The effects of exogenous ethylene (ETH), 1-methylcyclopropene(1-MCP) and a combined ETH+1-MCP treatments on fruit storage quality and physiological changes were evaluated to investigate the effects of ethephon on the fruit appearance color and internal quality during the ripening process of mangoes Hongguifei. The results showed that compared with the control, both ETH and ETH+1-MCP treatments significantly accelerated the decline in fruit firmness, titratable acid, chlorophyll, flavonoids, total phenolics, and ascorbic acid content, increased cell membrane permeability, and promoted in a* color value, total soluble solids (TSS) in the early stage of storage, and carotenoid. Among the treatments, the ETH+1-MCP group showed the highest level of TSS and carotenoids while 1-MCP group effectively delayed the loss of nutrients and firmness, and inhibited chlorophyll degradation in the fruit peel. Further analysis of the metabolomes of the CK and ethylene treatment groups revealed 140 different metabolites, among which 88 were upregulated and 52 were downregulated. The content of flavonoids in the fruits of the ETH treatment group was significantly lower than that of the control group, indicating that the ETH treatment accelerated the degradation of flavonoids. This study revealed the metabolic mechanism of ETH in promoting the ripening and quality formation of mangoes, which would provide a theoretical basis for in-depth research on the mechanism of post-ripening quality changes in mangoes.

为了探究乙烯利对芒果后熟过程中果实外观色泽及内在品质的影响,本研究以海南红贵妃芒果为材料,研究外源乙烯(ETH)、1-甲基环丙烯(1-MCP)和ETH+1-MCP复合处理对果实贮藏品质和生理变化的影响。结果表明:与对照相比,ETH和ETH+1-MCP复合处理显著加速了果实硬度、可滴定酸、叶绿素、类黄酮、总酚和抗坏血酸含量的下降,增强了细胞膜透性,促进了色度值a*、贮藏初期可溶性固形物(TSS)、类胡萝卜素含量的升高,其中ETH+1-MCP复合处理的果实TSS、胡萝卜素含量最高,1-MCP处理有效延缓了果实营养物质和硬度的下降,抑制了果皮叶绿素的降解。进一步对CK和乙烯处理组的代谢组进行分析,共发现140种差异代谢物,其中88种上调,52种下调,且其中大多数黄酮类物质在ETH处理组果实中的含量显著低于对照组,说明ETH处理加速了类黄酮物质的降解。本研究结合生理和代谢组揭示ETH对芒果催熟品质形成的代谢机理,为深入研究芒果后熟品质变化机制提供理论依据。

为了探究乙烯利对芒果后熟过程中果实外观色泽及内在品质的影响,本研究以海南红贵妃芒果为材料,研究外源乙烯(ETH)、1-甲基环丙烯(1-MCP)和ETH+1-MCP复合处理对果实贮藏品质和生理变化的影响。结果表明:与对照相比,ETH和ETH+1-MCP复合处理显著加速了果实硬度、可滴定酸、叶绿素、类黄酮、总酚和抗坏血酸含量的下降,增强了细胞膜透性,促进了色度值a*、贮藏初期可溶性固形物(TSS)、类胡萝卜素含量的升高,其中ETH+1-MCP复合处理的果实TSS、胡萝卜素含量最高,1-MCP处理有效延缓了果实营养物质和硬度的下降,抑制了果皮叶绿素的降解。进一步对CK和乙烯处理组的代谢组进行分析,共发现140种差异代谢物,其中88种上调,52种下调,且其中大多数黄酮类物质在ETH处理组果实中的含量显著低于对照组,说明ETH处理加速了类黄酮物质的降解。本研究结合生理和代谢组揭示ETH对芒果催熟品质形成的代谢机理,为深入研究芒果后熟品质变化机制提供理论依据。

The effects of exogenous ethylene (ETH), 1-methylcyclopropene(1-MCP) and a combined ETH+1-MCP treatments on fruit storage quality and physiological changes were evaluated to investigate the effects of ethephon on the fruit appearance color and internal quality during the ripening process of mangoes Hongguifei. The results showed that compared with the control, both ETH and ETH+1-MCP treatments significantly accelerated the decline in fruit firmness, titratable acid, chlorophyll, flavonoids, total phenolics, and ascorbic acid content, increased cell membrane permeability, and promoted in a* color value, total soluble solids (TSS) in the early stage of storage, and carotenoid. Among the treatments, the ETH+1-MCP group showed the highest level of TSS and carotenoids while 1-MCP group effectively delayed the loss of nutrients and firmness, and inhibited chlorophyll degradation in the fruit peel. Further analysis of the metabolomes of the CK and ethylene treatment groups revealed 140 different metabolites, among which 88 were upregulated and 52 were downregulated. The content of flavonoids in the fruits of the ETH treatment group was significantly lower than that of the control group, indicating that the ETH treatment accelerated the degradation of flavonoids. This study revealed the metabolic mechanism of ETH in promoting the ripening and quality formation of mangoes, which would provide a theoretical basis for in-depth research on the mechanism of post-ripening quality changes in mangoes.

