Objective To understand the pollution levels of bromate, coliforms, pseudomonas aeruginosa, nitrite (calculated as ${\mathrm{{NO}}}_{2}$ )] of packaged drinking barreled water in Guangxi in 2022. Methods According to the type of water and test items, all pollutions were tested and judged by GB 8538-2016 “National standard for food safety Test method for drinking natural mineral water”, GB 4789.3-2016 “Food safety national standard food Microbiology test Coliform count”, GB 5009.33-2016 “National standard for food safety Determination of nitrite and nitrate,” GB 19298-2014 “Food safety national standard Packaging drinking water”, GB 2762-2017 “Food safety national standard food Pollutant limits”. Results 204 batches of packaged drinking barreled water were collected. Pseudomonas aeruginosa was deteted in 55 batches with a detection rate of 26.96%. Not a single batch exceeded permitted level of bromate, coliform or nitrite. Conclusion Most products are safe, but the pollution of Pseudomonas aeruginosa is still an outstanding problem. Enterprises should strengthen the cleaning and isinfection of pipes and barrels and standardize transportation storage to ensure product safety.

GB4789.3-2016《食品安全国家标准 食品微生物学检验 大肠菌群计数》、GB5009.33-2016《食品安全国家标准 食品中亚硝酸盐与硝酸盐的测定》、GB19298—2014《食品安全国家标准 包装饮用水》、GB2762—2017《食品安全国家标准 食品中污染物限量》进行检测判定。结果 收集的204 批次桶装包装饮用水中,有 55 批次铜绿假单胞菌检出,检出率约为26.96%。溴酸盐、大肠菌群、亚硝酸盐均无超标。结论 大多数产品不存在安全问题,但铜绿假单胞菌的污染情况仍然突出,企业应加强对管道、桶的清洗消毒及运输存贮的规范,以确保产品安全。

目的 了解 2022年广西区内包装饮用桶装水中溴酸盐、大肠菌群、铜绿假单胞菌、亚硝酸盐(以 ${\mathrm{{NO}}}_{2}$计)的污染情况。方法 根据桶装水类型及检测项目按标准 GB 8538-2016《食品安全国家标准 饮用天然矿泉水检验方法》. GB4789.3-2016《食品安全国家标准 食品微生物学检验 大肠菌群计数》、GB5009.33-2016《食品安全国家标准 食品中亚硝酸盐与硝酸盐的测定》、GB19298—2014《食品安全国家标准 包装饮用水》、GB2762—2017《食品安全国家标准 食品中污染物限量》进行检测判定。结果 收集的204 批次桶装包装饮用水中,有 55 批次铜绿假单胞菌检出,检出率约为26.96%。溴酸盐、大肠菌群、亚硝酸盐均无超标。结论 大多数产品不存在安全问题,但铜绿假单胞菌的污染情况仍然突出,企业应加强对管道、桶的清洗消毒及运输存贮的规范,以确保产品安全。

Objective To understand the pollution levels of bromate, coliforms, pseudomonas aeruginosa, nitrite (calculated as ${\mathrm{{NO}}}_{2}$ )] of packaged drinking barreled water in Guangxi in 2022. Methods According to the type of water and test items, all pollutions were tested and judged by GB 8538-2016 “National standard for food safety Test method for drinking natural mineral water”, GB 4789.3-2016 “Food safety national standard food Microbiology test Coliform count”, GB 5009.33-2016 “National standard for food safety Determination of nitrite and nitrate,” GB 19298-2014 “Food safety national standard Packaging drinking water”, GB 2762-2017 “Food safety national standard food Pollutant limits”. Results 204 batches of packaged drinking barreled water were collected. Pseudomonas aeruginosa was deteted in 55 batches with a detection rate of 26.96%. Not a single batch exceeded permitted level of bromate, coliform or nitrite. Conclusion Most products are safe, but the pollution of Pseudomonas aeruginosa is still an outstanding problem. Enterprises should strengthen the cleaning and isinfection of pipes and barrels and standardize transportation storage to ensure product safety.

