Objective To establish a method for rapid detection of nutritional components in raw milk by milk composition analyzer. Methods This study used commercial raw milk as the test sample, and based on Fourier transform infrared spectroscopy (FTIR), it constructed a rapid detection method for 9 parameters such moisture, protein, fat, lactose, ash, non-fat milk solids, total dry matter, relative density and freezing point in raw milk. The precision and accuracy of the rapid detection method were evaluated by comparing it with the national standard detection results. Results The determination results of the milk composition analyzer were as follows: Moisture 86.00%-89.09%, protein 2.52%-4.51%, fat 2.65%-5.39%, lactose 3.81%-5.40%, ash 0.56%-0.80%, and non-fat milk solids 6.94%-9.81%. F-test and T-test were performed on 9 parameters including fat, lactose and non-fat milk solids. The maximum F-value was 9.00, less than 9.55, indicating no significant difference in precision for the 9 parameters. The maximum T-value was 20.82, less than 22.327, confirming no significant difference in accuracy for the 9 parameters. Both the milk composition analyzer method and the national standard method could accurately determine milk nutritional indicators. The results showed that the precision and accuracy of the established rapid detection method had no significant differences from those of the national standard method. Conclusion The rapid detection method for nutrient components in raw milk constructed in this study can be used for high-throughput and low-cost rapid screening of nutrient components in raw milk. National standard methods should be used as the benchmark for high-precision scenarios, supervision and admission, while daily monitoring should primarily rely on rapid detection results from milk composition analyzers.

目的 建立乳成分分析仪快速检测生乳营养成分的方法。方法 本研究以市售生乳为检测样品, 基于傅立叶红外光谱技术(Fourier transform infrared spectroscopy, FTIR)构建生乳中水分、蛋白质、脂肪、乳糖、灰分、非脂乳固体、总干物质、相对密度、冰点9个参数的快速检测方法, 通过与国家标准法结果比对评价快速检测方法的精确度和准确性。结果 乳成分分析仪测定结果为水分在86.00%~89.09%、蛋白质在2.52%~4.51%、脂肪在2.65%~5.39%、乳糖在3.81%~5.40%、灰分在0.56%~0.80%、非脂乳固体在6.94%~9.81%。通过对脂肪、乳糖、非脂乳固体等9个参数进行F检验及T检验, F值最大为9.00, 小于9.55, 证明9个参数精确性无显著性差异。T值最大为20.82, 小于22.327, 证明9个参数准确度不存在显著性差异。乳成分分析仪法及国家标准法均能对牛奶营养指标进行准确测定。显示所建立的快速检测方法的精确度和准确性与国家标准法无显著差异。结论 本研究所构建生乳营养成分快速检测方法可用于生乳营养成分的高通量、低成本的快速筛查。高精度场景、监管与准入时以国家标准法为基准, 日常监测以基于乳成分分析仪的快速检测结果为主。

目的 建立乳成分分析仪快速检测生乳营养成分的方法。方法 本研究以市售生乳为检测样品, 基于傅立叶红外光谱技术(Fourier transform infrared spectroscopy, FTIR)构建生乳中水分、蛋白质、脂肪、乳糖、灰分、非脂乳固体、总干物质、相对密度、冰点9个参数的快速检测方法, 通过与国家标准法结果比对评价快速检测方法的精确度和准确性。结果 乳成分分析仪测定结果为水分在86.00%~89.09%、蛋白质在2.52%~4.51%、脂肪在2.65%~5.39%、乳糖在3.81%~5.40%、灰分在0.56%~0.80%、非脂乳固体在6.94%~9.81%。通过对脂肪、乳糖、非脂乳固体等9个参数进行F检验及T检验, F值最大为9.00, 小于9.55, 证明9个参数精确性无显著性差异。T值最大为20.82, 小于22.327, 证明9个参数准确度不存在显著性差异。乳成分分析仪法及国家标准法均能对牛奶营养指标进行准确测定。显示所建立的快速检测方法的精确度和准确性与国家标准法无显著差异。结论 本研究所构建生乳营养成分快速检测方法可用于生乳营养成分的高通量、低成本的快速筛查。高精度场景、监管与准入时以国家标准法为基准, 日常监测以基于乳成分分析仪的快速检测结果为主。

Objective To establish a method for rapid detection of nutritional components in raw milk by milk composition analyzer. Methods This study used commercial raw milk as the test sample, and based on Fourier transform infrared spectroscopy (FTIR), it constructed a rapid detection method for 9 parameters such moisture, protein, fat, lactose, ash, non-fat milk solids, total dry matter, relative density and freezing point in raw milk. The precision and accuracy of the rapid detection method were evaluated by comparing it with the national standard detection results. Results The determination results of the milk composition analyzer were as follows: Moisture 86.00%-89.09%, protein 2.52%-4.51%, fat 2.65%-5.39%, lactose 3.81%-5.40%, ash 0.56%-0.80%, and non-fat milk solids 6.94%-9.81%. F-test and T-test were performed on 9 parameters including fat, lactose and non-fat milk solids. The maximum F-value was 9.00, less than 9.55, indicating no significant difference in precision for the 9 parameters. The maximum T-value was 20.82, less than 22.327, confirming no significant difference in accuracy for the 9 parameters. Both the milk composition analyzer method and the national standard method could accurately determine milk nutritional indicators. The results showed that the precision and accuracy of the established rapid detection method had no significant differences from those of the national standard method. Conclusion The rapid detection method for nutrient components in raw milk constructed in this study can be used for high-throughput and low-cost rapid screening of nutrient components in raw milk. National standard methods should be used as the benchmark for high-precision scenarios, supervision and admission, while daily monitoring should primarily rely on rapid detection results from milk composition analyzers.