芒果(Mangifera indica L.)属漆树科、杧果属常绿乔木,因其果实口感、风味独特,营养物质丰富而备受消费者喜爱。目前我国芒果种植区域主要在海南、云南、贵州、广西、广东等热带、亚热带地区[1]。近年来,海南省芒果产业发展迅速,已经成为海南省热带园艺产业的主导、优势产业,在海南农业发展和乡村振兴中发挥着重要的作用。
果实的外观色泽是评价芒果商业价值的重要指标,也是影响消费者选择的重要因素,同时也是评价果实成熟度最直观的指标。芒果外表皮色泽丰富,包括黄色、绿色、红色等多种颜色[2]。大量研究表明,叶绿素、花青素和类胡萝卜素是果皮中的主要色素,参与了果实光合作用和果皮着色[3]。芒果果皮颜色的变化主要由叶绿素的降解、花青素和类胡萝卜素等的积累共同作用[4]
芒果中富含大量有益于人体健康的生物活性物质,如维生素C(Vc)、有机酸、类黄酮、β-胡萝卜素、多酚以及各种矿物质元素,具有抗癌、抗菌和抗氧化等作用[5]。芒果属于典型的热带水果,其采摘后易成熟软化和腐烂,保质期很短。同时,芒果是呼吸跃变型果实,具有后熟的特点,采摘后自然成熟需要5~8 d[6],生产上通常在生理成熟期采摘,经过催熟处理后使其达到最佳的食用品质[7]。乙烯利(ETH)是生产上常用的催熟物质,具有促进芒果转色和成熟的显著作用[8]。ETH使用的浓度、时间等与果实的成熟和品质密切相关,ETH使用不当常常导致果实软化过快,易出现炭疽病,同时营养丧失严重。1-甲基环丙烯(1-MCP)是一种有效的乙烯抑制剂,可与乙烯受体发生竞争性的结合,从而抑制乙烯信号转导,延缓果实成熟和着色[9]。近年来,随着研究技术的不断发展成熟,众多研究者从关注果实外观和一些生理品质的研究,逐渐转向深入研究果实中次生代谢物质对果实品质的影响。一些次生代谢物质如花青素、类黄酮、类胡萝卜素和挥发性代谢物等的检测随着代谢组学技术的发展,已在百香果[10]、枇杷[11]、黄桃[12]等多种果实中广泛应用。但芒果代谢组的研究相对较少,且主要集中在香气成分、色泽变化等单一代谢通路[13-15]。本研究从广靶代谢组方面全面分析,通过对比乙烯利处理和自然成熟过程中芒果的代谢差异物变化,揭示芒果后熟过程中的关键代谢物质,为深入研究芒果后熟品质变化机制提供理论依据。
本研究以海南主栽芒果品种红贵妃为试验材料,探讨ETH处理、1-MCP处理和ETH+1-MCP联合处理对芒果理化性质、果皮色泽以及果实营养物质的影响,并通过代谢组揭示ETH处理组和对照组之间的代谢差异,旨在为芒果着色和品质形成的调控提供理论依据,为改善红贵妃芒果采后品质和贮藏保鲜提供技术参考。
供试芒果品种为红贵妃,于2025年2月、4月采自海南省三亚市崖州区保平村的芒果种植园,采收成熟度为八成熟(开花后110 d,果核坚硬)。采摘后在2 h内立即运至海南大学三亚南繁研究院实验室,选取无病虫害,无机械伤,形状、大小和色泽相对一致的芒果果实,留取0.5 cm果柄作为试验材料。
主要试剂:氢氧化钠、2,6-二氯酚靛酚、酚酞、标准抗坏血酸,购自上海麦克林生化科技股份有限公司;磷酸氢二钠、磷酸二氢钠、草酸,购自上海源叶生物科技有限公司;福林酚、碳酸钠,购自上海阿拉丁生化科技股份有限公司;盐酸、甲醇、丙酮,购自西陇科学股份有限公司;乙烯利,购自上海试四化学品有限公司;聪明鲜,购自山东奥维特生物科技有限公司;0.02 mm聚乙烯保鲜袋(食品级),购自石家庄铭塑塑料制品有限公司。
主要仪器设备:CM-700色差仪,购自日本Minolta公司;Multiskan GO台式酶标仪,购自美国赛默飞世尔科技;TA touch质构分析仪,购自上海腾拔仪器科技有限公司;数显糖度计,购自日本ATAGO公司;电导率仪,购自德国Knick公司。
