China ranks first in the world in crocodile farming. Crocodilian proteins and bioactive peptides are widely distributed in crocodile meat, skin, bone, head, blood and visceral tissues, and exhibit multiple biological and pharmacological activities, including antioxidant, antimicrobial, bidirectional immunomodulatory and antitumor effects. Crocodilian proteins and their derived bioactive peptides hold broad application potential in snack foods, pharmaceuticals, health products, foods for special medical purposes and cosmetics. However, current research on crocodile proteins and bioactive peptides remains in its infancy, with issues such as inconsistent in vitro and in vivo effects, unclear mechanisms of action, and a lack of advanced product development. This review summarized the composition and functions of crocodilian proteins, highlighted the functional activities and mechanisms of their bioactive peptides, and provided an outlook on future research directions, aiming to offer theoretical support and technical guidance for the development and application of crocodile proteins and bioactive peptides.
