Wampee [Clausena lansium (Lour.) Skeels] is a species of Rutaceae family and native to Southern China, which contains a large number of bioactive compounds that are beneficial to human health. However, because of the thin pericarp and soft pulp, wampee fruit is susceptible to the mechanical damage and the quality deterioration symptoms of fruit rot, pericarp browning and storage characteristic loss, and thus reducing the commercial value and edible value of harvested wampee fruit. Therefore, it is necessary to develop a safe and environmentally friendly postharvest storage technology for enhancing the storage behavior and quality, and prolonging storage time of harvested wampee fruit. Oxyresveratrol (OXY) is a naturally active product, with the efficacies of anti-browning, anti-oxidation, antibacterial, anti-inflammatory and antiviral. OXY has been studied more in the field of medicinal health care, but less in the field of food preservation. However, there are no reports on increasing the storage behavior and postharvest quality of wampee fruit by the usage of exogenous OXY. The study was aimed to study the effects of exogenous OXY treatment on the preservation of harvested wampee fruit. The fruit of wampee cv. Jixin was used as the experiment material, and the wampee fruit was treated by OXY solution with concentration of 0.2 g/L and distilled water (CK) for 30 min, separately. Then, the fruit was air-dried and packaged (50 fruits per bag), and stored at relative humidity 85% and temperature (25±1)℃ for 10 days. The changes of related indices of the storage behavior and postharvest quality in wampee fruit were observed and measured every two days. Compared to CK, OXY treatment could delay the increments of pericarp cell membrane permeability, browning degree and browning index, and maintain a higher commercially acceptable fruit rate but a lower weight loss percentage of harvested wampee fruit. Furthermore, OXY treatment might keep the higher values of L* and hue angle, a higher total phenolics content, but the lower activities of phenolases such as peroxidase and polyphenol oxidase in pericarp of harvested wampee fruit. Moreover, OXY treatment could retain the higher contents of total soluble solids, vitamin C, titratable acidity, sucrose and total soluble sugar in pulp of harvested wampee fruit. Therefore, the treatment of exogenous OXY could effectively enhance the storage behavior, and retain the pericarp appearance quality and pulp nutritional quality, and thus prolong the storage time in harvested wampee fruit.

黄皮[Clausena lansium(Lour.)Skeels]属于芸香科,原产于我国华南地区,内含大量生物活性物质,有利于人体健康。然而,黄皮果实因其果皮较薄、果肉较软,易受到机械损伤或发生果实腐烂、果皮褐变、贮藏特性丧失等症状,最终降低了果实采后商品价值及食用价值。因此,有必要开发一种安全、环境友好的采后保鲜技术,以提升黄皮果实贮藏特性及其采后品质,从而延长果实保鲜期。氧化白藜芦醇(OXY)是一种天然活性产物,具有抗褐变、抗氧化、抗菌、抗炎、抗病毒等功效。有研究表明,OXY在药用保健领域研究较多而在食品保鲜中研究较少。目前尚无关于外源OXY处理提高黄皮果实贮藏特性与采后品质的研究报道。因此,为探究外源OXY处理对黄皮果实采后保鲜效应的影响,以鸡心黄皮果实为试材,分别采用0.2 g/L OXY溶液与蒸馏水(CK)浸泡处理黄皮果实30 min,随后取出果实晾干并装袋(每袋装50颗果实),置于相对湿度为85%、温度为(25±1)℃的条件下贮藏10 d,每2 d取样观察,测定黄皮果实的贮藏特性与采后品质相关指标的变化。结果表明:与CK相比,OXY处理能减缓采后黄皮果实的果皮细胞膜透性、褐变度和褐变指数的上升趋势,维持较高水平的果实商品率与较低水平的果实失重率。另外,OXY处理能维持采后黄皮果实较高的果皮L*值、色调角h值和较高的果皮总酚含量,而降低果皮过氧化物酶和多酚氧化酶等酚酶活性。此外,OXY处理也可维持采后黄皮果实较高的果肉可溶性固形物、维生素C、可滴定酸、蔗糖与可溶性总糖含量。因此,外源OXY处理能有效提高黄皮果实的采后贮藏特性,稳定果实果皮的外观品质与果肉营养品质,进而延长黄皮果实的采后保鲜期。

