This paper explored the application and potential value of Artificial Intelligence (AI) technology in the development and manufacturing of dairy products. The research elaborated on the application of AI in various aspects such as animal feeding, market research, formula design, manufacturing processes, packaging and marketing. It analyzed the convenience and significance of AI application. The paper also examines the evolutionary path and development tendencies of AI in dairy product innovation. It shifted enabling single-point breakthroughs through technology to achieving full-chain intelligence, ecological reconstruction, efficiency competition, industrial upgrading, and improvement of consumption experiences from functions to emotions. It discussed the inspiration and development trends of AI in dairy product development, with the aim of reasonably utilizing AI technology in the future, deeply integrating AI with technologies such as the Internet of Things (IoT) and blockchain, promoting the high-quality development of the dairy industry, and continuously advancing towards efficiency and intelligence.