快速检测方法在食品安全、环境监测、药物筛选等领域有着广泛的应用。酶联免疫吸附法(enzyme-linked immunosorbent assay, ELISA)凭借灵敏度高, 特异性强, 操作相对简单, 能准确识别目标抗原或抗体而被广泛运用, 其缺点为成本较高, 需要购买特定的试剂盒, 检测时间较长, 通常需要数小时完成[1-2]。胶体金免疫层析法操作简便快捷, 适合现场快速检测, 其缺点为灵敏度相对较低, 可能无法检测低浓度的目标物质, 特异性可能不如ELISA等方法[3-4]。荧光定量聚合酶链式反应法(fluorescent quantitative polymerase chain reaction, FQ-PCR)灵敏度高, 能检测极低浓度的核酸。特异性强, 通过引物设计可准确识别目标基因, 其缺点为设备价格昂贵, 操作相对复杂, 需要专业人员操作[5-6]。生物传感器法(biosensor method, BSM)的优点为响应速度快, 能实现实时监测, 操作简便, 易于自动化和集成化。其缺点为成本较高, 特别是高性能的生物传感器[7-8]。化学发光免疫分析法(chemiluminescent immunoassay, CLIA)的优点为灵敏度高, 能检测极低浓度的目标物质。线性范围宽, 适用于不同浓度的样本检测。操作相对简单, 适合批量检测。其缺点为成本较高, 特别是需要购买特定的化学发光试剂[9-10]。试纸条法(test strip method, ST)(如早早孕试纸、毒品检测试纸等)的优点为操作极其简便, 用户友好。其缺点为灵敏度相对较低, 可能无法检测低浓度的目标物质。特异性可能不够强, 存在假阳性或假阴性的风险[11-12]
傅立叶红外光谱技术(Fourier transform infrared spectroscopy, FTIR)作为一种重要的分析手段, 在快速检测领域相比其他技术具有独特的优势。其优点为高灵敏度与分辨率, 能够检测极低浓度的样品, 能够区分分子结构中的细微差异。这使得FTIR在识别复杂混合物中的特定成分方面具有显著优势。利用红外光谱鉴别真假[13-15]、产地溯源[16-18]。FTIR作为一种非破坏性检测手段通常不需要对样品进行预处理或破坏, 可以实现无损检测[19]。这对于珍贵或难以获取的样品尤为重要。在中药材检测、茶叶检测、香辛料检测等应用广泛[20-23], 李杰等[24]采用近红外技术快速无损检测轻度霉变玉米。FTIR能够提供样品化学组成的丰富信息, 包括官能团的存在、化学键的类型和分子的构象等。与其他快速检测技术相比, FTIR能够同时检测样品中的多组分。这种多组分检测能力提高了检测效率和准确性, 是研究创新性的重要体现。FTIR不仅限于已知目标成分的检测, 还能揭示样品中未知或意外成分的存在。这种非目标性分析潜力使得FTIR在未知样品分析、质量控制和故障排查等方面具有独特优势。FTIR允许对生乳进行非破坏性、多组分同时分析、高精度与快速响应、智能化与自动化、环境友好、可持续性的检验检测。能够用于实时监测和质量控制, 而无需牺牲大量样品, 降低了检测成本并提高了效率。可以一次性检测到生乳中的多种化学成分, 如蛋白质、脂肪、乳糖、水分等。为生乳品质的快速评估提供了可能。自动采集和处理数据, 减少人工干预, 提高分析的准确性和一致性。还可以用于识别生乳中的掺假物质、评估生乳的新鲜度以及预测生乳的储存稳定性等。通过深入研究生乳的营养成分, 开发出更多具有特定营养功能的乳制品, 有助于了解不同饲养管理、饲料配方等因素对生乳营养成分的影响, 从而优化畜牧业生产。可以为人类健康、乳制品创新、畜牧业生产和食品安全等方面提供有力的支持。
