Food safety is a major public health concern worldwide. Harmful contaminants in food pose potential risks to human health. Therefore, the development of efficient, sensitive and reliable pollutant detection technologies have significant practical significance. Metal–organic frameworks (MOFs) materials, with their tunable structures, large specific surface areas and versatile functionalities, possess unique advantages in constructing highly sensitive and selective sensing platforms, and have become an important material foundation for innovative progress in food safety detection. This review summarized the recent advances of MOFs-based sensors and their applications progress in the detection of food contaminants, focusing on sensing mechanisms and performance characteristics for major hazardous factors such as heavy metal ions, food additives, pesticide residues and veterinary drug residues. Recent studies showed that MOFs-based sensors were evolving toward rapid, visual and intelligent detection. Finally, this review summarized the common issues facing MOFs-based sensors in food contaminant detection, including sensitivity, selectivity, material stability, simultaneous multi-target detection and instant detection and intelligentization, and prospected the future development trends, which aims to provide theoretical references and technical guidance for the development of intelligent, accurate and practical food safety detection technologies in the field.