黄皮[Clausena lansium(Lour.)Skeels]属于芸香科,原产于我国华南地区,内含大量生物活性物质,有利于人体健康。然而,黄皮果实因其果皮较薄、果肉较软,易受到机械损伤或发生果实腐烂、果皮褐变、贮藏特性丧失等症状,最终降低了果实采后商品价值及食用价值。因此,有必要开发一种安全、环境友好的采后保鲜技术,以提升黄皮果实贮藏特性及其采后品质,从而延长果实保鲜期。氧化白藜芦醇(OXY)是一种天然活性产物,具有抗褐变、抗氧化、抗菌、抗炎、抗病毒等功效。有研究表明,OXY在药用保健领域研究较多而在食品保鲜中研究较少。目前尚无关于外源OXY处理提高黄皮果实贮藏特性与采后品质的研究报道。因此,为探究外源OXY处理对黄皮果实采后保鲜效应的影响,以鸡心黄皮果实为试材,分别采用0.2 g/L OXY溶液与蒸馏水(CK)浸泡处理黄皮果实30 min,随后取出果实晾干并装袋(每袋装50颗果实),置于相对湿度为85%、温度为(25±1)℃的条件下贮藏10 d,每2 d取样观察,测定黄皮果实的贮藏特性与采后品质相关指标的变化。结果表明:与CK相比,OXY处理能减缓采后黄皮果实的果皮细胞膜透性、褐变度和褐变指数的上升趋势,维持较高水平的果实商品率与较低水平的果实失重率。另外,OXY处理能维持采后黄皮果实较高的果皮L*值、色调角h值和较高的果皮总酚含量,而降低果皮过氧化物酶和多酚氧化酶等酚酶活性。此外,OXY处理也可维持采后黄皮果实较高的果肉可溶性固形物、维生素C、可滴定酸、蔗糖与可溶性总糖含量。因此,外源OXY处理能有效提高黄皮果实的采后贮藏特性,稳定果实果皮的外观品质与果肉营养品质,进而延长黄皮果实的采后保鲜期。

Wampee [Clausena lansium (Lour.) Skeels] is a species of Rutaceae family and native to Southern China, which contains a large number of bioactive compounds that are beneficial to human health. However, because of the thin pericarp and soft pulp, wampee fruit is susceptible to the mechanical damage and the quality deterioration symptoms of fruit rot, pericarp browning and storage characteristic loss, and thus reducing the commercial value and edible value of harvested wampee fruit. Therefore, it is necessary to develop a safe and environmentally friendly postharvest storage technology for enhancing the storage behavior and quality, and prolonging storage time of harvested wampee fruit. Oxyresveratrol (OXY) is a naturally active product, with the efficacies of anti-browning, anti-oxidation, antibacterial, anti-inflammatory and antiviral. OXY has been studied more in the field of medicinal health care, but less in the field of food preservation. However, there are no reports on increasing the storage behavior and postharvest quality of wampee fruit by the usage of exogenous OXY. The study was aimed to study the effects of exogenous OXY treatment on the preservation of harvested wampee fruit. The fruit of wampee cv. Jixin was used as the experiment material, and the wampee fruit was treated by OXY solution with concentration of 0.2 g/L and distilled water (CK) for 30 min, separately. Then, the fruit was air-dried and packaged (50 fruits per bag), and stored at relative humidity 85% and temperature (25±1)℃ for 10 days. The changes of related indices of the storage behavior and postharvest quality in wampee fruit were observed and measured every two days. Compared to CK, OXY treatment could delay the increments of pericarp cell membrane permeability, browning degree and browning index, and maintain a higher commercially acceptable fruit rate but a lower weight loss percentage of harvested wampee fruit. Furthermore, OXY treatment might keep the higher values of L* and hue angle, a higher total phenolics content, but the lower activities of phenolases such as peroxidase and polyphenol oxidase in pericarp of harvested wampee fruit. Moreover, OXY treatment could retain the higher contents of total soluble solids, vitamin C, titratable acidity, sucrose and total soluble sugar in pulp of harvested wampee fruit. Therefore, the treatment of exogenous OXY could effectively enhance the storage behavior, and retain the pericarp appearance quality and pulp nutritional quality, and thus prolong the storage time in harvested wampee fruit.

