Objective To conducte compression tests and finite element mechanical simulations on Eriobotrya japonica (Thunb.) Lindl., and investigate its compression characteristics. Methods The compression deformation process of Eriobotrya japonica (Thunb.) Lindl. was repeatedly tested by universal electronic material testing machine, and the relationship curve between compression force and deformation was obtained. The feature points and feature chains of fruits pictures were extracted by image processing, and the 3D digital model of fruits was constructed. The stress and strain distribution of its fruits under compression was analyzed based on ANSYS Workbench 2024 R1 finite element simulation software. Results The yield load of Eriobotrya japonica (Thunb.) Lindl. fruit was 38.25 N. The average relative error between the finite element simulation model and compression test was 5.93%, which proved that the compression test of its fruit was reasonable and effective. The stress-strain cloud map of fruit compression test was obtained. It was found that the maximum stress position of Eriobotrya japonica (Thunb.) Lindl. was at the edge of the contact between the fruit and the upper pressure plate, the maximum stress value was 0.14057 MPa and the maximum strain value was 0.52233 mm. Conclusion In the process of picking and circulation of Eriobotrya japonica (Thunb.) Lindl., it shall be noted that the extrusion pressure generated by mechanical picking and fruit stacking shall not exceed 38.25 N to avoid mechanical compression damage. At the same time, it is necessary to do a good job of packaging buffering to protect the maximum stress part of its fruits.

目的 对枇杷进行压缩试验和有限元力学仿真, 探究其压缩特性。方法 利用万能电子材料试验机对枇杷受压变形过程进行多次重复试验, 得到压缩力与变形量之间的关系曲线; 通过图像处理提取枇杷图片特征点及特征链, 构建枇杷三维数字模型; 基于ANSYS Workbench 2024 R1有限元仿真软件分析了枇杷果实受压的应力应变分布规律。结果 枇杷果实的屈服载荷为38.25 N; 有限元仿真模型与压缩试验所得的力-变形曲线基本吻合, 两者数据平均相对误差为5.93%, 证明利用有限元仿真模拟枇杷果实的压缩试验是合理有效的。得到枇杷果实挤压试验应力应变云图, 发现果实与上压盘接触的边缘处是枇杷的最大受力部位, 应力和应变的最大值为0.14057 MPa和0.52233 mm。结论 在枇杷采摘及流通过程中, 应注意机械采摘和果实堆放所产生的挤压力不应超过38.25 N以避免机械压缩损伤, 同时需要做好包装缓冲工作从而保护好枇杷挤压接触的最大受力部位。

目的 对枇杷进行压缩试验和有限元力学仿真, 探究其压缩特性。方法 利用万能电子材料试验机对枇杷受压变形过程进行多次重复试验, 得到压缩力与变形量之间的关系曲线; 通过图像处理提取枇杷图片特征点及特征链, 构建枇杷三维数字模型; 基于ANSYS Workbench 2024 R1有限元仿真软件分析了枇杷果实受压的应力应变分布规律。结果 枇杷果实的屈服载荷为38.25 N; 有限元仿真模型与压缩试验所得的力-变形曲线基本吻合, 两者数据平均相对误差为5.93%, 证明利用有限元仿真模拟枇杷果实的压缩试验是合理有效的。得到枇杷果实挤压试验应力应变云图, 发现果实与上压盘接触的边缘处是枇杷的最大受力部位, 应力和应变的最大值为0.14057 MPa和0.52233 mm。结论 在枇杷采摘及流通过程中, 应注意机械采摘和果实堆放所产生的挤压力不应超过38.25 N以避免机械压缩损伤, 同时需要做好包装缓冲工作从而保护好枇杷挤压接触的最大受力部位。

Objective To conducte compression tests and finite element mechanical simulations on Eriobotrya japonica (Thunb.) Lindl., and investigate its compression characteristics. Methods The compression deformation process of Eriobotrya japonica (Thunb.) Lindl. was repeatedly tested by universal electronic material testing machine, and the relationship curve between compression force and deformation was obtained. The feature points and feature chains of fruits pictures were extracted by image processing, and the 3D digital model of fruits was constructed. The stress and strain distribution of its fruits under compression was analyzed based on ANSYS Workbench 2024 R1 finite element simulation software. Results The yield load of Eriobotrya japonica (Thunb.) Lindl. fruit was 38.25 N. The average relative error between the finite element simulation model and compression test was 5.93%, which proved that the compression test of its fruit was reasonable and effective. The stress-strain cloud map of fruit compression test was obtained. It was found that the maximum stress position of Eriobotrya japonica (Thunb.) Lindl. was at the edge of the contact between the fruit and the upper pressure plate, the maximum stress value was 0.14057 MPa and the maximum strain value was 0.52233 mm. Conclusion In the process of picking and circulation of Eriobotrya japonica (Thunb.) Lindl., it shall be noted that the extrusion pressure generated by mechanical picking and fruit stacking shall not exceed 38.25 N to avoid mechanical compression damage. At the same time, it is necessary to do a good job of packaging buffering to protect the maximum stress part of its fruits.

