Objective To construct a quality evaluation system for locally-produced grapes in Shanghai based on the key characteristic quality indicators. Methods By measuring 14 sensory and internal nutritional indicators of 57 batches of samples from 4 grape varieties, factor analysis was employed to screen out 8 core indicators, including soluble solids, total acids, solid-acid ratio, tartaric acid, glucose, zinc, vitamin C, and anthocyanins. Based on cluster analysis and the analytic hierarchy process (AHP), a three-level grading standard and weight distribution were determined, and a comprehensive scoring system was constructed. Results Results showed that the quality indicators of soluble solids, glucose, vitamin C and anthocyanins were relatively high in “Ju Meigui” variety, which had the highest average comprehensive score (81.6 points), and was significantly superior to “Zuijinxiang” (68.4 points), “Yangguang Meigui” (64.4 points), and “Shenyuan” (62.8 points). Conclusion The evaluation system established in this study exhibits high discriminant accuracy and can provide a reliable scientific basis for the quality grading, variety optimization, and market promotion of Shanghai-produced grapes.

目的 基于关键特征品质指标, 构建适用于上海地产葡萄的品质评价体系。方法 通过对4个葡萄品种的57批次样品进行14项感官及内在营养指标的测定分析, 运用因子分析筛选出可溶性固形物、总酸、固酸比、酒石酸、葡萄糖、锌、维生素C和花青素8项核心指标。基于聚类分析和层次分析法(analytic hierarchy process, AHP), 明确了三级分级标准及权重分配, 进而构建综合评分体系。结果 巨玫瑰品种的可溶性固形物、葡萄糖、维生素C、花青素等多项指标含量较高, 平均综合评分为81.6分, 显著优于醉金香(68.4分)、阳光玫瑰(64.4分)和申园(62.8分)。结论 本研究所建立的评价体系具备较高的判别准确性, 能够为上海地产葡萄的品质分级、品种优化以及市场推广提供可靠的科学依据。

固酸比 / 固酸比是可溶性固形物含量与总酸含量的比值。通过上述分别测得的可溶性固形物和总酸含量, 将两者数值相除即可得到固酸比

酒石酸、苹果酸 GB/T 23495—2009《食品中有机酸的测定 液相色谱法》 高效液相色谱法。葡萄样品经提取、过滤、离心等前处理后, 采用反相高效液相色谱柱分离, 紫外检测器检测, 外标法定量
维生素C GB 5009.86—2016《食品安全国家标准 食品中抗坏血酸的测定》 荧光法或2,6-二氯靛酚滴定法。荧光法是将样品经草酸溶液提取后, 用活性炭将抗坏血酸氧化为脱氢抗坏血酸, 与邻苯二胺反应生成具有荧光的喹喔啉, 通过荧光分光光度计测定其荧光强度, 外标法定量; 2,6-二氯靛酚滴定法是用2,6-二氯靛酚标准溶液滴定样品提取液, 根据滴定体积计算维生素C含量
