White-fruited pepper is a highly distinctive type of pepper in Zhejiang province. In order to determine the optimal nitrogen level for this variety, a facility cultivation experiment was conducted to analyze the effects of five different nitrogen treatments: 0 kg/hm2, T0; 150 kg/hm2, T1; 195 kg/hm2, T2; 240 kg/hm2, T3; 285 kg/hm2, T4, on the growth, development, quality and accumulation of nitrogen elements in white pepper plants. The results showed that the main stem height, plant height, canopy width, stem diameter, stem and leaf biomass and yield of peppers increased with the application of nitrogen. Notably, fruit width, single fruit weight and yield reached the maximum under the T4 treatment, with increased of 36.27%, 76.30% and 32.16% respectively compared to the control, followed by T3, while the T3 treatment produced the longest fruits. Furthermore, the photosynthetic capacity of the pepper leaves improved with higher nitrogen application, with T3 and T4 treatments showing significantly better performance than the others. The quality of peppers was also influenced by nitrogen application. Nitrogen application also affected the quality of the pepper. The content of vitamin C and dihydrocapsaicin decreased with the increasing nitrogen levels, while the levels of capsaicin, total capsaicin and amino acids showed a trend of first increasing and then decreasing. Different nitrogen levels had a minor impact on nitrogen absorption in the roots, stems and fruits of peppers, but significantly affected nitrogen absorption in the leaves, with the T2 treatment achieving the highest leaf nitrogen content. Through principal component analysis of the 10 indicators related to yield and quality, the optimal nitrogen application for white-fruited peppers is T3 (240 kg/hm2).

白辣椒是浙江省极具特色的辣椒类型,为明确其最佳的施氮水平,通过设施栽培试验,分析5个不同施氮处理(0 kg/hm2,T0;150 kg/hm2,T1;195 kg/hm2,T2;240 kg/hm2,T3;285 kg/hm2,T4)对白辣椒生长发育、品质、植株氮元素含量积累的影响。结果表明:辣椒主茎高、株高、株幅、茎粗、茎和叶生物量、产量指标均随着施氮量的增加而升高。其中,果宽、单果质量和产量在T4处理中达到最大值,分别比对照提高了36.27%、76.30%、32.16%,T3处理次之,而T3处理的果长达到最大。此外,辣椒叶片的光合能力也随着施氮量的增加而增强,其中,T3和T4处理显著高于其他处理。在品质方面,施氮量对辣椒品质也有一定影响,维生素C和二氢辣椒素含量均随施氮量的增加而降低,而辣椒素、总辣椒素和氨基酸含量则呈先升后降的趋势。不同施氮量对辣椒根、茎、果的氮吸收影响较小,但对叶片的氮吸收影响显著,T2处理的叶片氮含量达到最高。通过主成分分析对辣椒产量和品质10个指标进行综合评价,得出白辣椒的最佳施氮量为T3(240 kg/hm2)。

白辣椒是浙江省极具特色的辣椒类型,为明确其最佳的施氮水平,通过设施栽培试验,分析5个不同施氮处理(0 kg/hm2,T0;150 kg/hm2,T1;195 kg/hm2,T2;240 kg/hm2,T3;285 kg/hm2,T4)对白辣椒生长发育、品质、植株氮元素含量积累的影响。结果表明:辣椒主茎高、株高、株幅、茎粗、茎和叶生物量、产量指标均随着施氮量的增加而升高。其中,果宽、单果质量和产量在T4处理中达到最大值,分别比对照提高了36.27%、76.30%、32.16%,T3处理次之,而T3处理的果长达到最大。此外,辣椒叶片的光合能力也随着施氮量的增加而增强,其中,T3和T4处理显著高于其他处理。在品质方面,施氮量对辣椒品质也有一定影响,维生素C和二氢辣椒素含量均随施氮量的增加而降低,而辣椒素、总辣椒素和氨基酸含量则呈先升后降的趋势。不同施氮量对辣椒根、茎、果的氮吸收影响较小,但对叶片的氮吸收影响显著,T2处理的叶片氮含量达到最高。通过主成分分析对辣椒产量和品质10个指标进行综合评价,得出白辣椒的最佳施氮量为T3(240 kg/hm2)。

White-fruited pepper is a highly distinctive type of pepper in Zhejiang province. In order to determine the optimal nitrogen level for this variety, a facility cultivation experiment was conducted to analyze the effects of five different nitrogen treatments: 0 kg/hm2, T0; 150 kg/hm2, T1; 195 kg/hm2, T2; 240 kg/hm2, T3; 285 kg/hm2, T4, on the growth, development, quality and accumulation of nitrogen elements in white pepper plants. The results showed that the main stem height, plant height, canopy width, stem diameter, stem and leaf biomass and yield of peppers increased with the application of nitrogen. Notably, fruit width, single fruit weight and yield reached the maximum under the T4 treatment, with increased of 36.27%, 76.30% and 32.16% respectively compared to the control, followed by T3, while the T3 treatment produced the longest fruits. Furthermore, the photosynthetic capacity of the pepper leaves improved with higher nitrogen application, with T3 and T4 treatments showing significantly better performance than the others. The quality of peppers was also influenced by nitrogen application. Nitrogen application also affected the quality of the pepper. The content of vitamin C and dihydrocapsaicin decreased with the increasing nitrogen levels, while the levels of capsaicin, total capsaicin and amino acids showed a trend of first increasing and then decreasing. Different nitrogen levels had a minor impact on nitrogen absorption in the roots, stems and fruits of peppers, but significantly affected nitrogen absorption in the leaves, with the T2 treatment achieving the highest leaf nitrogen content. Through principal component analysis of the 10 indicators related to yield and quality, the optimal nitrogen application for white-fruited peppers is T3 (240 kg/hm2).

