The favorable climatic resources in Yunnan Province have nurtured the rich and diverse plant resources, providing various sources of forage for the development of local herbivorous animal husbandry. Yet, the vast majority of the plant resources has not been well excavated and utilized, which not only severely restricts the development of herbivorous animal husbandry, but also leads to high consumption of feed grains. Consequently, exploring protein-rich plants with high feeding value is of great significance for the green and healthy development of herbivorous animal husbandry in Yunnan Province. This study measured 16 nutritional indicators, including crude protein, crude fiber, neutral detergent fiber, calcium and phosphorus of 25 common protein forages collected from the subtropical areas of Yunnan Province. The nutritional values of the plants were comprehensively evaluated using grey correlation analysis. The crude protein content of the tested plants varied from 11.03% to 21.73%, among which the crude protein content of 6 plants, including Trifolium repens L. cv. Haifa, Lablab purpureus, Medicago sativa, Sophora davidii, Amorpha fruticosa and Robinia pseudoacacia was above 20%, suggesting good protein for rotein feed. The crude protein content of the remaining 19 plants, such as Broussonetia papyrifera and Leucaena leucocephala, ranged from 11.03% to 18.69%, meeting the basic requirements for the protein feed. According to the comprehensive evaluation, there were 15 plants with excellent nutritional value, among which the top 4 were L. purpureus, T. repens L. cv. Haifa, B. papyrifera and Stylosanthes guianensis, which have significant development and utilization value. Among the 10 plants evaluated as moderate, the crude protein content of S. davidii and R. pseudoacacia exceeded 20%, while the trace element content of Fe, Cu, Zn, and Se in Cajanus scarabaeoides, C. cajan, R. pseudoacacia, S. davidii, Haymondia wallichii and Lespedeza cuneata demonstrated significantly higher levels than that of corn. In the future development and application, the nutritional characteristics of protein-rich forages should be fully utilized, and it should be used in combination with the other feeds to meet the balanced nutritional needs of livestock, achieve cost saving and efficiency improvement by reducing soybean meal reduction and promoting healthy breeding of herbivorous livestock.

云南良好的气候资源孕育了丰富多样的植物资源,为当地草食畜牧业发展提供了多种多样的饲草来源,但绝大多数植物资源未得到很好的挖掘利用,这不仅严重制约了草食畜牧业的发展,还造成饲料粮的高消耗。因此,挖掘饲用价值高的蛋白饲用植物,对云南省草食畜牧业的绿色健康发展具有重要意义。本研究对云南亚热带地区采集的25种常见蛋白饲用植物的粗蛋白、粗纤维、中性洗涤纤维、钙、磷等16个营养指标进行测定,并采用灰色关联度分析法对其营养价值进行综合评价。结果表明:(1)供试植物粗蛋白含量为11.03%~21.73%,其中,海法白三叶、扁豆、紫花苜蓿、白刺花、紫穗槐、刺槐6种植物粗蛋白含量在20%以上,具较好的蛋白饲料潜力;其余19种植物如杂交构树、银合欢等粗蛋白含量为11.03%~18.69%,具备蛋白饲料的基本条件。(2)通过综合评价,营养价值为优良的植物有15种,前4名为扁豆、海法白三叶、杂交构树和圭亚那柱花草,这些植物具较大开发利用价值;评价为中等的10种植物中,白刺花、刺槐的粗蛋白含量大于20%,蔓草虫豆、木豆、刺槐、白刺花、须弥葛、截叶铁扫帚的Fe、Cu、Zn、Se等微量元素含量明显优于玉米。在今后的开发应用中,应充分发挥蛋白饲草自身的营养特性,与其他饲料配合使用,以满足家畜的均衡营养需求,实现豆粕减量替代和草食畜健康养殖的节本增效。