将新鲜芒果清洗干净后晾干2 h,随机分成4组,每组50个果实,进行4个处理:(1)CK,对照组不处理,将果实放入保鲜袋;(2)ETH,用0.5 g/L的乙烯利溶液浸泡5 min,密封24 h后放入保鲜袋;(3)1-MCP,将1包聪明鲜(SmartFresh,0.625 g,1-MCP有效成分为0.014%,USA)和果实一起放入保鲜袋;(4)ETH+1-MCP,先用0.5 g/L的乙烯利溶液浸泡5 min,密封24 h后,加入一包聪明鲜,放入保鲜袋。将各处理置于(25±1)℃、相对湿度为80%~85%条件下贮藏,每隔2 d取样进行指标测定。3个果实为1次重复,每个处理重复3次。
参考WANG等[16]的方法,在芒果果实中部赤道面的两侧选取2个点,削去果皮,将直径为2 mm的探头插入果肉中,深度约0.5 cm,记录显示器上的数值,取平均值代表该果实的硬度(N)。质构分析仪的工作参数设置如下:试验前速度为2 mm/s,试验速度为4 mm/s,试验后速度为3 mm/s,中间间隔为2 s。
参考ZHANG等[17]的方法,用相对电导率表示细胞膜透性。取下果皮,刮去残留果肉,切成细丝,称取2 g新鲜果皮浸没在20 mL蒸馏水中,静置30 min,上下摇晃均匀后使用电导率仪测定初始电导率γ1,然后沸水浴15 min,待其自然冷却1 h后测定电导率γ2,每个处理重复3次。细胞膜透性的计算公式为:
可溶性固形物含量采用数显糖度计进行测定,将果肉混匀后置于纱布中,挤出汁液滴到糖度计上,记录显示器数值,每个处理重复3次,平均值代表该果实的可溶性固形物含量(%)。
可滴定酸含量参考张瑜等[18]的方法,称取2 g果肉,加入少量石英砂和5 mL蒸馏水于冰上研磨至匀浆,12 000 r/min离心20 min,取上清液1 mL用蒸馏水稀释10倍,加入2滴酚酞指示剂,用0.01 moL/L的氢氧化钠进行滴定,30 s不褪色,记录氢氧化钠用量并计算可滴定酸含量(%)。
芒果果实的色泽采用手持分光色差仪进行测定,选择果皮颜色分布均匀的赤道点作为测量点,测量并记录果皮的a*值。a*值若为负,表示果皮颜色偏向绿色;若为正,则表示果皮颜色偏向红色。
叶绿素和类胡萝卜素含量的测定参考RICCARDI等[19]的方法,略有改动。称取0.5 g样品,加入少量石英砂和8 mL 80%的丙酮,在黑暗条件下充分研磨并转移到10 mL离心管中,加入0.1 g碳酸钙摇匀,避光提取2 h,4 ℃、12 000 r/min离心20 min,取上清液在470、645、663 nm的波长下测量吸光度,叶绿素和类胡萝卜素含量以mg/g表示。
参照曹建康等[20]的方法测定类黄酮含量,采用福林酚比色法测定总酚含量[21],稍有改动。准确称取2 g果肉,加入少量石英砂和8 mL无水甲醇,充分研磨成匀浆并转移到10 mL离心管中,避光提取2 h,4 ℃,12 000 r/min离心20 min,取上清液0.2 mL并测定其在325 nm处的吸光值,计算类黄酮的含量。另取0.1 mL上清液加入2.7 mL 10%的碳酸钠溶液和0.2 mL的福林酚试剂,50 ℃水浴30 min,于760 nm处测定吸光值,计算总酚含量。
参照ZHANG等[22]的方法,用2,6-二氯酚靛酚滴定法测定抗坏血酸含量。称取2 g果肉,加入5 mL 2%的草酸溶液,冰上研磨成匀浆,转移到10 mL离心管中,4 ℃,12 000 r/min离心20 min,取上清液1 mL用草酸稀释10倍,用2,6-二氯酚靛酚溶液进行滴定,30 s不褪色,记录读数并计算,抗坏血酸含量以mg/100 g表示。