黄皮[Clausena lansium(Lour.)Skeels]属于芸香科黄皮属的常绿果树,原产于我国的华南地区[1-4]。黄皮具有果大、果皮薄、果肉厚、果汁多、口感酸甜、风味独特、富含生物活性物质等特点[1-2],还具有降血糖、消痰化气、抗氧化、润肺止咳等功效[3-5],因而深受消费者的喜爱。然而,黄皮果实由于果皮较薄、果肉质地较软,易受到机械损伤或发生腐烂,进而加速果实采后发生果皮褐变、品质劣变与贮藏特性丧失等症状,一般采后2~3 d便失去其商品价值[1,3-4]。这些限制因素不利于黄皮果实采后品质保持和远距离运销,也不利于黄皮产业的健康可持续发展。有研究报道,采用程序降温[4]、低温[5]或施保功化学杀菌剂[6]等措施,能稳定黄皮果实的采后品质。然而,这些采后处理方法存在运用成本较高或存在化学残留而危害人体健康、危害环境等问题,因而不适于在黄皮果实采后保鲜的实际运用中进行广泛推广使用。因此,寻找一种安全、环境友好的采后保鲜技术,将有利于增强黄皮果实采后品质及其贮藏特性,延长果实保鲜期。
氧化白藜芦醇(OXY)作为反式二苯乙烯类的天然产物白藜芦醇的2'-羟基化衍生物,是一种重要的天然活性产物[7-8]。在自然界中,OXY广泛存在于多种植物中,并且在桑科植物中最为普遍,也存在于一些百合科、蔷薇科、禾本科、买麻藤科及豆科等植物中[9]。另外,OXY具有抗褐变、抗氧化、抗菌、抗炎、抗病毒等功效[7,9-10]。由于这些良好的医疗保健功效,OXY在药用保健领域的研究及应用较多,然而在食品保鲜的研究与应用较少[10]。如外源OXY处理能减缓鲜切马铃薯片[7]、鲜切苹果[8]等褐变的发生,提高其品质水平。然而,目前未见关于外源OXY处理提高黄皮果实贮藏特性与采后品质的研究报道。因此,本研究以福建省特色的鸡心黄皮果实作为试材,研究外源OXY处理对黄皮果皮细胞膜透性、褐变指数和褐变度、果实失重率与商品率,果皮过氧化物酶(POD)及多酚氧化酶(PPO)等酚酶活性、总酚含量、色调角h值和色差L*值,果肉维生素C、可溶性固形物(TSS)、可溶性总糖、可滴定酸(TA)与蔗糖含量等的变化,进而阐明外源OXY处理对黄皮果实采后贮藏特性、果皮外观品质与果肉营养品质等的影响,旨在为提高黄皮果实的采后贮藏品质及延长果实的贮藏期提供理论依据与指导。
试验材料:鸡心黄皮[Clausena lansium(Lour.)Skeels cv. Jixin]果实采自福建省永春县岵山镇果园,果实成熟度约九成熟。黄皮在采收之后,于当天运至实验室(泉州),挑选色泽一致、大小均一、无损伤、健康的果实。
试剂:氧化白藜芦醇(OXY),购自杭州瑞树生化有限公司;本研究涉及测定果实贮藏特性和采后品质指标的常用化学试剂(化学纯)均购自国药集团化学试剂有限公司。
仪器与设备:CR400色差仪,日本柯尼卡公司;PRX-450A型智能人工气候箱,浙江宁波赛福实验仪器有限公司;S230电导率仪、ME204电子天平、ET18自动电位滴定仪,梅特勒-托利多仪器(上海)有限公司;PAL-1型手持糖度计,日本株式会社爱宕公司;M200 Pro Infinite酶标仪,瑞士帝肯公司;GL-20G-Ⅱ型高速冷冻离心机,上海安亭科学仪器厂。