枇杷, 属系蔷薇科、枇杷属常绿小乔木, 原产中国南部, 在南方多省均有种植, 其果实富含糖类、维生素和微量元素等多种营养成分, 是一种营养价值高[1]、经济价值高[2]的水果。同时, 枇杷也具有很高的药用价值。在中医领域, 枇杷果和枇杷叶均具有清热润肺等功效[3]。近年来, 贵州各地枇杷种植生产发展速度迅猛, 截止2022年, 全省枇杷种植面积已达2.3万hm2, 年产量可达16.3万t, 产值达17.1亿元[4]。通过对农产品溯源可发现, 枇杷在进入市场的过程中需经过采摘、包装、运输、储藏及销售等一系列环节[5]。而由于枇杷果皮相对较薄、果实含水量较高, 所以枇杷在上述的各个环节都有可能因受到压缩力而导致损伤。压缩会导致水果细胞壁膜破裂, 细菌和真菌更容易渗透到受损组织中, 导致水果褐变从而加速腐烂[6]。压缩损伤是水果在进入市场各环节中主要损伤形式之一[7], 因而压缩特性是枇杷的主要力学特性之一。因此, 研究压缩载荷与果实形变之间的关系以及果实的压缩特性, 对于果实在采摘、包装、运输、储藏及销售的全过程中避免机械压缩损伤具有重要意义。
目前, 国内已有学者对各种果实的压缩及其他力学特性进行了研究。谢志平等[8]和郎彦城等[9]对刺梨和金刺梨进行了果柄分离特性研究及有限元分析; 同时基于三维点云重建了刺梨几何模型[10], 探究了压缩载荷作用下刺梨力学性能的有限元模拟[11]; 此外还基于有限元法研究了猕猴桃局部压缩损伤机制[12]。陈子林等[13]分析了荸荠的品种、压缩速率及压缩部位3因素及对荸荠破坏极限的影响。吴映桐等[14]建立了皇冠梨生理特性与力学损伤关系模型并进行了静压模拟研究。吕洋等[15]得出了机械损伤下的蓝莓力学方程。卿艳梅等[16]研究得出了龙眼的力-变形曲线, 其纵横向的刚度相近。蒲应俊等[17]研究了脐橙的压缩特性以及评估其压缩损伤的方法。胡广锐等[18]研究了苹果两向压缩特性以及果实损伤与冲击材料、速度和跌落方向3因素之间的关系。LI等[19]分析了干燥对苹果力学特性及细胞结构的影响。此外, 陈志轩等[20]探究了菠萝果实与果柄分离的力学特性研究。
对果实力学特性的探索和研究在国际上也是焦点之一。MAXIMILIAN等[21]分析了5种柑橘类水果果皮的压缩力学性能及其防护。MARIUSZ等[22]探究了短期氧化胁迫对苹果果实力学特性及细胞壁结构的影响。GORZELANY等[23]研究了臭氧氧化保鲜处理对蓝莓果实的力学特性及果实pH的影响。BEATA等[24]探究了叶面喷施钙肥对草莓力学性能的提升作用。SAFITRI等[25]比较了不同成熟度和不同果实大小的番茄力学性能的差异。ESMAEILI等[26]研究了阿魏树脂处理对红肉苹果果梗力学性能、落果率及病虫害的改变情况。此外, 还有学者研究了杂交后水果品种的果实力学特性[27]
虽然目前在果实品质及力学特性方面研究众多, 但针对南方枇杷产业贮运保鲜的相关研究仍然匮乏。陈伟等[28]研究了3个品种枇杷在5 ℃下随着贮藏时间的延长, 其营养物质、重量和形态等品质相关指标的变化情况。然而, 作为影响枇杷品质及产业经济效益的主要因素, 压缩损伤问题亟待研究解决却鲜有相关研究。因此, 本研究从探究枇杷抵抗压缩损伤的能力入手, 开展枇杷果实受压的相关力学特性试验与分析。通过压缩试验测得枇杷压缩力-变形曲线, 计算果实弹性模量及泊松比, 并利用图像识别技术与三维建模软件, 建立枇杷形态三维数字模型, 通过有限元仿真, 对比仿真与试验所得力-变形曲线, 在此基础上分析枇杷在压缩状态下果实的应力应变分布, 为枇杷采摘及流通过程中抵抗压缩损伤提供相关理论依据。