云南良好的气候资源孕育了丰富多样的植物资源,为当地草食畜牧业发展提供了多种多样的饲草来源,但绝大多数植物资源未得到很好的挖掘利用,这不仅严重制约了草食畜牧业的发展,还造成饲料粮的高消耗。因此,挖掘饲用价值高的蛋白饲用植物,对云南省草食畜牧业的绿色健康发展具有重要意义。本研究对云南亚热带地区采集的25种常见蛋白饲用植物的粗蛋白、粗纤维、中性洗涤纤维、钙、磷等16个营养指标进行测定,并采用灰色关联度分析法对其营养价值进行综合评价。结果表明:(1)供试植物粗蛋白含量为11.03%~21.73%,其中,海法白三叶、扁豆、紫花苜蓿、白刺花、紫穗槐、刺槐6种植物粗蛋白含量在20%以上,具较好的蛋白饲料潜力;其余19种植物如杂交构树、银合欢等粗蛋白含量为11.03%~18.69%,具备蛋白饲料的基本条件。(2)通过综合评价,营养价值为优良的植物有15种,前4名为扁豆、海法白三叶、杂交构树和圭亚那柱花草,这些植物具较大开发利用价值;评价为中等的10种植物中,白刺花、刺槐的粗蛋白含量大于20%,蔓草虫豆、木豆、刺槐、白刺花、须弥葛、截叶铁扫帚的Fe、Cu、Zn、Se等微量元素含量明显优于玉米。在今后的开发应用中,应充分发挥蛋白饲草自身的营养特性,与其他饲料配合使用,以满足家畜的均衡营养需求,实现豆粕减量替代和草食畜健康养殖的节本增效。

The favorable climatic resources in Yunnan Province have nurtured the rich and diverse plant resources, providing various sources of forage for the development of local herbivorous animal husbandry. Yet, the vast majority of the plant resources has not been well excavated and utilized, which not only severely restricts the development of herbivorous animal husbandry, but also leads to high consumption of feed grains. Consequently, exploring protein-rich plants with high feeding value is of great significance for the green and healthy development of herbivorous animal husbandry in Yunnan Province. This study measured 16 nutritional indicators, including crude protein, crude fiber, neutral detergent fiber, calcium and phosphorus of 25 common protein forages collected from the subtropical areas of Yunnan Province. The nutritional values of the plants were comprehensively evaluated using grey correlation analysis. The crude protein content of the tested plants varied from 11.03% to 21.73%, among which the crude protein content of 6 plants, including Trifolium repens L. cv. Haifa, Lablab purpureus, Medicago sativa, Sophora davidii, Amorpha fruticosa and Robinia pseudoacacia was above 20%, suggesting good protein for rotein feed. The crude protein content of the remaining 19 plants, such as Broussonetia papyrifera and Leucaena leucocephala, ranged from 11.03% to 18.69%, meeting the basic requirements for the protein feed. According to the comprehensive evaluation, there were 15 plants with excellent nutritional value, among which the top 4 were L. purpureus, T. repens L. cv. Haifa, B. papyrifera and Stylosanthes guianensis, which have significant development and utilization value. Among the 10 plants evaluated as moderate, the crude protein content of S. davidii and R. pseudoacacia exceeded 20%, while the trace element content of Fe, Cu, Zn, and Se in Cajanus scarabaeoides, C. cajan, R. pseudoacacia, S. davidii, Haymondia wallichii and Lespedeza cuneata demonstrated significantly higher levels than that of corn. In the future development and application, the nutritional characteristics of protein-rich forages should be fully utilized, and it should be used in combination with the other feeds to meet the balanced nutritional needs of livestock, achieve cost saving and efficiency improvement by reducing soybean meal reduction and promoting healthy breeding of herbivorous livestock.