生乳是指从健康哺乳动物(如奶牛、山羊、水牛等)乳房中直接挤出, 未经任何热处理(如巴氏杀菌、超高温灭菌)或化学处理的原始乳汁。研究生乳不仅是保障乳品安全的基石, 也对营养科学、农业经济和工业技术发展具有多重价值。本研究基于FTIR原理的乳成分分析仪测定数据, 提出乳成分快速分析法与国家标准法的互补应用方案: 建议在高精度检测场景(如质量监管与产品准入)中以国家标准法为基准, 而在日常生产监控与大数据监测中优先采用乳成分分析仪法。该方案为乳企在质量管控与可持续发展目标间的决策提供科学依据, 助力行业降本增效。研究系统性阐明乳成分分析法中多参数间的关联性与差异性(如脂肪、蛋白质、乳糖、非脂乳固体、冰点等), 推动该方法的标准化进程, 促进快速检测技术纳入行业规范。其创新性体现在多维验证: 突破传统单一成分(如脂肪/蛋白质)的对比模式, 同步评估乳制品中6大关键指标(水分、蛋白质、脂肪、乳糖、灰分、非脂乳固体)的检测一致性; 产研协同: 兼具学术创新价值(方法学优化)与产业应用潜力(全链条质量控制)。
6份原乳(内蒙古锡林浩特市售)。
淀粉酶(酶活力>1.5 U/mg, 生物试剂)、氨水(质量分数约25%, 电子级)(上海麦克林生化有限公司); 硼酸、硫酸钾(优级纯)、石油醚(沸程为30~60 ℃)、乙醇、氢氧化钠、甲基红指示剂(分析纯)(天津市科密欧化学试剂有限公司); 盐酸(优级纯)、无水乙醚、硫酸铜、硫酸、溴甲酚绿指示剂、海砂、乙酸锌、亚铁氰化钾、乙酸镁、酒石酸钾钠(分析纯)(国药集团化学试剂有限公司); 刚果红(分析纯, 天津市风船试剂有限公司); 亚甲基蓝指示剂、亚甲基蓝指示剂、冰乙酸(分析纯, 天津市北联精细化学品开发有限公司); 标准溶液A(冰点值为-400 m℃)、标准溶液B(冰点值为-557 m℃)、标准溶液C(冰点值为-600 m℃)(分析纯, 德国Funke Gerber公司); 硫酸滴定溶液标准物质GBW(E)083801 (0.1008 mol/L, 基准试剂, 北方伟业计量集团有限公司)。
Lactonscan FTIR-乳成分分析仪(保加利亚Lactonscan公司); ME204E电子天平(精度为0.0001 g, 美国梅特勒托利多仪器有限公司); WGL-125B电热鼓风干燥箱、MFLC-7/12A马弗炉(天津市泰斯特仪器有限公司); K9840凯氏定氮仪(海能未来技术集团有限责任公司); CryoStar 1冰点仪(德国Gerber公司)。
按照以下技术路线图1进行检测。首先进行感官指标的评价。其次理化指标的测定采用国标法及乳成分分析法同步进行。
取适量生乳样品置于50 mL烧杯中, 在自然光下观察生乳色泽、组织状态, 闻其气味, 用温开水漱口, 进行品尝滋味。评判标准符合国家标准中的感官要求, 具体见表1, 满分为100分。
利用FTIR的Lactonscan乳成分分析仪检测脂肪、非脂乳固体、蛋白质、乳糖、灰分、总干物质、加水率、密度、冰点。将仪器按照实验方法进行校准调零后, 取生乳样品50 mL置于烧杯中, 预热至20~30 ℃, 充分搅拌, 采用乳成分分析仪进行检测。所有样品检测完毕后导出数据。
辅助验证方法采用以下方法测定: 水分采用GB 5009.3—2016《食品安全国家标准 食品中水分的测定》第一法 直接干燥法; 蛋白质采用GB 5009.5—2016《食品安全国家标准 食品中蛋白质的测定》第一法 凯氏定氮法; 脂肪采用GB 5009.6—2016《食品安全国家标准 食品中脂肪的测定》第三法 碱水解法; 乳糖采用GB 5009.8—2023《食品安全国家标准 食品中果糖、葡萄糖、蔗糖、麦芽糖、乳糖的测定》第三法 酸水解-莱因-埃农氏法; 灰分采用GB 5009.4—2016《食品安全国家标准 食品中灰分的测定》第一法 食品中总灰分的测定; 非脂乳固体采用GB 5413.39—2010《食品安全国家标准 乳和乳制品中非脂乳固体的测定》; 冰点采用GB 5413.38—2016《食品安全国家标准 生乳冰点的测定》。
