and polyfructose, while imported products had relatively higher contents of fat, certain minerals (e.g., sodium, potassium) and optional components like lactoferrin. Vitamin content were largely consistent.

    Conclusion

The continuous improvement of China’s infant formula registration management system and standard framework has significantly enhanced the overall compliance level of the industry. Currently, compliant domestic and imported follow-up formulas on the market can provide safe and balanced fundamental nutrition, meeting the growth and development needs of infants. However, they exhibit differentiated characteristics in specific nutritional design and functional ingredient addition, reflecting different market positioning and nutritional concepts. The study suggests that enterprises can optimize formula design accordingly, regulatory authorities can establish long-term tracking mechanisms, and consumers can make informed choices among compliant products based on individual needs under professional guidance.
