目的 总结直接滴定法和氧化还原滴定法在居民食用碘盐碘含量测定中的应用价值。方法 随机抽样选取2024年1月—2024年12月200份居民食用碘盐(100份添加碘酸钾食盐、100份添加其他还原物质食盐)、100份市场销售食用碘盐,分别进行直接滴定法和氧化还原滴定法检测,分析碘盐标准物质检测、添加不同物质的居民和市售食用碘盐中碘含量检测的相关数据。结果 直接滴定法对只添加碘酸钾标准物质测定结果(22.13±0.36)mg/kg高于氧化还原滴定法(21.87±0.37)mg/kg, P< 0.05;直接滴定法对居民添加碘酸钾食用碘盐测定结果(19.61±2.13)g/kg、添加其他还原物质(20.22±1.53)g/kg低于氧化还原滴定法(23.58±2.15) mg/kg、(22.43±1.38) mg/kg, P< 0.05;直接滴定法对市售添加碘酸钾食用碘盐测定结果(25.57±2.13) g/kg、添加其他还原物质(25.85±2.16)g/kg低于氧化还原滴定法(25.86±2.44) mg/kg、(26.47±2.22) mg/kg, P>0.05。结论 在居民食用碘盐的碘含量测定中,直接滴定法和氧化还原滴定法各自具有独特的优势,直接滴定法适用于添加碘酸钾的标准盐,而氧化还原滴定法则更适合处理已开封并在不良存储条件下的食盐。因此,工作人员在食品质量监控中需要根据实际情况选择合适的测定方法,进而为公众健康提供有力保障。