总干物质采用加法计算计算公式(1)如下:
总干物质=脂肪+蛋白质+乳糖+灰分
由密度结果计算相对密度[22], 计算公式(2)如下:

式中: ${\rho }_{4}^{20}$为密度计读数; X为乳成分分析仪密度的读数; 当用20 °C/4 °C密度计, 温度在20 °C时, 将读数代入式(2)相对密度即可直接计算; 不在20 °C时, 要查表换算成20 °C时度数。
水分计算公式(3)如下:

式中: S为一组数据的标准偏差较大者; S为一组数据的标准偏差较小者。
T检验的计算公式(5)和(6)如下:

式中: X1为第一组数据的平均值; n1为第一组数据的测定次数; S1为第一组数据的标准偏差; X2为第2组数据的平均值; n2为第二组数据的测定次数; S2为第二组数据的标准偏差; s为标准差。
每批次牛奶样品重复3次取平均值记录实验结果, 实验数据采用Microsoft Excel 2019进行初步整理, 整理后以平均值±标准偏差表示, 采用F检验、T检验进行数据分析。
001~006号的样品总分值分别为90、75、70、90、75、75。若企业标准要求平均分≥75分, 则本批次生乳003号不合格, 002、005、006合格但需预警(滋味接近临界值)。滋味>气味>杂质, 建议优先排查奶牛健康及卫生流程。通过针对性改进, 可显著提升生乳感官品质, 确保后续加工产品(如巴氏奶、酸奶)的风味稳定性[25]
乳成分分析仪即通过FTIR扫描技术对生乳各组分的吸光情况进行分析测得生乳的理化指标。乳成分分析仪测定结果为水分在86.00%~89.09%、蛋白质在2.52%~4.51%、脂肪在2.65%~5.39%、乳糖在3.81%~5.40%、灰分在0.56%~0.80%、非脂乳固体在6.94%~9.81%。FTIR能够捕捉乳样中不同官能团(如O-H、N-H、C-H、S-H等)的振动特性, 这些官能团与乳中的特定成分(如脂肪、蛋白质、乳糖等)相关联。脂肪在近红外区域主要被吸收的是长链脂肪酸。吸收波长为2345、2310、1765、1734、1200 nm。其中, CH的伸缩振动和弯曲振动的合频振动是2345 nm和2310 nm, CH的第1倍频是1765 nm和1735 nm, CH的第2倍频是1200 nm。顺式不饱和脂肪酸, 除上述波长外, 还把2180 nm和2140 nm认为是吸收波长。蛋白质结构的红外光谱分析的基本原理是基于分子中化学键的振动与红外光的相互作用。不同的化学键和分子基团会吸收特定波长的红外光, 从而产生特征吸收峰。这些振动包括伸缩振动、弯曲振动等, 它们对应于分子中化学键的不同运动形式。位于1700~1600 cm-1区域, 主要由C=O伸缩振动贡献的酰胺I带, 包含了蛋白质丰富的二级结构信息, 如α-螺旋、β-折叠、无规则卷曲结构等。位于1550~1500 cm-1区域, 主要由N-H弯曲和C-N伸缩振动混合贡献的酰胺II带可以提供有关蛋白质二级结构的信息。1600~1700 cm-1处, 由于蛋白质中的氨基酸残基的羰基和氨基的振动引起的胺I峰可以用来判断蛋白质的二级结构, 如α-螺旋、β-折叠等。蛋白质中的氨基酸残基的C-N键的振动引起的在1500~1600 cm-1处胺II峰可以判断蛋白质的二级结构, 如β-折叠、β-转角等。位于1500~1800 cm-1处由于氨基酸残基的羧基和氨基振动引起的背景峰及位于1200~1300 cm-1处由于C-H键振动引起的峰均可以判断蛋白质的含量和纯度; 位于900~1200 cm-1处由于糖基、磷酸基、硫酸基等官能团振动引起的峰, 可以用来判断蛋白质的糖基化、磷酸化、硫酸化等修饰。乳糖的红外光谱通常在4000~400、1375和1025 cm-1等可用于其定量和检测。其中1425 cm-1峰位于C-H弯曲振动区域, 可用于乳糖的定性和定量分析。1160 cm-1峰位于C-O-C伸展振动区域, 对于检测液态乳糖和乳糖含量较低的食品[26-28]。具体测定结果见表2