牧草产业作为国家现代农业的重要组成部分,在保障草食畜产品有效供给,维护国家粮食安全上发挥了重要作用。近年来,我国对动物性食物的消费大量增加,人均谷物消费相对减少,食物结构发生了革命性改变[1],极大地推动了我国草食畜牧业快速发展。然而,我国饲草料资源严重短缺,蛋白质饲草料自给率不足50%,能量饲料供应极其脆弱,饲草料资源短缺不仅威胁着饲料安全,还严重威胁着粮食安全[2-3]。为保障粮食和重要农产品稳定安全供给,2023年农业农村部发布的《饲用豆粕减量替代三年行动方案》要求减少豆粕用量,促进饲料粮节约降耗,并对蛋白饲料资源开发利用及优质饲草供给提出了新目标。
云南省是草食畜牧业大省,是我国南方亚热带地区重要的肉牛生产基地和高端牛肉供应基地,有饲用植物3200多种[4],2024年全省畜牧业产值1869.18亿元。但省内饲草产业起步较晚,蛋白饲草料自给能力不足已成为制约当地草食畜牧业发展的瓶颈之一。蛋白饲用植物作为优质蛋白饲料来源,在调节饲草平衡供应、促进肉牛产业发展中发挥着重要作用[5],其开发利用可有效缓解当地饲草料供给不足及饲料粮消耗过高的问题,这在一定程度上成为草食畜牧业发展的关键。因此,引种、驯化、栽培和利用营养价值优越的蛋白饲用植物对云南省草食畜牧业的高速发展至关重要。
众多学者对各类蛋白饲草植物、常见饲用灌木等植物中的营养成分进行了分析[6-8],指标较为全面,具有一定参考性。但依旧存在研究区非亚热带地区、指标差异较大、测定的饲草所处生长期不同等问题,其他区域的饲用植物评价结果无法直接作为云南省亚热带地区蛋白饲用植物引种、驯化、栽培、利用的依据。因此,本研究在云南省亚热带地区采集了3科20属25种常见蛋白饲用植物,对其进行营养成分测定,并采用灰色关联度分析法对其饲用品质进行综合评价,以筛选出适合引种栽培的优良蛋白饲用植物品种,以期为亚热带地区优良蛋白饲用植物引种、驯化、栽培、质量评价和开发利用等提供更为精确的数据支撑和理论基础。
云南省气候基本属于亚热带高原季风型,立体气候特点显著,一个省区内同时具有寒、温、热(包括亚热带)三带气候。年温差小,一般只有10~12 ℃,全省最热(7月)月平均气温在20~23 ℃之间,最冷(1月)月平均气温在7~11 ℃之间;日温差大,可达12~20 ℃。干湿季节分明,湿季(雨季)为5—10月,集中了85%的降水量;干季(旱季)为当年11月至次年4月,降水量只占全年的15%。气温随地势高低垂直变化异常明显,一般海拔高度每上升100 m,气温平均递降0.6~0.7 ℃。全省降水地域分布差异大,最多的地方年降水量超过2300 mm,最少的仅有547 mm,大部分地区年降水量在900 mm以上。全省无霜期长,南部边境全年无霜,偏南地区无霜期超过300 d,中部地区无霜期约为250 d,比较寒冷的滇西北和滇东北高海拔地区少于200 d。
于2021年3—9月在云南亚热带地区采集蛋白饲用植物25种,每种采集鲜物质1000 g,带回实验室烘干后测定营养指标。采集地概况见表1,物种名称及采集部位见表2
干物质(dry matter,DM)含量采用烘干法测定;粗蛋白质(crude protein,CP)含量由公式CP=6.25×N(%)计算,式中,N含量采用凯氏定氮法测定;粗脂肪(crude fat ether extract,EE)含量采用ANKOMXT10i型自动脂肪分析仪滤袋提取法测定;中性洗涤纤维(neutral detergent fibre,NDF)和酸性洗涤纤维(acid detergent fiber,ADF)含量采用范氏(van soest)洗涤纤维分析法;粗灰分(crude ash,Ash)含量采用600 ℃高温灼烧法测定;钙(Ca)、钠(Na)、钾(K)、铁(Fe)、铜(Cu)、锌(Zn)、镁(Mg)、硒(Se)含量采用原子吸收光谱法测定;磷(P)含量采用钼锑抗比色法测定。具体分析方法见《饲料分析及饲料质量检测技术》[9]