GB 5009.14—2017《食品安全国家标准 食品中锌的测定》 原子吸收光谱法。将葡萄样品经干法灰化或湿法消解后, 配制成一定浓度的溶液, 吸入原子吸收光谱仪的火焰中, 在特定波长下测定锌的吸光度, 与标准曲线比较定量
GB 5009.93—2017《食品安全国家标准 食品中硒的测定》 氢化物原子荧光光谱法。样品经酸消解后, 在酸性介质中, 硒与硼氢化钠或硼氢化钾反应生成硒化氢, 由载气带入原子化器中进行原子化, 在硒空心阴极灯的照射下, 基态硒原子被激发至高能态, 在去活化回到基态时, 发射出特征波长的荧光, 通过测量荧光强度进行定量分析[6]
白藜芦醇、白藜芦醇苷 / 高效液相色谱法。葡萄样品经提取、净化后, 注入高效液相色谱仪, 采用紫外检测器或二极管阵列检测器检测, 外标法定量[7]
花青素 / pH示差法。利用花青素在不同pH条件下呈现不同颜色和吸光度的特性, 分别在pH 1.0和pH 4.5的缓冲溶液中测定样品溶液的吸光度, 根据吸光度差值计算花青素含量
氨基酸总量 GB/T 5009.124—2016《食品中氨基酸的测定》 茚三酮比色法。葡萄样品经水解后, 氨基酸与茚三酮在加热条件下反应生成蓝紫色化合物, 在570 nm波长处测定吸光度, 与标准曲线比较定量

目的 基于关键特征品质指标, 构建适用于上海地产葡萄的品质评价体系。方法 通过对4个葡萄品种的57批次样品进行14项感官及内在营养指标的测定分析, 运用因子分析筛选出可溶性固形物、总酸、固酸比、酒石酸、葡萄糖、锌、维生素C和花青素8项核心指标。基于聚类分析和层次分析法(analytic hierarchy process, AHP), 明确了三级分级标准及权重分配, 进而构建综合评分体系。结果 巨玫瑰品种的可溶性固形物、葡萄糖、维生素C、花青素等多项指标含量较高, 平均综合评分为81.6分, 显著优于醉金香(68.4分)、阳光玫瑰(64.4分)和申园(62.8分)。结论 本研究所建立的评价体系具备较高的判别准确性, 能够为上海地产葡萄的品质分级、品种优化以及市场推广提供可靠的科学依据。

Objective To construct a quality evaluation system for locally-produced grapes in Shanghai based on the key characteristic quality indicators. Methods By measuring 14 sensory and internal nutritional indicators of 57 batches of samples from 4 grape varieties, factor analysis was employed to screen out 8 core indicators, including soluble solids, total acids, solid-acid ratio, tartaric acid, glucose, zinc, vitamin C, and anthocyanins. Based on cluster analysis and the analytic hierarchy process (AHP), a three-level grading standard and weight distribution were determined, and a comprehensive scoring system was constructed. Results Results showed that the quality indicators of soluble solids, glucose, vitamin C and anthocyanins were relatively high in “Ju Meigui” variety, which had the highest average comprehensive score (81.6 points), and was significantly superior to “Zuijinxiang” (68.4 points), “Yangguang Meigui” (64.4 points), and “Shenyuan” (62.8 points). Conclusion The evaluation system established in this study exhibits high discriminant accuracy and can provide a reliable scientific basis for the quality grading, variety optimization, and market promotion of Shanghai-produced grapes.