预试验:将黄皮果实平均分为5组(每组设置3个重复),分别浸泡在浓度为0(CK)、0.1、0.2、0.3 g/L OXY溶液中30 min,随后取出晾干并装袋,每袋装果50个,在(25±1)℃和相对湿度为85%下进行贮藏,每2 d取样测定果皮褐变指数和褐变度。结果发现,在贮藏10 d时,0(CK)、0.1、0.2、0.3 g/L OXY不同处理组的果皮褐变指数分别为0.957、0.921、0.831、0.884,褐变度分别为0.921、0.913、0.811、0.854。由此可知,0.2 g/L OXY能保持采后黄皮果实最低的果皮褐变指数与褐变度,进而保持较好的果实采后品质。因此,采用浓度为0.2 g/L OXY溶液进行后续研究。
在获得最佳的OXY处理浓度的基础上,将黄皮果实分为2组(每组3个重复):(1)对照(CK),在蒸馏水中浸泡30 min;(2)OXY处理,在0.2 g/L OXY溶液中浸泡30 min。然后取出晾干、装袋(50个/袋),置于(25±1)℃和相对湿度为85%条件下贮藏,每2 d取样观察,并测定相关指标。
(1)果皮细胞膜透性。取10个黄皮果实,用打孔器(直径为5 mm)取出赤道面果皮圆片20个,参照LIN等[11]和JIANG等[12]的方法测定果皮的细胞膜透性(%)。
(2)果皮褐变指数和褐变度。取1袋黄皮果实(50个),参照JIANG等[12]和LIN等[13]的方法评价果皮褐变指数。从10个黄皮果实中取出2 g果皮,参照LIN等[13]和孔祥佳等[14]的方法测定果实褐变度,结果以450 nm波长的吸光值(OD450)表示。
(3)果实商品率和失重率。取出1袋黄皮果实(50个),参照LIN等[11]和郭欣等[15]的方法测定商品率(%)。参照LIN等[11]的方法测定失重率(%)。
(4)果皮色差L*值和色调角h值。挑选10个黄皮果实,参照曾玲珍等[16]和王慧等[17]的方法,使用CR400色差仪对果皮赤道面上的相对4个部位测定L*值及h值(°)。
(5)果皮总酚含量。从10个黄皮果实中取出0.5 g果皮,参照LIN等[18]的方法测定果皮总酚含量,结果以没食子酸(GA)当量表示(g/kg)。
(6)果皮过氧化物酶(POD)和多酚氧化酶(PPO)活性。从10个黄皮果实中取出2 g果皮,参照郭欣等[19]的方法测定果皮POD活性(U/mg);参照郭欣等[19]和CHEN等[20]的方法测定果皮PPO活性(U/mg)。
(7)果皮蛋白质含量。参照BRADFORD[21]的方法进行测定,用牛血清白蛋白作标准曲线。
(8)果肉品质特性。取10个黄皮果肉,参照LIN等[11]的方法,用PAL-1型手持糖度计测定果肉可溶性固形物(TSS)含量(%)。从10个黄皮果实中取5 g果肉,参照LIN等[11]和JIANG等[12]的方法进行预处理,之后采用ET18型自动电位滴定仪测定可滴定酸(TA)含量(%)。从10个黄皮果实中取果肉1 g,参照LIN等[11]和JIANG等[12]的方法测定果肉维生素C含量(g/kg)。挑选10个黄皮果实,取出果肉2 g,参照LIN等[11]的方法测定果肉可溶性总糖(g/kg)和蔗糖含量(g/kg)。