广西地处低纬度区域, 降雨量比较充沛, 河流纵横, 水资源丰富, 典型的喀斯特地形地貌和良好的生态环境孕育了优质的水源, 水质和水量均安全, 可持续能力稳定, 是较适宜发展包装饮用水的区域之一 [ 1 ] 。随着饮用水消费市场需求增加,包装饮用水产值产量呈增长态势。但近年不断有包装饮用水污染物超标的报道, 让消费者颇为担心。本研究针对消费者关注且易出现问题的微生物指标(铜绿假单胞菌、大肠菌群)及质量安全指标(溴酸盐、亚硝酸盐)进行检测。 铜绿假单胞菌广泛存在于自然界 [ 2 ] ,是一种常见的条件致病菌,存在的重要条件是潮湿的环境 [ 3 ] ,因此有大量包装饮用水被铜绿假单胞菌污染的报道, 现行食品安全国家标准规定包装饮用桶装水不能检出[ 4 - 12 ]。 大肠菌群最初作为肠道致病菌而被用于水质检验,现已被我国及其他许多国家广泛用作食品卫生质量检验的指示菌。溴酸盐在国际上被定为 $2\mathrm{\;B}$ 级的潜在致癌物, 是天然水源水在经过臭氧消毒后所生成的副产物。研究表明长期饮用含溴酸盐浓度高的水将增加癌症的患病率,过量食用溴酸盐会损害人的血液、中枢神经和肾脏等,现行食品安全国家标准规定包装饮用桶装水溴酸盐限量为0.01m/L[ 13 ] 。亚硝酸盐为 $2\mathrm{\;A}$ 类致癌物。根据GB 2762-2022《食品安全国家标准 食品中污染物限量》的规定,包装饮用水(饮用天然矿泉水除外)中亚硝酸盐限量为 ${0.005}\mathrm{{mg}}/\mathrm{L}$ (以 ${\mathrm{{NO}}}_{2}$ -计)。 国际食品法典委员会(CAC)及大多数国家生活饮用水和包装饮用水中亚硝酸盐限量都为 $3\mathrm{{mg}}/\mathrm{L}\left({\mathrm{{以NO}}}_{2}\right.$ . 计),欧盟生活饮用水和包装饮用水中亚硝酸盐限量为 ${0.50}\mathrm{{mg}}/\mathrm{L}$ (以 ${\mathrm{{NO}}}_{2}$ 计),我国包装饮用水亚硝酸盐的限值是国际上要求最严格的限量标准。研究包装饮用桶装水中溴酸盐、大肠菌群、铜绿假单胞菌、亚硝酸盐(以 ${\mathrm{{NO}}}_{2}$ -计)的污染情况具有重要的指导意义,收集广西区内204批次包装饮用桶装水,分析其上述四类污染物污染状况, 旨在发现广西包装饮用桶装水产品可能存在的质量问题,用以指导企业生产及保障产品质量。
样品为 2022 年广西区内各市县的生产环节、流通环节采集, 共收集 204 批次包装饮用桶装水(每桶 ${15}\sim {18}\mathrm{\;L}$ ),其中纯净水 23 批次、其他饮用水(包括天然泉水、天然水、山泉水等)181 批次。
试剂包括:乙酸(分析纯,光华试剂有限公司); 氢氧化钾(色谱纯,科密欧化学试剂有限公司);亚硝酸钠(标准溶液,北京海岸鸿蒙标准物质技术有限责任公司);溴酸根(标准溶液,国家有色金属及电子材料分析测试中心);磷酸盐缓冲液(贮存液,北京陆桥); 铜绿假单胞菌基础培养基/CN、金氏 B 培养基、乙酰胺液体培养基、绿脓素测定用培养基、营养琼脂、氧化酶试剂、钠氏试剂(北京陆桥)。
850 Professional IC 离子色谱仪 (Metrohm); DHP-9162 恒温培养箱 $\left({{36}\pm 1{}^{\circ }\mathrm{C}}\right);\mathrm{{CX}}{33}$ 显微镜 $({10}\times \sim$ ${100}\times )$ ; HWS-26型恒温水浴锅(46±1°C)。
检测方法: 根据 GB 8538-2016《食品安全国家标准 饮用天然矿泉水检验方法》、GB 4789.3-2016 《食品安全国家标准 食品微生物学检验 大肠菌群计数》、GB 5009.33—2016《食品安全国家标准 食品中亚硝酸盐与硝酸盐的测定》进行检测。