在葡萄品质评价领域, 国内外学者已开展了大量研究, 取得了丰硕成果。国外研究起步较早, 在评价指标和方法上不断创新。例如, 在欧洲葡萄酒产区, 对酿酒葡萄的品质评价不仅关注常规的理化指标如糖分、酸度, 还深入研究香气成分、酚类物质等对葡萄酒品质的影响。LAUREATI等[1]利用气相色谱-质谱法等方法, 对不同品种酿酒葡萄的感官特性和香气成分进行分析, 表明香气成分在很大程度上决定了葡萄酒的独特风味; GAMBETTA等[2]揭示了产地地理环境、营养成分和葡萄质量等级密切相关。
国内研究在借鉴国外经验的基础上, 结合我国葡萄种植特点和市场需求, 也取得了显著进展。针对鲜食葡萄, 运用主成分分析和聚类分析等多元统计方法, 对多个品质指标进行综合分析, 筛选出关键指标并建立品质评价体系。如季晓莲等[3]通过研究表明, 可溶性固形物、可滴定酸、可溶性糖等指标是评价鲜食葡萄品质的重要因素, 通过对这些指标的量化分析, 能够更准确地评估葡萄品质; 文静等[4]采用高光谱技术, 快速无损检测葡萄的糖度、酸度等品质指标, 该技术具有分析速度快、无需样品预处理等优点, 为葡萄品质的快速检测提供了新的技术手段。
本研究聚焦于解决当前葡萄品质评价体系存在的两个核心瓶颈: 一是现有评价体系大多针对特定品种或用途的葡萄, 缺乏通用性和全面性。不同品种的葡萄在生长特性、品质表现上存在差异, 单一的评价体系难以适用于所有品种; 二是对葡萄品质形成的分子机制和相关指标研究还不够深入。
针对上述问题, 本研究的创新点在于立足上海地区的独特环境和葡萄种植特点, 构建具有区域适应性的多维评价体系。通过对多个葡萄品种的多批次样品进行全面的感官及内在营养指标测定, 运用先进的因子分析、聚类分析和层次分析法(analytic hierarchy process, AHP)等方法, 筛选出关键特征品质指标, 并确立科学合理的分级与评分标准。不仅考虑了常规的理化指标, 还纳入了对葡萄风味和营养价值有重要影响的花青素、酒石酸等指标, 使评价体系更加全面、科学, 为上海地产优质葡萄品种的选择提供依据, 对葡萄种植业起到了导向作用。
本研究于2024年8月19日至20日, 在上海地区选取5家规模化合作社, 包括上海润庄农业科技有限公司(奉贤区庄行镇)、上海农科院资源圃(奉贤区奉浦街道)、上海田旺农业科技有限公司(金山区漕泾镇)、上海施泉葡萄专业合作社(金山区吕巷镇)、上海平棋葡萄种植专业合作社(浦东新区周浦镇); 采集其主栽的4个葡萄品种(巨玫瑰、阳光玫瑰、醉金香、申园)的样本, 共计19批次。其中, 巨玫瑰、阳光玫瑰和醉金香各采集5批次, 申园采集4批次。采样完成后, 立即对样品进行预处理: 首先将果实去梗、清洗, 随后按照果皮、果肉、皮肉混合3种方式进行制样, 形成57批次样品, 制样后经液氮速冻处理, 置于-80 ℃超低温冰箱保存, 以此避免成分降解, 确保研究结果的可靠性[5]
去离子水(电阻率不低于18.2 MΩ・cm, 由实验室超纯水机自制); 甲醇(色谱纯)、盐酸、硝酸、高氯酸、氢氧化钠、磷酸(优级纯)、活性炭、硼氢化钠(或硼氢化钾)、铁氰化钾、茚三酮、酚酞(质量分数0.5%的酚酞乙醇溶液)、磷酸二氢钾、醋酸钠(分析纯)(国药集团化学试剂有限公司); 乙腈(色谱纯, 美国Sigma-Aldrich公司)。
果糖(纯度99.0%, 美国Chem Service公司); 葡萄糖(纯度99.5%)、氨基酸混合标准品(包含常见的18种氨基酸, 纯度≥98.0%)(美国Sigma-Aldrich公司); 酒石酸(纯度99.2%)、柠檬酸(纯度99.5%)、苹果酸(纯度99.3%)(国药集团化学试剂有限公司); 维生素C标准品(纯度99.8%, 上海阿拉丁试剂有限公司); 锌标准溶液和硒标准溶液(纯度1000 μg/mL, 国家有色金属及电子材料分析测试中心); 白藜芦醇(纯度98.5%)、白藜芦醇苷(纯度为98.0%)(上海源叶生物有限公司)。