相对饲喂价值(RFV)计算公式为:RFV=(DMI×DDM)/1.29。式中,DMI为粗饲料干物质的随意采食量,DDM为可消化的干物质百分比。DMI和DDM预测模型为:DMI=120/NDF;DDM=88.9-0.779ADF。
采用灰色关联度分析法[10],将所有参试品种作为一个灰色系统,每个品种则为系统中的一个因素。建立X0为参考品种的理想数列,参试品种的各项性状指标构成比较数列,记为Xii=1,2,3…25),各项性状指标用k表示(k=1,2,3…16)。“参考品种”中各正向指标均高于参试品种各项生产性能指标最高的5%;逆向指标(NDF、ADF)均低于参试品种各项生产性能指标最低的5%。
各项指标量纲不同,需要对每项指标进行无量纲化处理,将其转化为评价数据,介于0~1之间。正向指标为xi=Xik)/X0k),逆向指标(NDF、ADF)为xi=X0k)/Xik),参考品种为x0=X0k)/X0k)(即均为1)。
根据公式Δik)=|x0k)-xik)|算出参考品种数列与比较数列的绝对差值。根据关联系数计算公式:
其中,min|Δi(k)|是一级最小差,即在|Δi(k)|中按k值选择的最小值,min min|Δi(k)|即ik点上的二级最小差;max|Δi(k)|是一级最大差,即在|Δi(k)|中按k值选择的最大值,max max|Δi(k)|即ik点上的二级最大差;ρ为分辨系数,取值范围0~1,这里取ρ=0.5。
用各性状指标关联度系数的平均值作为参试品种与参考品种关联程度的量度。即
根据γi的大小来判断参试品种的优劣,γi越大,则说明与“参考品种”相似度越高,γi越小,则说明相似度越低。
参考侯留飞等[10]对关联度的等级划分,本研究根据关联度将25个参试品种的营养价值划分为4个等级:γi≥0.80,营养价值为优;0.60≤γi<0.80,营养价值为良;0.40≤γi<0.60,营养价值为中;γi<0.40营养价值为差。
25种蛋白饲用植物营养成分及RFV中,DM含量为64.34%~97.63%,除落花生(86.88%)和大翼豆(64.34%)外,其余23种蛋白饲用植物的DM含量均在91%以上,最高的是多花木蓝(表3)。CP含量为11.03%(柱花草)~21.73%(海法白三叶),含量为20%以上的物种有6种,分别是海法白三叶、扁豆、紫花苜蓿、紫穗槐、白刺花和刺槐。Ash含量为4.36%(白刺花)~13.71%(落花生),含量在10%以上的物种有6种。EE含量最高的是大翼豆(7.48%),最低的是圭亚那柱花草(0.74%)。NDF含量最高的是绿叶山蚂蝗(70.11%),最低的是扁豆(45.98%)。ADF含量最高的是柱花草(58.4%),最低的是扁豆(36.86%)。RFV中,仅扁豆、海法白三叶、地八角、银合欢和桑树的值在100%以上,最高的是扁豆(121.76%),最低的是绿叶山蚂蝗(59.63%)。