判定依据:根据 GB 19298-2014《食品安全国家标准 包装饮用水》、GB 2762-2017《食品安全国家标准 食品中污染物限量》进行判定是否超标。
204 批次包装饮用桶装水中,55 批次检出铜绿假单胞菌,溴酸盐、大肠菌群、亚硝酸盐(以 ${\mathrm{{NO}}}_{2}$ 计)均未超标。铜绿假单胞菌的检出率约为 26.96%。污染物检出情况见 表 1
表 1 可知 2022 年广西区内 204 批次包装饮用桶装水中溴酸盐含量均低于限量值 ${0.01}\mathrm{{mg}}/\mathrm{L}$ ,亚硝酸盐(以 ${\mathrm{{NO}}}_{2}$ -计)含量均低于限量值 ${0.005}\mathrm{{mg}}/\mathrm{L}$ (以 ${\mathrm{{NO}}}_{2}$ 计),说明广西包装饮用桶装水质量安全指标把控良好。204 批次包装饮用桶装水中微生物指标中大肠菌群未有检出, 说明包装饮用桶装水质量卫生指标合格, 但存在铜绿假单胞菌检出率高的问题。包装饮用桶装水中铜绿假单胞菌超标的原因可能是:(1) 水源污染的问题。水源水中铜绿假单胞菌污染严重,在生产过程中消毒力度不够,不能彻底消除水中铜绿假单胞菌。(2) 生产过程卫生控制不严格问题。企业生产管道、设备清洗消毒存在死角, 导致铜绿假单胞菌累积污染。(3) 消毒不到位问题。企业对装水的桶以及桶盖、环境消毒不测底, 导致在灌装时铜绿假单胞菌污染。从目前研究报道来看, 全国各地包装饮用水中铜绿假单胞菌的检出率均为最高, 而广西地处西南, 气候湿热, 非常适合铜绿假单胞菌繁殖, 可能是导致铜绿假单胞菌污染更为突出的原因 [ 2 , 14 - 15 ]
根据 GB 19298-2014《食品安全国家标准 包装饮用水》中的定义, 包装饮用水分为两类: 纯净水、 其他水。204 批次包装饮用桶装水中,23 批次为纯净水, 181 批次为其他水。有 18 批次的纯净水检出铜绿假单胞菌,检出率约为 78.26%,有 37 批次其他水检出铜绿假单胞菌,检出率约为 20.44%。(见 表 2 )
表 2 可知 2022 年广西区内 204 批次包装饮用桶装水中纯净水中的铜绿假单胞菌检出率远高于其他饮用水(天然泉水、山泉水等),可能是由于两种类型包装饮用水生产水源范围、工艺要求不一样, 企业卫生条件不一样导致的。根据 GB 19298-2014《食品安全国家标准 包装饮用水》中的定义, 纯净水可以公共供水系统的水或者非公共供水系统的地表水或地下水作为水源, 采用蒸馏法、电渗析法、离子交换法、反渗透法或其他适当的水净化工艺, 加工制成。 而其他水, 其水源仅为来自非公共供水系统的地表水或地下水, 其处理过程仅允许采用脱气、曝气、倾析、 过滤、臭氧化作用或紫外线消毒杀菌过程等有限的处理方法, 不改变水的基本物理化学特征的工艺。来自公共供水系统的水并未对铜绿假单胞菌做要求, 而公共供水系统的水流动性相对非公共供水系统的地表水或地下水较差, 可能导致铜绿假单胞菌的大量繁殖, 在水源上纯净水被铜绿假单胞菌污染的概率比其他水高。此外, 在生产工艺上其他水生产工艺较为简单, 容易控制消毒条件。纯净水工艺可选种类多, 比如反渗透技术操作不当容易导致铜绿假单胞菌透过过滤装置进入水中, 而且每种工艺消毒条件各不相同, 企业较难把握, 也可能导致纯净水被铜绿假单胞菌污染概率上升。
204 批次包装饮用桶装水中,19 批次来自流通领域, 185 批次来自生产领域。其中有 12 批次来自流通领域的水检出铜绿假单胞菌,检出率约为 63.16%, 有 43 批次来自生产领域的水检出铜绿假单胞菌, 检出率约为 23.24%。(见 表 3 )
表 3 可知, 2022 年广西区内 204 批次包装饮用桶装水中流通领域的水铜绿假单胞菌的检出率远高于生产领域的水, 可能是由于在贮存、运输环节中湿热的环境让铜绿假单胞菌大量繁殖所致。成品包装饮用桶装水在生产领域驻留时间相对流通领域短, 再加上生产企业对产品的运输贮存条件控制相对严格, 而在销售领域, 由于各级销售商对运输贮存条件把控不严格或不合理, 且产品在销售领域驻留时间较长, 会导致流通领域的水铜绿假单胞菌检出率高于生产领域的水。