AL204型电子天平(210 g/0.1 mg, 瑞士梅特勒-托利多集团); H1650-W型离心机(湘潭湘仪仪器有限公司); KQ-500DE型超声波清洗器(昆山市超声仪器有限公司); DK-S24型恒温水浴锅(上海一恒科学仪器有限公司); MDS-6G型马弗炉(北京盈安美诚科学仪器有限公司); DR301-95型折光仪(德国克吕士公司); 1260 InfinityII型高效液相色谱仪(配备紫外检测器和示差折光检测器, 美国安捷伦科技有限公司); F-7000型荧光分光光度计(日立高新技术公司); AA800型原子吸收光谱仪(配备锌空心阴极灯, 珀金埃尔默公司); AFS-933型氢化物原子荧光光谱仪(北京吉天仪器有限公司); 752N型紫外可见分光光度计(上海棱光技术有限公司)。
基于对感官特性与营养成分关联性的考量, 本研究共测定14项指标, 涵盖可溶性固形物、总酸、固酸比、果糖、葡萄糖、酒石酸、苹果酸、维生素C、锌、硒、白藜芦醇、白藜芦醇苷、花青素及氨基酸总量。各项指标的检测均严格依据国家标准或行业规范执行, 具体检测方法如表1所示。
本研究运用多种数据分析方法构建上海地产葡萄品质评价体系, 技术路线图见图1
(1)数据标准化与因子分析环节[8], 先对14项指标标准化, 消除量纲和数量级差异。因子分析提取方差贡献率≥78%的前4个主因子, 分析因子载荷矩阵, 筛选出可溶性固形物等8项核心指标。
(2)基于概率分布[9], 用聚类分析将各指标分为特级、一级、二级3个等级, 如可溶性固形物按<17.0、17.0~19.0、>19.0对应3个等级。
(3)采用AHP赋权, 构建判断矩阵, 通过打分获取信息, 用和积法计算指标权重, 验证一致性, 得出各指标权重。
(4)结合分级结果与权重分配, 建立总分100分的评分体系, 以指标权重乘100为满分值, 按满分值33%为三级确定各级得分, 将样品8项指标得分相加得综合得分, 实现葡萄品质量化评价。
为确保实验数据的可靠性和准确性, 每个实验均严格重复3次, 采用平均值±标准偏差的方式进行呈现[10], 使用Microsoft Excel 2019和IBM SPSS Statistics 19进行数据处理与分析[11]。运用方差分析方法, 对不同品种葡萄的各项品质指标数据进行深入分析, 同时, 采用显著性检验中的Duncan氏新复极差法进行多重比较。
葡萄果实风味评价指标由多项内在品质指标构成, 4种上海地产葡萄的品质指标如表2所示。其中, 白藜芦醇和白藜芦醇苷在大多数样品中均未检出(51/57), 故不纳入统计范围。可溶性固形物和总酸是影响葡萄品质和口感的重要指标, 不同的固酸比反映果实的口感和风味特性, 葡萄糖、果糖等还原糖含量和可溶性固形物含量趋势较为一致。4种葡萄的可溶性固形物含量为15.33~21.83 g/100 g, 总酸含量为0.19~0.39 g/100 g, 固酸比变化范围为48.9:1~86.7:1, 综合而言, 巨玫瑰的可溶性固形物含量最高, 固酸比和还原糖含量较大。维生素C是一种抗氧化剂, 作为果实内重要营养物质参与新陈代谢活动, 除阳光玫瑰维C含量较低外, 其余品种在0.05水平上差异并不显著, 约为3 mg/100 g。锌、硒作为微量元素有利于提高免疫力, 4种葡萄间差异不显著。氨基酸是葡萄很多香气成分物质的前体物质, 含量为0.37~0.87 g/100 g。花青素为黄酮类物质, 可有效清除体内自由基, 其中, 申园平均含量最高(19.12 mg/kg)。
为精准确定上海地产葡萄的主要品质指标, 对14项品质指标数据进行标准化处理后, 开展因子分析, 判断各个指标在相应主成分中的权重和影响, 具体结果如表3所示。前4个因子的方差贡献率达到77.964%。其中, 第1因子方差贡献率为35.800%, 代表性指标为可溶性固形物和葡萄糖; 第2因子方差贡献率为17.288%, 代表性指标为酒石酸和花青素; 第3因子方差贡献率为15.412%, 代表性指标为总酸和锌; 第4因子方差贡献率为9.464%, 代表性指标为固酸比和维生素C。
基于上述因子载荷分析, 按照贡献值的绝对值大小进行排序, 最终确定可溶性固形物、总酸、固酸比、酒石酸、葡萄糖、锌、维生素C和花青素8项指标, 作为上海地产葡萄品质评价的核心指标[12]
参照GB/T 26906—2024《甜樱桃》、NY/T 1986—2011《冷藏葡萄》和NY/T 3103—2017 《加工用葡萄》等相关质量分级情况, 基于8个品质指标的概率分布, 运用聚类分析方法, 将上海地产葡萄的每个品质指标均划分为3个等级, 即特级、一级和二级。
基于数据特征将样本划分为3类, 聚类类别_1的频数为14, 所占百分比为24.56%; 聚类类别_2的频数为16, 所占百分比为28.07%; 聚类类别_3的频数为27, 所占百分比为47.37%, 详见表4。结果表明对于变量可溶性固形物, 显著性P为0.000***, 水平上呈现显著性, 拒绝原假设, 说明变量可溶性固形物在聚类分析划分的类别之间存在显著性差异。