在本研究中,除测定TSS含量设置10次重复外,其余指标均设置3次重复。使用Microsoft Excel 2016软件制图;利用SPSS 22.0软件进行数据统计分析。
细胞膜透性主要用于评价果实细胞膜的损伤水平,也是衡量果实耐贮性的一个重要指标[11-12]。由图1可知,CK和OXY处理组的黄皮果实果皮细胞膜透性均呈快速上升趋势。进一步比较发现,与CK相比,OXY处理组具有较低水平的果皮细胞膜透性,并在贮藏4~10 d达到显著水平(P<0.05)。在贮藏第10天时,OXY处理组的果皮细胞膜透性仅为CK的75.46%。因此,OXY处理能减缓黄皮果实采后果皮细胞膜透性的升高,维持较好细胞膜的完整性。
褐变指数和褐变度是评价果实褐变程度的重要指标[13]。如图2A所示,在贮藏0~10 d,CK和OXY处理组的果皮褐变指数迅速上升,并且OXY处理组的果皮褐变指数均低于CK,在贮藏4~10 d极显著(P<0.01)低于CK,在贮藏第10天时,OXY处理组的果皮褐变指数为CK的85.79%。
图2B可知,在贮藏0~10 d,CK和OXY处理组的黄皮果实果皮褐变度均快速上升。进一步分析可知,与CK对比,OXY处理组的果皮褐变度在贮藏期均具有较低水平,并在贮藏第2、8天极显著低于CK(P<0.01),在贮藏第6、10天显著低于CK(P<0.05)。在贮藏第10天时,OXY处理组的果皮褐变度是CK的88.38%。
因此,OXY处理可减缓黄皮果实采后果皮褐变指数和褐变度的升高,进而延缓果皮褐变的发生。
果实商品率是反映健康果实商业可接受程度的重要指标[15]。如图3A所示,CK与OXY处理组的黄皮果实商品率在贮藏0~4 d均为100%,但从贮藏第4天开始,却表现出不同的变化趋势。其中,CK的商品率在贮藏4~10 d急剧下降,在贮藏第10天时,其商品率仅为5.33%;而OXY处理组的商品率在贮藏4~6 d呈缓慢下降,随后快速下降。通过比较发现,OXY处理的果实商品率在贮藏6~10 d均高于CK,并在贮藏第8天显著高于CK(P<0.05),在贮藏第10天呈极显著水平(P<0.01)。
果实在贮藏期间常因蒸腾作用失去水分,导致果实重量减轻而降低了果实的商品价值[11,15]。如图3B所示,CK与OXY处理组的果实失重率在贮藏0~10 d均快速上升。进一步分析可知,在贮藏0~10 d,OXY处理组的失重率均低于CK,并且在贮藏第6、10天呈显著水平(P<0.05),在贮藏第8天呈极显著水平(P<0.01)。在贮藏第10天时,OXY处理组的失重率仅为CK的85.42%。
因此,OXY处理可以减缓采后黄皮果实商品率的下降与失重率的上升。
色泽是评价果实外观品质的重要指标,常用L*值表示色泽的明亮程度(数值越大表示越鲜亮),色调角h值表示不同的颜色[15-16]。采后黄皮果实果皮的颜色由淡黄色逐渐变成棕黄色,之后向黄褐色、褐色转变。在贮藏0~10 d,CK与OXY处理组的黄皮果皮L*值(图4A)与h值(图4B)均快速下降,并且OXY处理组均保持在较高水平。进一步比较发现,在贮藏4~8 d,OXY处理组的果皮L*值均极显著高于CK(P<0.01);在贮藏第8天OXY处理组的果皮h值极显著高于CK(P<0.01),在贮藏第10天显著高于CK(P<0.05)。在贮藏第10天时,OXY处理组的果皮L*值和h值分别是CK的1.05倍和1.07倍。综上,OXY处理能有效延缓采后黄皮果实果皮L*值和h值的降低,进而保持较好的果皮外观色泽。