总干物质主要包括: 脂肪、蛋白质、乳糖、灰分。总干物质与水分的含量之和接近100%。非脂乳固体的含量为总干物质与脂肪的差值, 即为干物质中除去脂肪的物质。脂肪是牛奶中的重要营养成分, 但含量过高或过低都会对健康产生影响。一般来说, 新鲜牛奶的脂肪含量约在3%至4%之间。如果脂肪含量低于这个范围, 可能表示牛奶质量不佳或掺假。蛋白质是牛奶中的另一关键成分, 对于人体发育和维持生理功能至关重要。优质牛奶的蛋白质含量通常在2.8%至3.3%之间。如果蛋白质含量不在这个范围内, 可能需要进一步调整生产工艺或原料配比。牛奶中含有多种矿物质和微量元素, 如钙、磷、镁、铁等, 这些成分对于骨骼健康、免疫系统等都有重要作用。糖分与非脂乳固体决定了牛奶的口感和风味。非脂乳固体因为包括蛋白质、碳水化合物、矿物质、维生素等营养物质, 属于牛奶中的“干货”, 所以非脂乳固体可以作为判断牛奶中营养价值的指标, 这个指标越高, 说明该牛奶中蛋白质、乳糖、矿物质和维生素等营养物质含量高, 牛奶质量越好。一般非脂乳固体含量越高, 牛奶也是越好喝。
根据GB 19301—2010《食品安全国家标准 生乳》规定冰点在-0.500~-0.560 ℃; 要求非脂乳固体大于等于8.1 g/100 g。其中编号为002、003、005、006的生乳样本冰点不合格。加水会导致冰点值上升; 若添加有机或无机物等, 由于牛奶总固形物升高, 会导致冰点下降。因此监控冰点波动, 是控制原奶质量的有效手段之一。冰点也叫凝固点, 指的是一个温度, 在这个温度时, 液体会逐渐变成固体。各种液体的冰点是不一样的, 淡水的冰点为0 ℃。正常生鲜牛奶含水量约87%~88%, 通常情况下乳的冰点是稳定的, 但当生鲜牛奶中掺水, 会明显影响牛奶的冰点, 而加入不同水量的牛奶其冰点也会不同。通常认为添加10%的水, 其冰点上升0.054 ℃, 在正常牛奶的冰点检测结果为-0.540 ℃, 则加入10%的水后, 该生鲜牛奶冰点检测结果上至-0.486 ℃; 003可能为加水乳, 其余可能添加有机或者无机物。
牛奶密度对于品质控制、掺假检测、工艺控制和营养分析等方面具有重要的意义, 有助于保障消费者权益、提高产品质量和推动行业发展。在品质控制方面, 牛奶密度的测定是评估牛奶品质的重要指标之一。牛奶中的脂肪、蛋白质等成分会影响其密度, 通过测定牛奶的密度可以判断其是否符合质量标准。在掺假检测方面, 牛奶密度的测定可以用于检测牛奶中是否掺假或稀释。例如, 掺入水或其他低成本的溶液会导致牛奶的密度降低, 通过测定密度可以发现这种掺假行为, 保障消费者权益。在工艺控制方面, 牛奶密度的测定在生产过程中也具有重要意义。通过监测牛奶的密度, 可以调整不同配方的配比, 控制牛奶中各种成分的含量, 以获得理想的产品质量和口感。在营养分析方面, 牛奶密度的测定可以为牛奶的营养分析提供参考。牛奶中的营养成分与密度之间存在对应的关系, 通过测定密度可以初步了解牛奶中的固体成分含量, 为营养价值的评估提供基础数据。
牛奶酸度是乳品加工厂检验牛奶是否合格的必检指标之一, 牛奶酸度=自然酸度+发酵酸度。牛奶在贮存运输过程中受贮存温度和时间的影响, 会引起酸度升高; 牛奶挤出后, 在从牧场到牛奶加工厂的过程中, 如果缺乏适当的贮存设施、没有可以使用的冷库或者贮存卫生条件差, 均会引起酸度升高从而导致牛奶的保质期缩短, 因此, 酸度是反映生牛乳新鲜度的重要指标, 在正常范围内酸度越低, 表明牛奶越新鲜, 反之新鲜度越差。正常新鲜牛奶的酸度在60~65 °T之间。若酸度过高, 则可能表明牛奶已经变质或受到污染[29-31]