任潇等[13]采用类似的聚类分析方法对水果品质指标进行分级, 结果表明该方法能够有效区分不同品质水平的水果。本研究中, 通过对可溶性固形物含量数据的聚类分析, 能够清晰地将葡萄样品按照可溶性固形物含量的高低分为不同等级, 为葡萄品质的评价提供了重要依据。可溶性固形物含量是衡量葡萄甜度和成熟度的重要指标, 较高的可溶性固形物含量通常意味着葡萄具有更好的口感和风味。在实际生产和销售中, 根据可溶性固形物含量对葡萄进行分级, 能够满足不同消费者对葡萄甜度的需求, 提高葡萄的市场竞争力。
基于数据特征将样本划分为3类, 聚类类别_1的频数为5, 所占百分比为26.32%; 聚类类别_2的频数为7, 所占百分比为36.84%; 聚类类别_3的频数为7, 所占百分比为36.84%, 详见表5。结果表明对于变量总酸, 显著性P为0.000***, 水平上呈现显著性, 拒绝原假设, 说明变量总酸在聚类分析划分的类别之间存在显著性差异。
总酸含量是影响葡萄口感和风味的重要因素之一, 它与葡萄的酸度密切相关。适宜的总酸含量能够使葡萄口感清爽、鲜美, 而过高或过低的总酸含量都会影响葡萄的品质。黄丽萍等[14]对葡萄总酸含量与品质的关系进行了深入探讨, 结果表明总酸含量在葡萄品质评价中具有重要作用。本研究通过聚类分析, 将总酸含量划分为不同等级, 为评价葡萄的酸度和风味提供了科学依据。在实际应用中, 根据总酸含量对葡萄进行分级, 能够帮助消费者选择符合自己口味偏好的葡萄, 同时也为葡萄种植者提供了优化种植管理的方向。
基于数据特征将样本划分为3类, 聚类类别_1的频数为8, 所占百分比为42.10%; 聚类类别_2的频数为5, 所占百分比为26.32%; 聚类类别_3的频数为6, 所占百分比为31.58%, 详见表6。结果表明对于变量固酸比, 显著性P为0.000***, 水平上呈现显著性, 拒绝原假设, 说明变量固酸比在聚类分析划分的类别之间存在显著性差异。
固酸比是评价葡萄品质的重要综合指标, 它反映了葡萄中糖分和酸度的平衡关系。适宜的固酸比能够使葡萄口感酸甜适中, 风味浓郁。王荣等[15]的研究中, 强调了固酸比在葡萄品质评价中的重要性, 指出固酸比的合理范围对于提升葡萄品质具有关键作用。本研究通过聚类分析, 将固酸比划分为不同等级, 为评价葡萄的品质提供了更全面的依据。在葡萄的生产和销售过程中, 根据固酸比进行分级, 能够更好地满足消费者对葡萄口感和风味的需求, 促进葡萄产业的发展。
基于数据特征将样本划分为3类, 聚类类别_1的频数为30, 所占百分比为52.63%; 聚类类别_2的频数为12, 所占百分比为21.05%; 聚类类别_3的频数为15, 所占百分比为26.32%, 详见表7。结果表明对于变量酒石酸, 显著性P为0.000***, 水平上呈现显著性, 拒绝原假设, 说明变量酒石酸在聚类分析划分的类别之间存在显著性差异。
酒石酸是葡萄中含量较高的有机酸之一, 它对葡萄的风味和口感有着重要影响。适量的酒石酸能够赋予葡萄清新的酸度和独特的风味, 使葡萄口感更加丰富。杨巧锋等[16]的研究中, 对酒石酸在葡萄风味形成中的作用进行了深入研究, 结果表明酒石酸是影响葡萄风味品质的关键因素之一。本研究通过聚类分析, 将酒石酸含量划分为不同等级, 为评价葡萄的风味品质提供了科学依据。在葡萄的种植和加工过程中, 根据酒石酸含量进行分级, 有助于种植者选择合适的品种和优化栽培管理措施, 同时也为葡萄酒酿造等葡萄加工产业提供了重要的原料选择依据。
基于数据特征将样本划分为3类, 聚类类别_1的频数为20, 所占百分比为52.63%; 聚类类别_2的频数为8, 所占百分比为21.05%; 聚类类别_3的频数为10, 所占百分比为26.32%, 详见表8。结果表明对于变量葡萄糖, 显著性P为0.000***, 水平上呈现显著性, 拒绝原假设, 说明变量葡萄糖在聚类分析划分的类别之间存在显著性差异。
葡萄糖是葡萄中的主要糖类之一, 是葡萄甜味的重要来源, 对葡萄的口感和品质有着重要影响。较高的葡萄糖含量通常使葡萄口感更甜, 品质更好。张强等[17]的研究中, 对葡萄糖在葡萄品质形成中的作用进行了探讨, 指出葡萄糖含量是评价葡萄品质的重要指标之一。本研究通过聚类分析, 将葡萄糖含量划分为不同等级, 为评价葡萄的甜度和品质提供了科学依据。在葡萄的生产和销售中, 根据葡萄糖含量对葡萄进行分级, 能够满足消费者对甜度的不同需求, 提高葡萄的市场适应性。