白辣椒(Capsicum annuum L.),果色乳白,光泽度好,是浙江省最具特色的辣椒类型,因其鲜辣口味深受浙中、西、南等地区消费者的喜爱。目前市场上栽培面积较大的白辣椒品种有衢椒1号、玉龙椒、衢椒5号等,均为衢州市农业林业科学研究院自主选育[1-3]。新品种一经推出,在同类型品种市场占有率超90%,近3 a白辣椒在浙江、广东、福建、江西等地推广种植面积超过13 333.33 hm2,增效2.26亿元,有效推动了浙江省乃至全国白辣椒产业的高质量发展,在服务农业、助农增收促共富中发挥了重要作用。
近年来,随着经济的快速发展、居民消费水平的提高以及多样化的消费需求,蔬菜产业逐渐从重产量向重品质转型发展。氮肥是对作物营养生长、增产最显著的营养元素之一。但在蔬菜栽培过程中,一味追求高产,过量施入氮肥,导致蔬菜徒长、抗病性差、亚硝酸盐含量超标、品质差等众多问题,产量和品质难以兼顾的矛盾日益凸显。通过合理施氮有利于提高蔬菜的品质与产量,成为众多专家学者研究的重点。苏欣[4]通过对小白菜、菠菜、辣椒等蔬菜的氮肥研究表明,在一定范围内,蔬菜产量随着施氮量的增加而增加,超过一定用量后,产量不再增加。适当施用氮肥能维持蔬菜的维生素C、可溶性糖、可溶性蛋白含量在适宜水平,但氮肥过量,将导致亚硝酸盐含量上升。赵凤艳等[5]对油菜、生菜和茼蒿的施氮量研究表明,油菜和生菜的硝酸盐含量与施氮量呈显著正相关,3种蔬菜的维生素C含量均随施氮量的增加而降低。王金玲[6]研究了氮肥对辣椒果实辣椒素代谢、品质和产量的影响,结果表明,增加氮肥用量后降低了辣椒果肉中的辣椒素、维生素C和可溶性糖含量。刘冲等[7]通过研究表明,在苏北盐碱地增加氮肥有利于提高马齿苋的游离氨基酸和脯氨酸含量,提高其品质。综上,明确氮肥用量对于保证高品质蔬菜生产十分重要。
白辣椒果实苦味淡,鲜辣味突出,已有研究表明游离氨基酸含量和辣椒素含量对辣椒风味贡献大[8]。目前,对辣椒不同氮肥水平的研究主要关注氮肥对维生素C、亚硝酸盐、可溶性糖、粗蛋白等品质指标的影响,而对果肉辣椒素、氨基酸含量的影响研究较少。因此,本研究把辣椒素、氨基酸、维生素C含量作为白辣椒感官品质和营养品质的重要指标,以衢椒5号白果辣椒为研究对象,探讨不同氮肥水平对白辣椒生长、产量和品质的影响,以期为提高白辣椒产量、提升白辣椒鲜辣口感提供理论依据。
于2023年7—11月在衢州市农业林业科学研究院东湖科研创新基地连栋式温室大棚中进行试验,前茬作物为番茄,土质为黄壤。土壤基本理化性质:pH 7.29,碱解氮为203.73 mg/kg,速效磷为13.53 mg/kg,速效钾为57.32 mg/kg,有机质为51.75 g/kg。
供试辣椒品种为衢椒5号,系衢州市农业林业科学研究院自主选育的白果辣椒。
设置5个氮肥水平:0 kg/hm2,T0;150 kg/hm2,T1;195 kg/hm2,T2;240 kg/hm2,T3;285 kg/hm2,T4。不同处理除氮素含量不同外,磷、钾肥含量相同,磷(P2O5)含量为135 kg/hm2,钾(K2O)含量为300 kg/hm2。小区面积为27 m2,每个处理3次重复,随机区组排列。每个小区辣椒双行种植,株距0.45 m,行距0.50 m,每个小区定植80株。
试验使用的氮肥为尿素(含N 46%),磷肥为钙镁磷肥(含P2O5 12%),钾肥为硫酸钾(含K2O 52%)。磷肥全部用于基肥,氮肥和钾肥按基肥30%、追肥70%的比例进行分配。追肥分别于苗期、坐果初期和采摘期分12次施入。辣椒于2023年7月18日播种,2023年8月22日定植,2023年12月23日收获完毕。