本实验样品选取的是贵州大五星枇杷[Eriobotrya japonica (Thunb.) Lindl.]。该枇杷是于2024年5月19日从中国贵州省安顺市断桥镇当地果园进行采摘, 当天天气晴朗, 气温为24 ℃, 在采摘过程中使用手工小心采摘并保证表面无损伤, 采得形状规则的30个达到商业成熟期的枇杷果实, 即枇杷颜色为橙黄色或金黄色且硬度稍软, 轻轻挤压稍带弹性。采摘完成后在商业条件下进行存储(温度23 ℃, 湿度85%), 送回实验室后在室温下进行枇杷材料特性实验, 并保证实验过程中环境温湿度稳定。

弹性模量是一种重要的物理量, 是材料在弹性变形阶段其应力和应变的比例系数, 它可以用来表征生物材料对弹性形变的抵抗能力。为了得到枇杷的弹性模量, 可以利用赫兹接触应力理论, 在压缩实验中计算出果实的弹性模量, 具体公式(1)如下[29]:

式中: E为枇杷果实的弹性模量, MPa; F为压缩载荷, N; μ为泊松比; D为变形量, mm; R为接触点的果实表面的曲率半径, mm。
通过压缩试验, 枇杷果实的泊松比可由公式(2)~(4)计算[30]:

式中: μ为泊松比; εa为轴向应变; εr为径向应变; l0为轴向的初始长度, mm; Δl为试验后长度的变化量, mm; D0径向的初始直径, mm; ΔD为试验后直径的变化量, mm。
为了研究枇杷果实在压缩下的材料物理特性, 选择在自然状态下手工采摘的枇杷果实进行压缩试验, 枇杷整果在试验机上的状态如图1所示。枇杷整果材料特性试验重复进行10次, 设置实验参数分别是: 最大负载为100 kN, 测量精度为0.001 N、示值精度为±0.5%和测试速度为0.5 mm/min。试验过程中果实固定在万能试验机的下压盘上, 通过微调按钮调节上压盘于果肉之间的间距, 当上压盘轻微接触果肉上表面时, 对试验数据进行清零。此时万能试验机沿压缩力方向的原始标距即为果实的高度。设置加载速率选为5 mm/min, 随即进行试验, 每次试验前对万能试验机进行校准, 并记录相应的应力应变曲线和试验数据。
枇杷的形状可以通过在X-Y-Z坐标系中两条垂直方向的特征链来近似描述。特征链由在枇杷轮廓上提取的特征点通过样条曲线进行绘制, 其中形状变化较大的拐点通过对轮廓进行角点检测确定。显然, 更多的特征链会呈现更加真实的枇杷, 但同时也会增加工作量和工作难度。为了能够在模型精度和效率之间取得平衡, 因此在特征链1中选择了4条最能体现枇杷真实轮廓的样条曲线, 而特征链2中样条曲线的数量取决于具体角点检测的数量和筛选标准。
通过图像处理来获取特征点, 以用来构建特征链, 而角点检测是用于帮助选择构建特征链2中的特征点。模型特征点提取的具体步骤如下所示:
首先, 对相机进行标定, 首先将相机的高度和焦距分别调整到H=500 mm和f =35 mm, 将标准A4纸完全置于拍摄的视野范围内, 在相同的相机高度和焦距等参数条件下拍摄20张A4纸。已知A4纸的面积为S (mm2), 假设采集到的图像中A4纸的像素点数量为N个, 则单位面积内的像素点个数Q可由式(5)计算得到。假设每个像素点近似为正方形, 则1 mm长度的像素点个数为$\sqrt{Q}$

