Structured liquid is a new type of soft materials based on the self-assembly and jamming transition of colloidal particles at liquid/liquid interfaces. Here, the research progress in the construction of new structured liquids using nanoparticle surfactants (NPSs) assembly at liquid/liquid interfaces is summarized. The promising applications of structured liquids in the fields of packaging, separation, catalysis, energy storage and biomedicine are introduced.