在辣椒门椒成熟期,每个小区随机取8株测定辣椒株高、株幅、主茎高、茎粗、叶绿素相对含量、净光合速率等指标。在辣椒结果盛期,每个小区随机取5株辣椒的同一节位辣椒测定果实长度、宽度、果实含水量、辣椒素、氨基酸、维生素C含量等指标。辣椒果实分小区分批采收,最后统计辣椒总产量。于最后1次采收时每个小区随机取3株,采集辣椒植株根、茎、叶等组织,洗净、擦干,于115 ℃杀青,80 ℃烘干至恒重,称取不同组织的干物质量。烘干样品粉碎、研磨、过筛后分析辣椒不同组织的氮养分含量。
采用烘干法测定辣椒果实含水量。维生素C含量采用索莱宝抗坏血酸/总抗坏血酸含量检测试剂盒进行提取,使用赛默飞(美国)多功能酶标仪进行测定;采用SHIMADZU-LC20A液相色谱仪(岛津)测定辣椒素含量[9];采用LA8090高速氨基酸分析仪测定氨基酸含量[10];采用凯式定氮法进行测定植株氮含量[11];采用叶绿素计SPAD-502 Plus(日本)测定叶绿素相对含量(SPAD值);采用Li-cor(美国)Li-6800光合荧光测量系统测定净光合速率(Pn)。
采用Microsoft Excel 2010软件进行数据整理,采用GraphPad Prism 10.0软件、ChiPlot作图网站制图。采用IBM SPSS Statistics 19软件进行数据统计、单因素方差分析和相关性分析,采用Duncan’s新复极差法进行多重比较,采用皮尔逊(Pearson)检测法进行相关性分析。
图1所示,随着施氮量的增加,辣椒主茎高呈先升高后降低的趋势,且T3处理达到最大值(图1A),而辣椒株高、株幅、茎粗则逐渐升高(图1B~图1D)。
图2所示,随着施氮量的增加,辣椒植株不同器官的生物量呈逐渐上升的趋势(由于果实分批采收,未统计果实的生物量)。不同处理的根系生物量虽有升高趋势,但未达到显著水平。茎和叶组织的生物量均在T4处理达到最大值,T2、T3与T4处理无显著性差异,表明氮水平在T2时,植株叶和茎生物量已上升到较高水平,此时再提高氮水平,生物量增加不明显。
图3所示,辣椒果实的长度随施氮量的增加而升高,T2处理达到最大值(图3A)。果实宽度和单果质量也随着施氮量的增加而升高,T4处理达到最大值,分别比对照(T0)提高了36.27%和76.30%(图3B图3C)。产量数据结果表明,T4处理的增产效果最好,比T0增产32.16%,T1、T2和T3处理分别增产20.78%、21.84%、23.09%(图3D)。
图4可知,不同施氮量对辣椒果实含水量无显著影响(图4A),但对辣椒果实其他品质影响较大。维生素C含量随施氮量的增加而降低,T1处理对维生素C含量的不利影响较小(图4B)。辣椒素含量随施氮量的增加呈先升高后降低的趋势,T1处理的辣椒素含量比T0提高了13.44%,T4处理的辣椒素含量下降幅度最大,达31.64%(图4C)。二氢辣椒素含量随施氮量的增加而下降,T4处理的辣椒素含量下降幅度最大,达28.49%(图4D)。总辣椒素含量的变化趋势与辣椒素含量的变化趋势相同,均在T1处理达到最大值(图4E)。总游离氨基酸含量和鲜味氨基酸含量均随施氮量的增加呈先升高后降低的趋势,T1处理的总游离氨基酸含量达到最大值,比T0增加12.92%,T2处理的鲜味氨基酸含量达到最大值,比T0增加17.30%(图4F图4G)。结果表明适度增施氮肥有利于提高辣椒总游离氨基酸含量,提高辣椒鲜味。
图5所示,除T4处理根的全氮含量显著升高外,其他处理的氮含量与T0均无显著性差异。不同氮肥处理对茎的全氮含量无显著影响。氮肥的施用有利于增加叶片的全氮含量,对叶片全氮含量的影响呈先升高后下降的趋势,T2处理的叶片全氮含量达到最大,比T0增加9.30%。不同施氮水平对果实的全氮含量影响较小,T1处理比T0增加3.85%,而T3处理比T0减少4.86%。