基于数据特征将样本划分为3类, 聚类类别_1的频数为16, 所占百分比为28.07%; 聚类类别_2的频数为28, 所占百分比为49.12%; 聚类类别_3的频数为13, 所占百分比为22.81%, 详见表9。结果表明对于变量锌, 显著性P为0.000***, 水平上呈现显著性, 拒绝原假设, 说明变量锌在聚类分析划分的类别之间存在显著性差异。
锌是葡萄生长发育所必需的微量元素之一, 它参与葡萄的多种生理过程, 对葡萄的果实发育、品质形成和抗逆性等方面都有着重要影响。适量的锌含量有助于提高葡萄的品质和产量。张丽萍等[18]的研究中, 对锌元素在葡萄生长发育和品质形成中的作用进行了深入研究, 结果表明锌元素对葡萄品质的提升具有重要意义。本研究通过聚类分析, 将锌含量划分为不同等级, 为评价葡萄的营养品质和生长状况提供了科学依据。在葡萄的种植过程中, 可以根据锌含量对葡萄进行分级。
基于数据特征将样本划分为3类, 聚类类别_1的频数为32, 所占百分比为56.14%; 聚类类别_2的频数为18, 所占百分比为31.58%; 聚类类别_3的频数为7, 所占百分比为12.28%, 详见表10。结果表明对于变量维生素C, 显著性P为0.000***, 水平上呈现显著性, 拒绝原假设, 说明变量维生素C在聚类分析划分的类别之间存在显著性差异。
贾然然等[19]在研究葡萄品质时指出, 花青素含量高的葡萄在抗氧化能力方面表现更出色。基于数据特征将样本划分为3类, 聚类类别_1的频数为45, 所占百分比为81.82%; 聚类类别_2的频数为3, 所占百分比为5.46%; 聚类类别_3的频数为7, 所占百分比为12.73%, 详见表11。结果表明对于变量花青素, 显著性P为0.000***, 水平上呈现显著性, 拒绝原假设, 说明变量花青素在聚类分析划分的类别之间存在显著性差异。
由上述聚类分析方式形成分级标准如表12所示。
根据葡萄样品的8项品质指标贡献及其重要程度, 采用1~9标度法, 构造出优质葡萄品质指标的主观评价判断矩阵, 见表13。标度从1~9表示为1-同样重要, 3-稍微重要, 5-明显重要, 7-强烈重要, 9-极端重要, 以横坐标对照, 例如表13中第二行(可溶性固形物)相较于第三列(总酸)的矩阵值为1, 则表明可溶性固形物含量相较于总酸同样重要。叶霜等[20]的研究中, 也采用了1~9标度法构建判断矩阵, 用于评价农产品的品质指标权重, 取得了良好的效果。本研究借鉴其经验, 结合葡萄品质评价的特点, 通过1~9标度法构建判断矩阵, 能够更直观地反映各指标之间的相对重要性。
采用和积法对各指标进行层次分析, 权重计算如表14所示。结果表明, 固形物的权重为22.672%, 总酸的权重为16.696%, 固酸比的权重为9.854%, 葡萄糖的权重为17.158%, 酒石酸的权重为13.800%, 锌的权重为5.521%, 维生素C的权重为13.088%, 花青素的权重为1.211%。最大特征根为16.164, 根据随机一致性指标(random index, RI)表查到对应的RI值为1.404, 因此一致性比率(consistency ratio, CR)=一致性指标(consistency index, CI)/RI=0.062<0.1, 通过一次性检验。本研究通过和积法计算权重, 并进行一致性检验[21], 保证了评价体系的科学性和可靠性。
以层次分析确定的指标权重乘以100, 保留两位小数, 作为该品质指标的满分值, 8项品质指标满分总和为100分。以该品质指标满分值的33%为三级, 确定各级的得分。各指标的评分标准见表15。汤晓艳等[22]的研究中, 也采用了类似的方法将指标权重转化为得分, 构建了农产品品质评价的评分标准。本研究借鉴其经验, 结合上海地产葡萄的实际情况, 建立了科学合理的评分标准。
采用上述所建立的评分标准对19批次葡萄样本依综合得分进行打分, 结果如表16所示。从表16中数据可以看出, 不同葡萄样品的评分呈现出明显差异, 这表明葡萄个体之间在品质上存在显著的多样性。但总体而言, 巨玫瑰品种的平均评分(81.6分)显著高于醉金香(68.4分)、阳光玫瑰(64.4分)和申园(62.8分)。本研究中巨玫瑰品种的优异表现, 主要归因于其本身含糖较高、酸度适中的独特品种特性。较高的含糖量使得巨玫瑰口感更甜, 符合大多数消费者对葡萄甜度的偏好; 而适中的酸度则赋予其清爽的口感, 使甜味与酸味达到了良好的平衡, 口感更加丰富、鲜美。这种甜度与酸度的完美结合, 使得巨玫瑰在品质评价中脱颖而出, 获得了较高的评分。