收集处理12 d的CK和ETH处理组样本,各3个重复,用于代谢组分析。使用Vanquish(Thermo Fisher Scientific)超高效液相色谱仪,利用Agilent ZORBAXEclipeseXDB-C18色谱柱(250 mm×4.6 mm,5 μm)分析,色谱条件如下:流速,1.0 mL/min;柱温,30 ℃;进样量,10.0 μL;检测波长,210 nm;以乙腈(A)和0.02%磷酸水溶液(B)作为流动相,进行梯度洗脱,程序为:0~20 min,3%~5% A;20~35 min,5%~15% A;35~55 min,15%~23% A;55~75 min,23%~65% A;75~77 min,65%~80% A;77~82 min,80%A;82~84 min,80%~3% A;84~89 min,3% A。采用Q-Exactive型高分辨率串联质谱仪检测洗脱代谢物。使用自建数据库MWDB(Metware database,武汉迈特维尔生物科技公司),利用三重四级杆质谱进行代谢物定量和二级谱信息进行物质定性,并委托武汉迈特维尔生物科技公司进行数据分析。
以上试验均采用3次生物学重复,使用Microsoft Excel 2019软件对数据进行处理分析,使用GraphPad Prism 8.0软件分析数据并制图,使用多因素方差分析(Multi-way ANOVA),F检验进行差异显著性分析,采用不同字母表示组间差异显著性(P<0.05)。
不同处理后的芒果果皮颜色变化如图1所示,在贮藏过程中,果皮颜色由绿色逐渐转为黄色,但颜色转变的程度和速度差异较大。与对照相比,ETH和ETH+1-MCP处理加速了果实转黄,其中ETH处理组在第4天开始发生转色,ETH+1-MCP处理组在第6天开始转色。而1-MCP处理则抑制了果实转色,不仅颜色变化缓慢,而且着色不均,后期甚至出现黑色斑点。整体而言,ETH+1-MCP处理组的果实外观最好,不仅着色均匀且果皮干净无斑点。
图2A所示,随着贮藏时间的延长,果实硬度呈逐渐下降的趋势,其中ETH处理组果实硬度下降速度最快,ETH+1-MCP处理组次之,1-MCP处理组果实硬度下降最慢,但贮藏后期无明显差异,说明ETH处理加快了果实的成熟和软化,1-MCP处理则正好相反。
图2B所示,随着贮藏时间的增长,果实细胞膜透性呈逐渐上升的趋势。ETH处理组果实细胞膜透性在贮藏第2天便迅速升高,到贮藏第12天仍较其他处理更高。1-MCP处理在贮藏前4 d显著抑制了果实细胞膜透性的增加,但随后迅速升高。ETH+1-MCP处理组加速了果实细胞膜透性的增加,但和ETH处理相比,仍具有一定的抑制效果。由此可知,ETH处理加快了果实的成熟和软化,1-MCP处理则正好相反,尤其是在贮藏前期效果显著。
图2C所示,随着贮藏时间的增加,TSS含量呈先上升后下降的趋势,其中ETH处理组果实在第4天最先达到峰值,随后缓慢下降,1-MCP处理组果实则在第6天达到峰值,且所有处理中含量最高,达到了14.3%,随后逐渐下降。值得注意的是,ETH+1-MCP处理组果实在贮藏后期仍保持较高的TSS含量水平。
图2D所示,在果实贮藏过程中,芒果果肉酸度呈持续下降的趋势,但下降速度差异较大,从大到小依次是ETH处理组、ETH+1-MCP处理组、CK组和1-MCP处理组。