已有研究表明,合理施氮有利于植物叶片积累叶绿素,进而提高光合作用能力[12]。如图6所示,门椒成熟期叶片的叶绿素相对含量(SPAD)在不同氮素水平下均高于T0图5A)。通过检测该生长阶段辣椒叶片的光合作用能力表明,T3和T4处理的净光合速率(Pn)均显著高于其他处理(图5B)。
图7可知,株高、株幅、茎粗、干物质量(根、茎、叶)等植株性状与果长、果宽、单果质量、产量等果实产量相关性状呈显著或极显著正相关。株高、株幅和茎粗呈极显著正相关,根、茎、叶干物质量三者之间呈现较强的相关性。就果实品质而言,维生素C含量与绝大多数植株性状和果实产量相关性状呈显著或极显著负相关。辣椒素、二氢辣椒素含量与果实含水量、根干重呈显著负相关,与其他植株性状和果实产量相关性状呈负相关,但未达到显著性水平。氨基酸含量与其他性状相关性不显著。由此可见,辣椒生长过程中根系不断增多,植株逐渐增粗、长高、株幅扩大、叶片繁茂,果实逐渐变大,产量不断增加,但维生素C含量呈下降趋势。
农业生产者普遍把辣椒产量作为其关注的首要指标。对于白辣椒生产而言,维生素C、辣椒素和氨基酸含量对保证其鲜辣口感及营养品质至关重要,因此本研究把产量和品质作为评价不同施氮水平下辣椒生长优劣的重要指标。通过对果长、果宽、单果质量、产量、果实含水量、维生素C含量、辣椒素含量、二氢辣椒素含量、总游离氨基酸含量、鲜味氨基酸含量共10个指标进行主成分分析,共提取4个主成分,其中主成分1对辣椒产量和品质的影响最大,贡献率为65.737%。前2个主成分特征值均大于1,其累计贡献率高达93.332%(表1)。通常认为累计贡献率高于85%即可描述整体水平并可提取主成分进行综合评价[13],说明本研究前2个主成分可基本反映不同施氮水平下辣椒产量性状和品质性状的大部分信息,因此选取前2个主成分作为数据分析的有效成分。
表2所示,以10个辣椒产量和品质指标为初始自变量(依次编为X1~X10),载荷值的大小和正负反映不同变量对主成分的贡献大小和方向。数值越大,表明对主成分的影响越大,正负代表变量与主成分之间的正相关或负相关关系[10]。第1主成分中X1~X8的载荷值较高,其中X1~X5为正相关,X6~X8为负相关。正相关影响最大的是X3(果宽),载荷值为0.972;负相关影响最大的是X6(维生素C含量),载荷值为–0.948。第2主成分中X9X10的载荷值较高,均为正相关,载荷值分别为0.946和0.933。将X1~X10经标准化后进行主成分分析,最终得到辣椒产量和品质的前2个主成分的方程系数(表2),其方程表达式为:F1=0.334X1+0.316X2+0.379X3+…–0.363X8–0.101X9–0.098X10F2=–0.237X1+0.223X2+0.118X3+…+0.192X8+0.569X9+0.562X10
2个主成分从不同方面反映不同氮肥水平下辣椒品质和产量的总体水平,因此把每个主成分对应方差的相对贡献率作为权重,对2个主成分进行加权求和,得到辣椒品质和产量的综合评价函数:F=0.65737×F1+0.27595×F2。通过综合评价函数计算不同施氮水平下辣椒产量和品质综合得分(表3),得分越高,表示该施氮水平下辣椒品质和产量综合表现越好。由表3可知,不同氮肥水平下辣椒综合得分从高到低依次为T3、T4、T2、T1、T0,其中T3处理的综合得分最高为171.647,表明施氮水平为T3(240 kg/hm2)时辣椒产量和品质综合表现最好;T0处理的综合得分最低为–250.557,表明不施氮肥对辣椒品质和产量负面影响大。