已知标准A4纸的面积S为62370 mm2。通过Matlab程序把20张A4纸图片转化成二值图, 然后可以测得A4纸的白色区域所占像素值的数量N。最后, 通过上述公式就可以测得单位面积和单位长度所占的像素点数。尺寸换算系数$\sqrt{Q}$为0.126。
其次, 将实验样品放置在调好参数的相机拍摄视野内, 确保样品的横轴在相机的视野中是水平的, 以90°旋转间隔拍摄两张样品的轮廓图如图2a所示。对2张样品图片进行轮廓识别并进行平滑处理, 然后在轮廓上进行特征点提取如图2b所示。以轮廓中心点为坐标原点, 对特征点的坐标进行转换, 获取坐标点在X-Y坐标系内的位置。对两个轮廓进行角点检测, 再对检测出的角点进行筛选如图2c所示, 将筛选出的角点作为构成特征链2的特征点, 而特征链2样条曲线的数量取决于具体的模型和筛选标准。
最后, 利用边界矩阵选取轮廓的两个顶点和中心点, 以轮廓中心点作为坐标系的原点, 与坐标系Z轴相交的两个点作为轮廓的两个顶点。通过上述的尺寸换算系数可以得到特征点的物理尺寸和位置坐标。通过获取到的特征点可以绘制出由两条特征链组成的形状骨架如图2d所示。通过NX 11.0软件对形状骨架进行物化可以得到枇杷的实体模型如图2e所示, 物化后得到的实体模型的详细尺寸在图2e
利用ANSYS Workbench 2024 R1软件, 将建立好的多尺度枇杷果实模型导入其中如图3所示, 并设置模型材料属性。通过果实压缩试验, 利用公式(1), 计算出枇杷果实和果核的弹性模量为0.28 MPa、5.26 MPa, 果皮的弹性模量为0.156 MPa, 经过试验测定, 枇杷果实的泊松比取为0.35。在进行有限元仿真时, 首先要对枇杷的三维几何模型进行网格划分, 而网格类型通常选择四面体和六面体元素, 因为它们能更有效地满足有限元模拟的要求。然而, 网格太多会导致计算效率低下, 而网格太少又会影响求解精度。为了在求解模型时平衡模型精度和模拟效率之间的关系, 本次仿真采用四面体类型的单元, 选择1.0 mm的网格尺寸, 既让计算时间在可接受的范围内, 又能够满足模拟精度的要求, 实际网格模型如图4所示。根据实际枇杷压缩试验的受力情况, 设置模型的施加约束与载荷。将枇杷果实与下压盘接触的一端设置为固定约束, 根据试验条件将果实与上压盘的接触端面设置为位移载荷, 模型具体约束和载荷施加情况如图5所示。
本研究共进行10组枇杷压缩实验, 实验数据通过PT-307龙门式万能材料试验机(±0.5%)采集。将原始数据导入OriginPro 2023软件后, 对10组实验数据进行误差分析, 进而验证数据的可重复性较好, 因此选用一组实验来与仿真进行对比。