依据生乳质量标准要求, 相对密度/(20 ℃/4 ℃) ≥1.027。根据密度计算相对密度。相对密度具体结果见表23。其中003相对密度不合格。掺水牛乳相对密度低于正常值。
采用辅助验证方法中提到的国家标准法进行测定, 其中水分采用105 ℃直接干燥法测定; 蛋白质采用硫酸消解凯氏定氮法测定; 脂肪采用碱水解无水乙醚-石油醚提取法; 乳糖采用酸水解-莱茵-埃农氏热滴定法; 灰分采用灼烧称重法测定; 非脂乳固体采用烘干测定干物质减脂肪含量法; 冰点采用冰点仪测定法, 具体见相应标准描述, 具体测定结果见表3。国家标准法与乳成分分析方法最大的区别为国家标准法测定过程较为烦琐。国家标准法的测定结果中主要成分水分、蛋白质、脂肪、灰分、乳糖合计结果接近100%。
本研究用国家标准法验证FTIR乳成分分析仪结果。先进行F检验(精确性检验), 证明其精确性不存在显著性差异, 最后进行T检验(准确度检验)证明两种方法准确度不存在显著性差异。
分别对原始数据表2表3, 通过F检验对脂肪、乳糖、非脂乳固体等9个参数进行相应的计算具体见表4。其中n1=3, n2=3, α=0.05, 查得F值为9.55; 从数据表4中可以看出, F值最大为9.00, 均小于9.55, 证明9个参数精确性无显著性差异。f=2, P(双尾)=0.002, t=22.327。T检验结果见表5, T值最大为20.82, 均小于22.327, 证明9个参数准确度不存在显著性差异。乳成分分析仪法及国家标准法均能对其结果进行准确测定。基于FTIR构建的生乳乳成分测定法快速、准确、高通量。
对总干物质进行数据检验, 乳成分分析仪直接测定结果与通过乳成分分析仪计算脂肪、蛋白、乳糖、灰分之和计算结果没有显著性差异。国家标准法其他数据(脂肪+蛋白+乳糖+灰分)和值与国家标准法减法(100-水分)结果没有显著性差异。证明数据结果有效且符合逻辑。具体见表6
目前国家生乳标准, 是考虑到我国国情以及我国奶业发展过程中面临的一些实际情况下制定的, 90年代, 我国奶牛小规模散养占比较高, 养殖水平较低。虽然国家已在大力扶持规模化养殖, 但这一转变并非一蹴而就。国家标准把蛋白质指标定义为大于等于2.8 g/100 g, 有其实际意义。本研究通过对比乳成分分析仪及国家标准法测定结果, 全面分析不同参数两种方法的结果差异。发现9个指标分为水分、蛋白质、脂肪、乳糖、非脂乳固体等两种方法不存在显著性差异, 结果同源。乳成分分析法与国家标准法互补性应用方案, 建议高精度场景、监管与准入时以国家标准法为基准, 日常监测以基于乳成分分析仪的快速检测结果为主。
干物质显著性比对分析, 发现采用乳成分分析仪测定的结果, 干物质通过减法计算的结果与通过加法计算的结果不存在显著性差异, 两种数据同源。侧面证明整个乳成分分析仪的测定结果之间的数据存在内在联系, 符合逻辑。国家标准法获得的结果结论与乳成分分析仪结论类似。旨在为建立两种计算方法结果的差异性, 为牛奶理化检测数据提供更丰富的内在数据联系的基础理论库。同时也为监管部门、奶农提供一些有效指导。
生乳作为一种液体样品, 由于其时效性, 不容易开发出质控样品, 本研究建立一种数据互相核查理论。通过干物质的加法计算及减法计算结果的显著性进行检验, 确认其他项目参数是否存在问题, 间接进行质量控制[32-33]。揭示乳成分分析法在不同参数之间的联系与区别, 为仪器优化和标准更新提供精细化数据支持。推动乳成分分析法检测标准化, 促进快速检测技术纳入行业规范。填补了乳成分检测技术系统性评价的空白。