204 批次包装饮用桶装水分别来自广西区内 14 个市。北海、防城港、贺州、钦州的桶装水均未检出铜绿假单胞菌。柳州的桶装水检出率在 20%以下。桂林、河池、梧州、玉林的桶装水检出率为 20%~30%。 崇左、贵港、南宁的桶装水检出率为 30%~40%。百色、来宾的桶装水检出率高于 40%。(见 表 4 )
表 4 可知 2022 年广西区内 204 批次包装饮用桶装水中采样批次在 10 批次以下的有北海、防城港、 贺州、钦州、梧州 5 市,其铜绿假单胞菌检出率不高于 20%,采样批次在 10~20 批次的有崇左、贵港、 河池、柳州、玉林 5 市,其铜绿假单胞菌检出率在 16.67%~30.77%之间,采样批次在 20 批次以上的有百色、桂林、来宾、南宁 4 市,其铜绿假单胞菌检出率在 22.73%~47.62%之间。各地市包装饮用桶装水铜绿假单胞菌检出率的差异,受采样批次、企业质控、 水源水质量等因素综合影响, 并未呈现相关规律性。
研究了 2022 年广西区内不同类型、不同地市、 不同环节的包装饮用桶装水中溴酸盐、大肠菌群、铜绿假单胞菌、亚硝酸盐(以 ${\mathrm{{NO}}}_{2}$ 计)指标的污染情况, 结果表明除了铜绿假单胞菌污染突出外, 其他指标均控制良好, 说明广西包装饮用桶装水质量控制总体上没有大问题。其中纯净水、流通领域的水铜绿假单胞菌污染尤为突出, 可能与广西湿热气候、水源水污染情况、企业生产工艺消杀程度及运输贮存环境条件等因素有关, 当前广西包装饮用桶装水产品仍需重视铜绿假单胞菌污染监控。根据研究结果建议消费者针对性的选择包装饮用桶装水,优先选择天然泉水、泉水、 山泉水等较纯净水更易消杀的包装饮用桶装水, 同时关注包装饮用桶装水的保质期新鲜程度, 优先选择流通量大的店铺。
研究结果显示所有收集的产品大肠菌群、溴酸盐、亚硝酸盐(以 ${\mathrm{{NO}}}_{2}$ -计)均未超标,铜绿假单胞菌总体检出率约为 26.96%,铜绿假单胞菌污染问题仍然突出。包装饮用桶装水被铜绿假单胞菌污染可能有几个原因:(1)水源水卫生状况差,无法从源头上消除。(2)输送管道清洗不充分,引起污染。(3)对空桶、 瓶盖等的清洗消毒不够彻底。(4) 灌装环境不够干净。(5)运输贮存不够规范等。针对区内包装饮用桶装水铜绿假单胞菌污染严重问题, 目前已通过加强包装饮用水全产业链标准化进行解决, 联合包装饮用水生产相关企业修订系列团体标准, 对包装应用水从水源到生产到流通整个领域进行标准化规范管理, 已发布的团体标准有:TGXPZS003-2022《泉水水源地管理和防护规范》、T GXPZS004-2022《桶装饮用水 PC 水桶清洗规范》、T GXPZS007-2022《包装饮用水配送服务规范》、T GXPZS008-2022《桶装饮用水生产过程清洗消毒技术要求》、T GXPZS010-2022《桶装水生产技术规范》、T GXPZS011-2022《包装饮用水加工过程微生物监控规范》等。同时也建议监管部门加强包装饮用桶装水的抽查监管力度, 多维度的解决包装饮用桶装水铜绿假单胞菌污染问题。
综上所述, 广西包装饮用桶装水总体质量安全, 部分产品受各种因素的影响被铜绿假单胞菌污染, 企业通过标准化生产运输贮存, 优先在水源上控制污染物, 其次在生产加工过程中严格按照卫生规范操作, 保持良好洁净的生产车间, 定期检查清洗维护设备, 严格规范遵守运输贮存条件, 此外建议企业加强检测实验室能力建设, 及时把控各环节污染情况。监管部门加强监管力度, 与企业一起保障包装饮用桶装水质量安全。消费者自觉做好垃圾分类, 避免间接污染水体, 自觉爱护水源、保护水源, 提高饮水安全意识, 选择信誉良好的企业品牌。