氮是植物生长必须的大量元素之一,是叶绿素、蛋白质等结构的组成元素,有利于植物的光合作用和物质积累[14]。氮肥是世界农业生产中最广泛施用的肥料品种之一[15]。合理的氮肥用量对于辣椒高产和保持鲜辣口感、提升品质具有十分重要的作用。本研究中,随着氮素水平的增加,辣椒植株主茎高、株高、株幅、茎粗均呈逐渐升高的趋势,这可能与辣椒叶片叶绿素含量及光合作用能力提升有关。茎和叶组织的生物量均在T2处理达到较高值,T3、T4与T2处理相比无显著性上升。这表明氮水平达到一定值时,再提高氮水平,植株生物量不再增加,这与韩明珠等[16]的研究结果一致。前人关于辣椒产量对氮肥用量的响应研究已较为深入,施氮使产量增加,超过一定范围后,产量无明显变化或有下降趋势[17-18]。在本研究中,产量随着施氮量的增加而升高,在T4处理达到最大,推测T4处理的氮肥用量尚未达到产量最大阈值。如果不考虑品质因素,只考虑产量因素,后续可以提高氮肥用量进一步试验。
辣椒中的辣椒素、游离氨基酸、维生素C含量是其重要的食用品质和商品品质。本研究中,维生素C含量随着施氮量的增加而呈降低的趋势,这与吴玥[19]、王金玲[6]的研究结果一致,但郭标[20]、曾化伟等[21]认为适量施氮可以提高辣椒果实的维生素C含量。施氮过量时,维生素C含量下降,这可能与辣椒试验品种、土壤基础肥力以及施氮水平不同有关。
辣椒的辣味主要由辣椒素类物质的含量决定,最常见的辣椒素类物质包括辣椒素和二氢辣椒素,其含量相对丰富且辣味最强,占辣椒中的辣椒素类物质的70%以上,贡献了辣椒90%以上的辣味[22-23]。本研究中,辣椒果实的辣椒素含量随着施氮量的增加呈先升高后降低的趋势,这与吴玥[19]的研究结果一致。也有学者认为增施氮肥使辣椒果实中的辣椒素含量减少[24],这有可能是试验的施氮水平超过了辣椒素峰值对应的施氮水平阈值或该地块土壤肥力较高导致。除此之外,本研究中二氢辣椒素含量随着施氮量的增加而呈降低的趋势。T4处理的总辣椒素含量下降幅度最大,比T0降低30.50%。以上结果表明,为了保证白辣椒的辣味,氮肥用量不可过多。
氮素供应是氨基酸生物合成的重要保证[25]。李焕春等[26]认为施氮提高了春小麦籽粒必须氨基酸和总氨基酸含量。刘冲等[7]认为施氮提高了游离氨基酸含量,在150 kg/hm2和225 kg/hm2氮肥水平达到较大值。辣椒的鲜味主要由天冬氨酸、谷氨酸、赖氨酸等鲜味氨基酸含量决定[8]。本研究结果表明,增加氮肥用量有利于提高辣椒总游离氨基酸含量和鲜味氨基酸含量,提高白辣椒鲜味,T1处理(150 kg/hm2)的总游离氨基酸含量达到最大,比T0增加12.92%;T3处理(240 kg/hm2)的鲜味氨基酸含量达到最大,比T0增加17.30%。因此,适量增施氮肥有助于提高辣椒果实的总游离氨基酸和鲜味氨基酸含量。
本研究通过设置不同氮肥处理,测定不同施氮水平对白辣椒植株形态、果实产量及品质和植株氮吸收方面的影响,重点关注维生素C、辣椒素、氨基酸含量等影响白辣椒营养品质和鲜辣口感的指标,分析了17个性状的相关性表明,果实产量性状与株高、株幅、茎粗、干物质量(根、茎、叶)等植株性状呈显著或极显著正相关;维生素C含量与绝大多数植株性状和果实产量相关性状呈显著或极显著负相关;辣椒素和二氢辣椒素含量与果实含水量、根干物质量呈显著负相关,因此需要选择合适的施氮水平使辣椒产量、品质达到最佳的平衡状态。本研究利用主成分分析的评价方法对白辣椒产量和品质相关的10个性状指标进行数据分析,结果表明施氮水平为240 kg/hm2时辣椒产量和品质综合表现最好。