25种蛋白饲用植物矿物质含量中,Na含量在0.1%及以上的有3种,最高为柱花草(0.26%),最低为地八角、刺槐、须弥葛、绿叶山蚂蝗、白三叶、爪哇大豆,其含量均为0.02%(表4)。Mg含量最高为杂交构树(0.5%),含量在0.1%及以下的物种仅白三叶(0.01%)。P含量在0.1%及以上的有5种,最高为扁豆(0.18%),其次是海法白三叶、波叶山蚂蝗、截叶铁扫帚和柱花草。K含量在1.00%以下的仅白三叶(0.11%),其余24种植物中,含量最高的为扁豆(4.6%)。Ca含量在1%以上的有10种,最高为扁豆(2.36%),最低为蔓草虫豆(0.11%)。Fe含量最高的为圭亚那柱花草和波叶山蚂蝗,其含量均为0.06%,其次是紫穗槐、多花木蓝、红三叶、海法白三叶和落花生,含量均为0.05%。Cu含量在10 mg/kg以上的有4种,含量最高的为多花木蓝(12.06 mg/kg),含量在1 mg/kg以下的仅白三叶,含量为0.32 mg/kg;Zn含量最高为蔓草虫豆(39.87 mg/kg),最低为白三叶6.46 mg/kg;Se含量在1 mg/kg以上的仅圭亚那柱花草(1.39 mg/kg),含量最低的为蔓草虫豆0.02 mg/kg。
根据参试品种的测定数据构建参考数列:{X0k)}=(102.51,22.82,14.40,7.85,43.68,35.02,0.27,0.53,0.19,4.83,2.48,0.06,12.66,41.86,1.46,127.85)。
根据公式(1)和(2),计算25种蛋白饲用植物的关联度(γi)(表5)。关联度能直观反映各个参试品种与参考理想品种之间的差异,其排名越高,越接近理想品种,反之差异越大。25种蛋白饲用植物的关联度从高到低依次为:扁豆>海法白三叶>杂交构树>圭亚那柱花草>大翼豆>辣木=银合欢>多花木蓝=红三叶=波叶山蚂蝗>落花生=爪哇大豆>桑树=紫穗槐>紫花苜蓿>蔓草虫豆=地八角=截叶铁扫帚=木豆>刺槐=白刺花>须弥葛>绿叶山蚂蝗=柱花草>白三叶。对25种蛋白饲用植物关联度进行划分,其营养价值评价为优的有1种(扁豆);营养价值评价为良的有14种(海法白三叶、杂交构树、圭亚那柱花草、大翼豆、辣木、银合欢等);营养价值评价为中的有10种(蔓草虫豆、地八角、截叶铁扫帚、木豆、白刺花等)。
牧草营养价值是衡量牧草质量、反映牧草品质的重要指标[11],它包括CP、EE、Ash等营养成分,Na、P等矿质成分,以及RFV等牧草饲用价值指标。CP能为家畜及体内的微生物提供能量和必需氨基酸,对家畜生长具有重要作用[12]。云南25种蛋白饲用植物中,海法白三叶、扁豆、紫花苜蓿、紫穗槐、白刺花、刺槐的CP含量均大于20%,达到了优级苜蓿干草捆的标准,是优良的植物蛋白饲料;其余植物的CP含量在11%~18.7%之间,基本达到了一级至四级苜蓿干草捆标准,具有较高的蛋白利用价值,这些植物全株或嫩枝叶利用可基本满足家畜生长发育的蛋白质需求,具备蛋白饲料的基本条件[13-14]。NDF和ADF含量说明牧草纤维化程度。其含量过高会影响牧草适口性;而含量过低可能会造成家畜瘤胃酸中毒[15]。因此,一定比例的NDF和ADF对维持家畜瘤胃的健康至关重要,同时,其产生的挥发性脂肪酸也是反刍动物的重要能量来源[16]。以苜蓿干草捆质量标准[14]为参照,25种蛋白饲草中,扁豆的NDF含量(45.98%)达到二级标准,海法白三叶、地八角、银合欢、桑树和爪哇大豆达到三级或四级标准;扁豆、海法白三叶、地八角的ADF含量为三级标准。以燕麦(Avena sativa)干草质量标准[17]而言,除柱花草、圭亚那柱花草、绿叶山蚂蝗外,其余物种(如扁豆、银合欢等)的NDF含量均达到三级及以上标准;ADF含量仅扁豆、地八角、海法白三叶达到二级标准。在实际应用中,本研究物种需与其他饲草合理搭配,以实现家畜所需营养物质的均衡需求,提高适口性和家畜消化率。RFV是表征牧草饲用价值的指标,其值越高,说明牧草质量越好[18],本研究中,扁豆、海法白三叶、地八角、银合欢和桑树的RFV值在100%以上,达到二级至四级苜蓿干草的标准,具有较高的饲用植物开发价值。
