Renshen (Ginseng Radix et Rhizoma) is the dried root and rhizome of Renshen (Panax ginseng C.A. Mey.), a plant in the Araliaceae family, it is known as the “king of hundred herbs” with a long history and wide application. Fresh Renshen (Ginseng Radix et Rhizoma) is the fresh or fresh-preserved Renshen (Ginseng Radix et Rhizoma), which contains unique chemical components to make it have anti-depression, lipid-lowering, anti-fatigue, anti-diabetes, sleep-inducing, neuroprotection and other biological activities. At present, with the advancement of processing methods, the development and application of fresh products have a good development prospect. Through consulting domestic and foreign literature, this paper sorted out, summarized and concluded the research on the chemical composition, biological activity, processed products and prospects for the future application of fresh Renshen (Ginseng Radix et Rhizoma) in the food industry, in order to provide reference for the further clinical application and development of fresh Renshen (Ginseng Radix et Rhizoma).