阳光玫瑰在某些指标上表现相对较弱, 例如葡萄糖含量在部分样品中较低, 导致其在该指标上的得分不高。这可能与阳光玫瑰的生长环境、栽培管理措施等因素有关。桑芬青[23]的研究中, 探讨了生长环境和栽培管理对葡萄品质的影响, 指出不同的栽培措施和环境条件会导致葡萄品质的差异。对于阳光玫瑰来说, 如果在生长过程中光照不足、施肥不合理等, 都可能影响其糖分的积累, 进而影响其品质评分。醉金香和申园在综合评分上也低于巨玫瑰, 可能是由于它们在多个品质指标上的表现不够突出。醉金香的酸度相对较高, 在总酸指标上的得分可能会受到一定影响; 申园的可溶性固形物含量在部分样品中未达到较高水平, 这也限制了其综合评分的提升。通过对不同品种葡萄品质差异的分析, 能够为葡萄种植者提供有针对性的建议, 帮助他们优化种植管理, 提高葡萄品质。
基于因子分析降维技术, 从14个内在营养指标中提取出了方差贡献率≥78%的前4个主因子, 涵盖了葡萄甜度、酸度、风味、营养成分等多个方面的信息, 并进一步筛选出可溶性固形物、总酸、固酸比、葡萄糖、酒石酸、维生素C、锌和花青素8个核心指标, 较为全面地代表葡萄品质的关键特征。
然而, 该筛选过程也可能存在一定的局限性。虽然方差贡献率达到了78%, 但仍有部分信息未被完全涵盖。这可能是因为葡萄品质受到多种因素的综合影响, 除了本研究中考虑的内在营养指标外, 还可能涉及其他因素, 如土壤质地、气候条件、栽培管理措施等, 这些因素可能会对葡萄品质产生一定的影响, 但在本研究中未被纳入分析。此外, 本研究仅考虑了内在营养指标, 未将感官指标如色泽、香气等纳入综合分析, 可能会使评价体系不够全面。色泽和香气是消费者在购买葡萄时首先关注的指标之一, 它们对葡萄的市场竞争力有着重要影响。刁子莹[24]在研究中强调了感官指标在水果品质评价中的重要性, 指出色泽和香气能够直接影响消费者的购买决策。因此, 在后续研究中, 有必要进一步完善评价指标体系, 纳入更多的感官指标和其他可能影响葡萄品质的因素, 以提高评价体系的全面性和准确性。
基于聚类分析和AHP确立的三级分级标准及权重分配, 构建的综合评分体系具有显著的实用性。在葡萄生产环节, 种植者可以依据分级标准, 明确了解自己所种植葡萄的品质等级, 从而有针对性地调整种植管理策略[25]。例如, 对于被评为二级的葡萄, 种植者可以分析是哪些指标未达到更高等级的要求, 进而在施肥、灌溉、病虫害防治等方面进行优化, 以提高葡萄的品质, 争取在下一生产周期达到一级或特级标准。在销售环节, 分级标准为葡萄的定价提供了客观依据, 使消费者在购买葡萄时能够更加直观地了解葡萄的品质差异, 根据自己的需求和预算进行选择, 增强了对葡萄品质的信任度。
然而, 该分级与评分标准也存在一定的局限性。聚类分析是基于样本数据的概率分布进行的, 对于样本外的数据可能存在不适用性。在本研究中, 样本仅来自上海地区的5家规模化合作社, 虽然具有一定的代表性, 但不能涵盖上海所有葡萄种植区域和品种的情况。如果将该分级标准应用于其他地区或新的葡萄品种, 可能会出现分级不准确的情况。因为不同地区的土壤、气候、栽培管理等因素存在差异, 会影响葡萄的品质表现, 导致原有的分级标准无法准确反映这些差异。AHP中判断矩阵的构建依赖于主观判断, 可能会引入一定的主观误差。在构建判断矩阵时, 虽然邀请了专家进行打分, 但不同专家的经验、知识背景和个人偏好可能会导致打分结果存在差异, 需要进一步优化方法来减少这种影响。
研究结果表明, 不同品种的葡萄在品质表现上存在显著差异。巨玫瑰品种凭借其含糖较高、酸度适中的独特优势, 综合评分最高, 显著优于阳光玫瑰、醉金香和申园等品种。营养成分的含量和比例会影响口感和风味, 例如, 巨玫瑰较高的含糖量使其口感更为甜美, 而适中的酸度则赋予其清爽的口感, 更具吸引力。此外, 不同品种的葡萄在维生素C、花青素、矿物质等含量上也存在差异。
然而, 现有的评价体系在面对不同品种的葡萄时, 可能存在一定的局限性。为了提高评价体系的适应性, 对于一些具有特殊风味的品种, 可以增加相应的风味评价指标, 还可以结合品种的生长环境、栽培技术等因素, 对评价体系进行优化。不同的生长环境和栽培技术会对葡萄的品质产生影响, 将这些因素纳入评价体系, 能够更准确地评价葡萄的品质。在贾朝爽等[26]的研究中, 针对不同的苹果品种制定了品质指标数据集, 取得了良好的效果。本研究可以借鉴其经验, 进一步完善上海地产葡萄的品质评价体系, 使其能够更好地适应不同品种的葡萄, 为葡萄产业的发展提供更有力的支持。