矿物质的摄入影响动物的免疫功能,若摄入比例不当,会引起动物生理功能紊乱,免疫力下降,最终影响动物生产[19]。牧草中Ca、P含量严重影响着家畜的生长发育,适量的P对家畜繁殖力的保持有着重要作用[20-21]。25种蛋白饲用植物中,仅银合欢的钙磷比在饲粮理想钙磷比范围内(1∶1~2∶1)[22],其余物种钙磷比均高于此范围;25种蛋白饲用植物的P含量远低于云贵地区常见饲用灌木的P含量[13],处于较低水平,这些蛋白饲用植物单独使用不能满足家畜的P需求;25种蛋白饲用植物的Ca含量与云贵地区常见饲用灌木的Ca含量相近[13],其中扁豆、圭亚那柱花草和落花生的Ca含量高于紫花苜蓿(1.5%~1.9%)[23]。Fe、Cu、Zn、Se是动物机体内必不可少的微量元素,与机体生长发育、蛋白合成、免疫力、新陈代谢、繁殖、酶的合成等密切相关[24-29]。若摄入不足会导致机体产生一系列疾病,影响家畜健康[30];摄入过量会造成家畜中毒[31],如机体吸收利用不足则会排出体外,污染环境[32]。25种蛋白饲用植物中,除少数几个物种外,其他物种的Fe、Cu、Zn、Se四种微量元素基本达到或远高于玉米的含量[24,33-35],这些植物基本是理想的动物矿质元素来源,但若想为家畜提供均衡的矿质营养,还需与其他饲料搭配使用。
对牧草营养成分含量的测定一般只测定常规的营养指标,而牧草微量元素含量对牧草营养品质以及家畜采食量等也有很大影响。对饲草饲用价值的评价很难用单一指标进行,用更丰富的营养指标进行综合分析,才能更客观、全面地进行牧草营养价值综合评价[36-37]。经过灰色关联度分析,亚热带地区25种蛋白饲用植物中,扁豆关联度最高(0.81),其综合营养价值最优,海法白三叶、杂交构树、大翼豆、辣木、银合欢等14种蛋白饲用植物的综合营养价值为良,这与他们的CP、EE、NDF、ADF等营养成分含量、RFV及部分矿物质含量的表现一致,这15种蛋白饲用植物可以作为亚热带地区优质蛋白饲草资源开发利用的品种选择。其余10种植物的综合营养价值评价为中,但部分植物的某种营养物质含量较为突出,如白刺花、刺槐的CP含量大于20%,蔓草虫豆、截叶铁扫帚、木豆、刺槐、白刺花、须弥葛的Fe、Cu、Zn、Se等元素含量明显优于玉米[24,33-35],在今后的开发应用中宜与其他饲料混合利用,以实现家畜的均衡营养需求和豆粕减量替代的目标。另外,评价结果可能与取样部位和取样时间有关,今后我们将在同一年度内对植物不同部位、不同生育期分别进行采集取样,明确某一物种的饲用部位和利用时期,以期获得更为全面的评价,为草食畜禽养殖中豆粕减量替代行动提供更为全面的蛋白饲草选择。
本研究25种蛋白饲用植物的粗蛋白含量为11.03%~21.73%,均达到了蛋白饲料的基本条件,其中海法白三叶、扁豆、紫花苜蓿、紫穗槐、白刺花和刺槐6种植物的粗蛋白含量在20%以上,具有较好的蛋白饲料潜力。用灰色关联度分析法对云南亚热带地区25种蛋白饲用植物的CP、EE、NDF、ADF、P、Ca等16个指标进行饲用潜力综合分析。结果表明,扁豆的营养价值综合评价为优,海法白三叶、杂交构树、红三叶、银合欢、辣木等14种植物营养价值综合评价为良,这15种植物具有较高的开发利用价值;蔓草虫豆、地八角、截叶铁扫帚等其他10种植物的营养价值虽综合评价为中,但部分物种的一些营养成分含量较为突出,宜与其他饲料配合使用,可为云南亚热带地区草食畜牧业健康高效发展、豆粕减量替代、家畜养殖节本增效提供更多种类的饲草料选择。