总酚是一种酚类物质,其含量的变化与褐变有关,而保持较高的总酚含量,可以延缓果皮发生褐变[11,20]。如图5所示,在贮藏0~10 d,CK与OXY处理组的黄皮果实果皮总酚含量均快速下降。进一步对比可知,OXY处理组的总酚含量在贮藏期均高于CK,并在贮藏8~10 d显著高于CK(P<0.05),并且在贮藏第10天时,OXY处理组的果皮总酚含量是CK的1.11倍。因此,OXY处理可以延缓采后黄皮果实果皮总酚含量的降低,从而维持较好的果皮外观品质。
果皮褐变的发生常涉及酚酶(POD或PPO)所诱导的酶促褐变反应,较低的PPO和POD活性可以减少果皮褐变的发生[13,22]。由图6A可知,CK和OXY处理组果实果皮的POD活性在贮藏0~2 d均急剧上升,CK的POD活性在2~8 d逐渐下降,8~10 d快速上升;而OXY处理组的果皮POD活性在2~6 d快速下降,6~8 d略有降低,随后快速上升。与CK相比,OXY处理组果实具有较低水平的果皮POD活性,并在贮藏4~10 d显著高于CK(P<0.05)。
图6B可得,CK的果皮PPO活性在贮藏0~8 d急剧上升,8~10 d快速下降。OXY处理组的果皮PPO活性在贮藏0~2 d快速上升,2~4 d缓慢下降,4~8 d急剧提升,而8~10 d快速下降。通过比较可知,在贮藏4~10 d,OXY处理组的果皮PPO活性均低于CK,且在贮藏6~10 d显著高于CK(P<0.05)。
因此,OXY处理能有效维持采后黄皮果实较低水平的果皮POD和PPO活性。
TSS、TA和维生素C是果实重要的营养成分和风味物质,常用来评价果实的品质[10]。由图7A可知,在贮藏0~10 d,CK果实的果肉TSS含量呈逐渐下降的趋势。而OXY处理组的果肉TSS含量在贮藏0~2 d快速提高,2~10 d逐渐下降。进一步对比可知,在贮藏期,OXY处理组的果肉TSS含量均高于CK,并且在贮藏第2~6天和第10天极显著高于CK(P<0.01)。在贮藏第10天时,OXY处理果实的果肉TSS含量是CK的1.26倍。
图7B可知,CK的果肉TA含量在贮藏0~ 2 d快速下降,随后呈缓慢下降趋势。而OXY处理组的果肉TA含量在贮藏0~2 d略有上升,随后持续下降。通过对比分析可知,OXY处理组的果肉TA含量在贮藏期均高于CK,并且在贮藏第2、10天极显著高于CK(P<0.01),在贮藏4~6 d显著高于CK(P<0.05)。在贮藏第10天,OXY处理组的果肉TA含量是CK的1.40倍。
图7C可知,在贮藏0~10 d,CK和OXY处理组的黄皮果肉维生素C含量均急剧下降。OXY处理的果肉维生素C含量均高于CK,且在贮藏6~8 d极显著高于CK(P<0.01)。在贮藏第10天,OXY处理组与CK的果肉维生素C含量分别比0 d下降了36.53%和40.91%。
因此,OXY处理能维持采后黄皮果实较高水平的果肉TSS、TA和维生素C含量,从而保持较好的果肉营养品质。