通过果实压缩试验, 获得了枇杷果实在压缩过程中的力-变形曲线, 由图6可以看出10组实验的数据误差较小、重复性较好, 故选用其中一组实验来进行仿真对比, 如图7中蓝色曲线所示。在果实压缩初期阶段, 也就是变形量在0~5.84 mm阶段, 力-变形曲线呈现出一定的线性变化特征, 说明枇杷在承受微小压缩力时, 具有弹性应变特性。随着荷载的增加, 压缩载荷逐渐上升, 当载荷增加到38.25 N时, 应力达到果实的最大抗压强度, 一旦外力超过该值, 果皮和果肉的原有组织结构就会被破坏, 整个果实会被压破。之后随着载荷的再增加, 应力值不是增加而是逐渐减小, 此现象说明在压缩后期, 果实已经发生压缩屈服。以上结果表明, 在枇杷的采摘过程中, 特别是机械化采摘时, 要注意机械臂对枇杷果实的夹持力度不能超过38.25 N, 同时, 在贮运和加工过程中应减少枇杷过多的堆积, 以免超过枇杷所能承受的最大载荷, 从而防止对枇杷造成损伤影响其商业价值。
本研究用有限元法模拟了枇杷在压缩过程中的受力变形, 并与实验所得的结果作了比较。结果显示, 实测值与模拟值的曲线比较吻合, 如图7所示, 其平均相对误差为5.93%。这表明应用有限元法分析枇杷在压缩载荷下的力学性能具有可行性。
通过比较图7中的数据发现, 当变形量在4.101~6.135 mm阶段时的相对误差最大, 这有可能是由于在定义材料属性时, 把果肉、果皮等材料用线性弹性材料近似处理或将其内部考虑成均一性材料, 或者由于实验数据的误差, 或者由于有限元模型的误差而引起的。
根据有限元仿真分析的结果, 可获得等效应力和等效应变云图。从果实的应力应变云图上, 可以清晰显示出枇杷在受压时的应力与应变分布。并且由此分析出枇杷果实在承受压缩载荷时的危险界面和最大受力部位, 对于枇杷果实在自动化采收、运输和加工过程中避免压缩损伤具有重大意义。依据等效应力分布图可知, 枇杷果实的最大受力部位在果实与上压盘接触的边缘处, 这与试验结果相吻合, 其最大等效应力值达到0.14057 MPa, 见图8a; 由等效应变分布图可知, 危险破坏截面处应变达到最大值为0.52233 mm, 见图8b
本研究针对枇杷在采摘、包装、运输、储藏及销售过程中受到外部载荷挤压所造成的损伤问题, 对枇杷受压形变过程进行了力学特性试验和有限元仿真分析, 分析了枇杷果实变形量与外部压力之间的关系, 并研究了果实受压内部应力应变分布情况, 结论如下:
通过枇杷整果压缩试验获得了力与变形的曲线, 可知在果实压缩初期阶段, 曲线呈现出一定的线性变化特征, 说明枇杷在承受微小压缩力时, 具有弹性应变特性; 当载荷增加到38.25 N时, 应力达到枇杷的屈服强度, 果实被压破受到不可逆的机械损伤, 说明枇杷所能承受的最大载荷为38.25 N, 应避免机械采摘时机械臂夹持力度过大或果实过多堆积, 为枇杷果实在采摘、贮运和加工过程中为避免机械损伤的的处理方法提供了理论依据。
通过对枇杷图像处理获取特征点、构建特征链从而建立了枇杷果实的三维几何模型, 为有限元仿真提供了三维数字模型。
利用有限元仿真模拟了枇杷果实的压缩试验, 结果表明压缩试验与有限元仿真所得的力-变形曲线平均相对误差为5.93%, 证明了利用有限元仿真模拟枇杷果实压缩试验的有效性。
根据有限元仿真所得的等效应力和等效应变云图可知, 枇杷果实的最大受力部位在果实与上压盘接触的边缘处, 其应力和应变的最大值分别为0.14057 MPa和0.52233 mm, 说明枇杷受挤压时的危险截面是其与上压盘接触的边缘处, 即发生挤压的接触面。在贮运和流通过程中, 为避免压缩损伤应注意采用发泡网套或瓦楞纸板等分别对单个枇杷做好防护工作。