贵妃芒果果皮以红绿色为主,故本研究以a*值作为评估芒果转色程度的主要指标。如图3所示,各处理组果皮的a*值均呈逐渐上升趋势。其中CK组和ETH处理组的a*值的上升速度显著高于ETH+1-MCP处理组和1-MCP处理组(P<0.05)。在整个贮藏过程中,1-MCP处理抑制了叶绿素降解,其果皮叶绿素a、叶绿素b和总叶绿素含量均显著高于其他处理组(P<0.05)。相反,ETH处理促进了叶绿素降解,从而加快果实着色。而ETH+1-MCP处理相较于ETH处理而言,显著抑制了叶绿素降解。由此可见,1-MCP处理可以通过减缓叶绿素的降解而影响果实转色。
图4所示,果实类黄酮、总酚和抗坏血酸含量均呈逐渐下降的趋势,但1-MCP处理的类黄酮、总酚和抗坏血酸含量显著高于其他处理组(P<0.05),说明1-MCP处理可以有效减缓芒果果肉营养物质的流失。ETH和ETH+1-MCP处理加速了果实类黄酮、总酚和抗坏血酸的流失,这些物质也是果实重要的抗氧化物质,可能在抵抗果实衰老中发挥重要作用。类胡萝卜素是果实呈现黄色的主要色素,同时也是果实重要的营养物质,其呈现出逐渐上升的趋势,ETH和ETH+1-MCP处理组果实的类胡萝卜素含量上升速度显著高于对照组和1-MCP处理组,其中ETH+1-MCP处理组最快,在第10天达到峰值,此时类胡萝卜素含量是对照组的2.25倍(P<0.05)。
为了进一步揭示ETH处理对采后芒果果实品质的影响,对ETH处理组和CK组果实进行代谢组分析。通过对2组样品的主成分分析(图5A)发现,2组样品在3次生物学重复中的代谢物组成明显分离。代谢组分析结果表明2个处理间共有140种差异代谢物,其中88种上调,52种下调(图5B)。与对照相比,ETH处理组芒果果实的大多数代谢物呈上调趋势(图5C),将排名前50的差异代谢物的相对表达量的变化绘制成小提琴图(图6)。利用KEGG数据库对差异代谢物进行注释分析,共注释到6个主要差异代谢途径:次生代谢物生物合成、类黄酮生物合成、黄酮和黄烷醇生物合成、苯丙氨酸代谢、吡啶类生物碱的生物合成和氨基酸的生物合成(图7)。由此可见,黄酮类物质代谢受到ETH处理的影响较大,可能是成熟芒果口感和风味更加丰富的重要原因。
黄酮类物质是果实重要的营养物质,同时在抗氧化和抗病方面发挥重要作用,为了更加清楚地了解ETH处理对果实黄酮物质含量的影响,将VIP>1、|log2FC|>5作为显著差异的阈值,从CK组和ETH处理组中筛选出12种明显差异表达的黄酮物质进行表达分析(图8)。与CK组相比,12种物质中有11种黄酮类物质在ETH处理组果实中的相对含量下降,包括佳木宁E2、大豆素Ⅲ、5,7,3′,4′-四羟基-6,8-二异戊二烯异黄酮等,显著上升的只有1种,即花旗松素*。这一结果与生理结果一致,即总黄酮含量呈逐渐下降趋势,且ETH处理加快了这一进程。该结果为探索芒果果实中类黄酮含量的调控措施和培育富含类黄酮的芒果新品种奠定基础。
外观色泽是芒果果实重要的商品性状之一。贵妃芒果的果皮颜色由叶绿素的降解以及花青素和类胡萝卜素的积累共同作用决定[4]。植物叶绿素降解的生物过程已被阐明[23-25],果实的叶绿素降解过程除了受到相关酶活性的影响,还受到诸多其他因素,如温度、光照及果实成熟状态等影响[26]。有研究表明套袋处理能显著降低猕猴桃[27]和桃[28]中叶绿素的含量;高温能抑制香蕉[29]中叶绿素的降解,研究发现在25 ℃条件下蜜橘果实叶绿素降解加快,而在32 ℃条件下则抑制了叶绿素的降解[30]。果实花青素是一类重要的植物次生代谢产物,主要通过苯丙氨酸代谢途径和类黄酮途径合成,受一系列酶的调节[31]。类胡萝卜素的生物合成途径以异戊烯焦磷酸为前体,经过异戊二烯焦磷酸异构酶、植物烯合成酶、胡萝卜素不饱和酶等一系列酶的作用下催化形成类胡萝卜素[32-33]。果实花青素和类胡萝卜素的积累受到温度、光照和激素等因素的影响[34-35]。