本研究建立的品质评价体系在葡萄产业中展现出广阔的应用前景[27]。在葡萄品质分级方面, 该体系为葡萄的等级划分提供了科学、客观的依据。在市场流通环节, 经销商可以依据评价体系对葡萄进行准确分级, 将特级、一级、二级葡萄分别归类销售, 满足不同消费者对品质和价格的需求。消费者在购买葡萄时, 能够根据分级标识快速了解葡萄的品质状况, 做出更加明智的购买决策, 这有助于提升消费者对葡萄品质的信任度, 促进葡萄市场的健康发展。
在品种优化领域, 该评价体系为葡萄育种和种植提供了有力的指导。育种专家可以利用评价体系对不同品种的葡萄进行全面评估, 筛选出具有优良品质指标的品种作为育种材料, 通过杂交、选育等手段, 培育出更符合市场需求的新品种。例如, 对于可溶性固形物、葡萄糖等甜度指标表现优异的品种, 可以作为提高葡萄甜度的育种亲本; 对于酒石酸、花青素等风味和营养指标突出的品种, 可以用于培育风味独特、营养价值高的新品种。种植户在选择种植品种时, 也可以参考评价体系, 选择品质优良、适应性强的品种进行种植, 提高葡萄的产量和品质, 增加经济效益。
在市场推广方面, 评价体系有助于提升上海地产葡萄的品牌形象。通过宣传和推广基于评价体系的优质葡萄产品, 能够让消费者更加了解上海地产葡萄的品质优势, 增强市场竞争力。在参加农产品展销会、电商平台销售等活动中, 以评价体系为依据, 展示上海地产葡萄的高品质, 吸引更多消费者购买, 从而扩大市场份额, 推动上海葡萄产业的发展。
未来研究可从以下几个方向进行拓展。在育种应用方面, 进一步深入研究评价体系与葡萄遗传特性的关系。通过基因测序、分子标记等技术, 挖掘与品质指标相关的基因, 为葡萄分子育种提供理论支持。例如, 研究可溶性固形物、花青素等品质指标的基因调控机制, 筛选出关键基因, 利用基因编辑技术对葡萄品种进行改良, 加速优良品种的培育进程。
结合新技术方面, 将物联网和传感器技术应用于葡萄品质评价[28]。在葡萄园安装传感器, 实时监测葡萄生长环境的温度、湿度、光照、土壤养分等参数, 同时利用近红外光谱、高光谱成像等技术, 对葡萄果实的品质指标进行在线检测。通过物联网将这些数据传输到云端, 利用大数据分析和人工智能算法, 实现对葡萄品质的实时预测和精准调控。例如, 根据传感器数据和品质检测结果, 及时调整灌溉、施肥、病虫害防治等管理措施, 提高葡萄的品质和产量。
开展多地区、多品种的葡萄品质评价也是后续研究的重要方向[15]。不同地区的气候、土壤等自然条件差异较大, 对葡萄品质产生不同影响。通过对多个地区、多个品种的葡萄进行品质评价, 进一步完善评价体系, 使其具有更广泛的适用性。研究不同地区葡萄品质的差异及其形成原因, 为葡萄的区域化种植和品种布局提供科学依据。例如, 分析南方高温多雨地区和北方干旱少雨地区葡萄品质的差异, 以及不同品种在不同地区的适应性, 指导种植户选择合适的品种和种植方式, 提高葡萄产业的整体效益。
本研究通过对上海地区4个葡萄品种的57批次样品进行14项感官及内在营养指标的测定, 运用因子分析、聚类分析和AHP, 成功构建了上海地区地产葡萄的品质评价体系。从14项指标中筛选出可溶性固形物、总酸、固酸比、酒石酸、葡萄糖、锌、维生素C和花青素8项核心指标, 这些指标涵盖了葡萄的甜度、酸度、风味、营养成分等多个关键方面, 能够全面且准确地反映上海地产葡萄的品质特征, 为上海地产葡萄品质评价提供了关键依据。
通过聚类分析, 确立了三级分级标准, 将葡萄品质清晰地划分为特级、一级和二级。这一分级标准基于各指标的概率分布, 具有科学性和客观性, 能够为葡萄的生产、销售和消费提供明确的参考。刘肖冰[29]的研究中, 运用聚类分析对农产品进行分级, 取得了良好的效果。本研究借鉴其经验, 结合上海地产葡萄的实际情况, 建立了合理的分级标准, 使不同品质水平的葡萄能够得到准确区分。
采用AHP确定了各指标的权重, 并构建了综合评分体系。通过对各指标权重的合理分配, 实现了对葡萄品质的量化评价。经检验, 该评价体系具有较高的判别准确性, 能够有效区分不同品种葡萄的品质差异。研究结果显示, 巨玫瑰品种综合评分最高, 显著优于阳光玫瑰、醉金香和申园等品种, 这与巨玫瑰本身含糖较高、酸度适中的品种特性密切相关。史星雲等[30]在研究葡萄品种品质评价时, 通过综合评分体系准确地评估了不同品种葡萄的品质。综上所述, 本研究构建的综合评分体系, 为上海地产葡萄的品质评价提供了科学、客观的方法, 为品种优化和市场推广提供科学依据, 进一步推动上海地产葡萄产业的发展。