糖(如蔗糖或可溶性总糖)含量的高低与果实的风味、品质等密切相关[10,15]。由图8A可知,在贮藏期间,CK和OXY处理组的黄皮果实果肉可溶性总糖含量均快速下降,而OXY处理组维持在较高水平。通过分析可得,在贮藏6~8 d,OXY处理组显著高于CK(P<0.05),在贮藏第10天极显著高于CK(P<0.01)。在贮藏第10天,OXY处理组的果肉可溶性总糖含量是CK的1.89倍。
图8B可知,在贮藏0~10 d,CK和OXY处理组的黄皮果肉蔗糖含量均呈快速下降趋势,与CK相比,OXY处理组的果肉蔗糖含量均保持较高水平。进一步分析可知,在贮藏期8~10 d,OXY处理组的果肉蔗糖含量显著高于CK(P<0.05)。在贮藏第10天时,OXY处理组的果肉蔗糖含量是CK的3.20倍。
因此,OXY处理能维持采后黄皮果实果肉较高的可溶性总糖和蔗糖含量,进而提高果肉营养品质。
果皮褐变和失水是黄皮果实采后品质劣变最常见的症状[4]。而果实组织细胞膜结构完整性的缺失是导致其发生褐变和失水的重要因素,这在龙眼[11]、荔枝[12]等果实上已经得到了证实。本研究发现,OXY处理能维持采后黄皮果实较低的果皮细胞膜透性,维持黄皮果实较好的细胞膜结构的完整性,保持较低的褐变指数和褐变度、较高的果实商品率和较低的失重率,进而保持果实较好的贮藏特性,这与姜雪等[10]采用外源OXY处理荔枝果实上的研究结果一致。
为了避免发生酶促褐变,通常果实组织液泡中的酚类物质(如总酚)与位于细胞膜、细胞质、叶绿体等质体中的酚酶是分离的,但是果皮细胞受损或细胞区室化结构被破坏,将促进酚酶和酚类底物之间的接触,进而诱发酶促褐变[13]。本研究发现,与CK相比,OXY处理组在贮藏期具有较高的果皮总酚含量、L*值和h值,较低的POD活性、褐变指数和褐变度;在贮藏4~10 d具有较低的PPO活性。因此认为,OXY处理可通过降低黄皮果皮PPO和POD活性,减缓总酚氧化降解,从而减缓果皮褐变而保持其外观品质。这与陈春等[8]在鲜切苹果上的研究结果一致。王锋等[22]在甜樱桃的研究结果表明,外源褪黑素处理可以延缓POD和PPO活性的上升,保持较高的多酚含量,抑制甜樱桃果实褐变的发生;杨菊等[23]研究发现,外源抗坏血酸可以延缓采后香蕉果皮褐变的发生;LIN等[24]在龙眼果实上的研究表明,采用外源没食子酸丙酯处理可以延缓采后龙眼果实褐变并增强其耐贮性,以上研究结果与本研究结果相似。
此外,姜雪等[10]在荔枝上的研究结果表明,OXY处理可以提高采后荔枝果实的营养物质如TSS、TA、维生素C和可溶性糖的含量,这与本研究结果一致。蒋璇靓等[25]在余甘子上的研究表明,褪黑素处理可以维持采后余甘子果肉较高的TSS、维生素C、TA含量从而保持其果肉营养品质,这与本研究结果类似。
综上所述,0.2 g/L OXY处理能维持采后黄皮果实较低的果皮细胞膜透性、褐变指数和褐变度,维持较高的果实商品率和较低的失重率,进而保持果实较好的贮藏特性;OXY处理还能维持采后黄皮果实较高的果皮L*值、h值和总酚含量,而维持较低的果皮POD与PPO活性,从而保持较好的果皮外观色泽与品质;另外,OXY处理也能保持采后黄皮果实较高的果肉TSS、TA、维生素C、可溶性总糖和蔗糖含量,进而稳定较好的果肉营养品质。因此,外源OXY能作为一种安全的采后保鲜方法以提升黄皮果实的贮藏特性和采后品质,进而延长果实采后贮藏期。