如大量研究表明不同光质会影响柑橘[36]、梨[37]、草莓[38]、葡萄柚和番茄[39]等果实中类胡萝卜素和花青素的积累。本研究中,1-MCP处理显著抑制了叶绿素的降解导致芒果果皮不能正常转色,而ETH和ETH+1-MCP处理则加速了叶绿素的降解,另外ETH+1-MCP处理组果实的叶绿素含量相较于ETH处理较高,进一步说明ETH对叶绿素降解具有促进作用,而1-MCP处理具有抑制作用。相似的结果同样在其他水果中发现,外源乙烯显著促进了香蕉[40-41]、番木瓜[42]、苹果[43]和番茄[44]中叶绿素的降解。在叶绿素降解的同时,类胡萝卜素快速积累,而喷施1-MCP可以抑制乙烯释放,从而抑制类胡萝卜积累,这与研究中得到的结果一致,ETH+1-MCP处理组类胡萝卜素含量峰值是对照组的2.25倍,说明ETH和1-MCP处理在调控芒果果皮色泽方面效果显著。
芒果果实在贮藏过程中由于自身呼吸代谢和能量消耗,营养物质会逐渐流失,风味和口感也会随之变差。硬度、细胞膜透性和可溶性固形物含量代表了芒果的成熟度,本研究中,芒果果实硬度呈现出逐渐下降的趋势,其中ETH处理组果实硬度下降速度最快,但贮藏后期果实硬度变化不大,这是由于红贵妃芒果质地细腻,纤维较少,8 d后果实基本已经达到完熟,此时硬度已经达到最低,因此不再继续下降。芒果可溶性固形物的含量呈先上升后下降的趋势,这是由于贮藏前期淀粉降解,可溶性糖含量增加,但贮藏后期由于果实呼吸以及其他代谢消耗能量,果实又会出现褪糖现象,其中乙烯利处理组果实TSS含量上升最快,在第4天就达到了峰值,而1-MCP处理由于降低了呼吸等能量消耗延缓了TSS的升高,峰值出现相对较晚,在第6天达到峰值,相应地褪糖也更为缓慢,因此积累了更多的可溶性糖,其峰值也是各个处理组中最高的。试验结果表明ETH可以起到快速催熟的作用,在香蕉[45]、木瓜[46]等呼吸跃变型果实中也已得到充分证实。但伴随而来的是芒果果实营养物质的快速流失,有机酸、VC、类黄酮和总酚含量快速下降。而1-MCP处理则起到完全相反的作用,结果表明1-MCP处理延缓了果实硬度、可滴定酸、类黄酮、总酚和抗坏血酸含量的下降,在贮藏后期仍保持了果实较高的甜度,具有很好的保鲜效果。这一结果与XIONG等[47]在猕猴桃,袁富容等[48]在蓝莓以及包特等[49]在南红梨上采用1-MCP进行保鲜得到的结果一致。
黄酮类物质是果实中重要的营养物质,同时也是抗氧化和抗菌物质,不仅可以提高果实抗病性,还能抵抗病原菌的侵染[50]。在本研究中,异黄酮(3',5'-二异戊烯基染料木素*、6,8-二苯基染料木素、5,7,3',4'-四羟基-6,8-二异戊二烯异黄酮),黄酮醇(robipseudin A*)以及其他类黄酮(桑根酮醇N、桂木宁E2)在CK组的含量显著高于ETH处理组,这些黄酮类物质含量的下降降低了芒果对病原菌的抵抗,因此这可能是乙烯催熟芒果易感病的重要原因之一。高文科等[51]也得出过类似的结论,异黄酮[芒柄花素-7-O-(6″-丙二酰)葡萄糖苷]、黄酮醇(山奈酚-7-O-葡萄糖醛酸苷)、木质素(落叶松脂素-4'-O-葡萄糖苷)以及香豆素(秦皮素)等次生代谢产物分别增加3.12倍、8.56倍、12.74倍和14.41倍,这些黄酮类和异黄酮类物质都有增强果实抗病性的作用。
综合分析表明,ETH和ETH+1-MCP复合处理在提升果实外观品质上要优于1-MCP处理,而1-MCP处理在提升果实内在品质上要优于其他处理。利用广泛靶向代谢组学共检测到140种差异代谢物和12种类黄酮代谢物,全面解析了ETH处理对果实色泽转化和内在品质形成的代谢机理,为深入研究芒果后熟品质变化机制提供理论依据,为优质芒果的生产提供参考。
