Coconut water is sterile in the interior cavity of the coconut fruit. However, once the coconut is opened and repackaged, the coconut water beverage may become a breeding ground for bacteria and fungi, leading to the production of harmful mycotoxins. This study aimed to detect the usage of preservatives and sweeteners, also the levels of the common carcinogenic contaminant benzo[a]pyrene and harmful mycotoxins in bottled coconut water sold on the market. By using national standard methods, no preservative such as benzoic acid and sorbic acid, no sweetener sodium saccharin, and no contaminant benzo[a]pyrene were detected in this batch of coconut water beverages. This study also investigated the level of mycotoxins in bottled coconut water stored at low temperatures (4-8 ℃) for 21 days. No zearalenone (ZEN) or deoxynivalenol (DON) was detected in the coconut water stored at 4-8 ℃ for 21 days. During monitoring, the response signal for aflatoxin B1 (AFT B1) in one of the samples had an increasing trend with prolonged storage time but the level did not exceed the quantitative limit specified in the national standard method. Electron microscope observation of the bottled coconut water stored at low temperatures revealed a large number of moving microorganisms in 1-3 days, with the aerobic plate count increasing exponentially. After 21 days of low-temperature storage, infrared spectra showed new characteristic absorption peaks, indicating that the coconut water had undergone qualitative changes. It is recommended that bottled coconut water from freshly cut coconuts should be consumed on the same day.

椰子水在椰子果腔内部是无菌的,然而开口重新封装后的椰子水饮料可能会滋生细菌及真菌,从而产生有害的真菌毒素。本研究旨在检测市面上销售的瓶装椰子水中防腐剂、甜味剂的使用情况,以及常见的致癌污染物苯并[a]芘、有害真菌毒素含量。采用国家标准方法,本批椰子水饮料中未检出防腐剂苯甲酸、山梨酸,甜味剂糖精钠,以及致癌污染物苯并[a]芘。本研究还探究在低温4~8 ℃条件下存储21 d的瓶装椰子水中真菌毒素情况,结果显示,未检出玉米赤霉烯酮(ZEN)及脱氧雪腐镰刀菌烯醇(DON)。在监测过程中,发现其中1份样品随着存放时间的延长,其黄曲霉毒素B1(AFT B1)响应信号呈增长趋势,但含量低于国家标准方法中所规定的定量限。通过电子显微镜监测低温存储的瓶装椰子水,发现1~3 d内有大量蠕动的微生物,且菌落总数呈倍数增长。存储21 d后红外光谱图显示,出现新的特征吸收峰,表明椰子水已发生质变。因此本研究建议鲜切椰子的瓶装椰子水,常规密封冷藏的条件下应在当天饮用。

椰子水在椰子果腔内部是无菌的,然而开口重新封装后的椰子水饮料可能会滋生细菌及真菌,从而产生有害的真菌毒素。本研究旨在检测市面上销售的瓶装椰子水中防腐剂、甜味剂的使用情况,以及常见的致癌污染物苯并[a]芘、有害真菌毒素含量。采用国家标准方法,本批椰子水饮料中未检出防腐剂苯甲酸、山梨酸,甜味剂糖精钠,以及致癌污染物苯并[a]芘。本研究还探究在低温4~8 ℃条件下存储21 d的瓶装椰子水中真菌毒素情况,结果显示,未检出玉米赤霉烯酮(ZEN)及脱氧雪腐镰刀菌烯醇(DON)。在监测过程中,发现其中1份样品随着存放时间的延长,其黄曲霉毒素B1(AFT B1)响应信号呈增长趋势,但含量低于国家标准方法中所规定的定量限。通过电子显微镜监测低温存储的瓶装椰子水,发现1~3 d内有大量蠕动的微生物,且菌落总数呈倍数增长。存储21 d后红外光谱图显示,出现新的特征吸收峰,表明椰子水已发生质变。因此本研究建议鲜切椰子的瓶装椰子水,常规密封冷藏的条件下应在当天饮用。

Coconut water is sterile in the interior cavity of the coconut fruit. However, once the coconut is opened and repackaged, the coconut water beverage may become a breeding ground for bacteria and fungi, leading to the production of harmful mycotoxins. This study aimed to detect the usage of preservatives and sweeteners, also the levels of the common carcinogenic contaminant benzo[a]pyrene and harmful mycotoxins in bottled coconut water sold on the market. By using national standard methods, no preservative such as benzoic acid and sorbic acid, no sweetener sodium saccharin, and no contaminant benzo[a]pyrene were detected in this batch of coconut water beverages. This study also investigated the level of mycotoxins in bottled coconut water stored at low temperatures (4-8 ℃) for 21 days. No zearalenone (ZEN) or deoxynivalenol (DON) was detected in the coconut water stored at 4-8 ℃ for 21 days. During monitoring, the response signal for aflatoxin B1 (AFT B1) in one of the samples had an increasing trend with prolonged storage time but the level did not exceed the quantitative limit specified in the national standard method. Electron microscope observation of the bottled coconut water stored at low temperatures revealed a large number of moving microorganisms in 1-3 days, with the aerobic plate count increasing exponentially. After 21 days of low-temperature storage, infrared spectra showed new characteristic absorption peaks, indicating that the coconut water had undergone qualitative changes. It is recommended that bottled coconut water from freshly cut coconuts should be consumed on the same day.

椰子水以其独特清爽的口感,天然、营养且健康的特性,备受广大消费者的青睐[1-2]。为了便于携带、存储及饮用,商家以瓶装天然椰子水饮料的形式销售。椰子水在椰子果腔内部是无菌的,然而开口重新封装后的椰子水可能会受到器具、环境及微生物的污染,且其品质同样受储存方式的影响。尽管热杀菌能确保瓶装椰子水无菌污染,但易变色和变味[3-4]。未经消毒的嫩椰子水曾检测出大肠杆菌、沙门菌、蜡样芽孢杆菌、金黄色葡萄球菌等[5]
低温贮运椰子水可抑制微生物繁殖,减缓食物腐败,保障椰子水口味及品质[6],但储存过长也会引起一定的霉变及质变。常见的真菌毒素玉米赤霉烯酮(ZEN)、黄曲霉毒素B1(AFT B1)、脱氧雪腐镰刀菌烯醇(DON)对环境变化和热处理不敏感,在加工过程中保持稳定,在造成食物污染的同时,也会随着食物链在动物机体内不断积累。
玉米赤霉烯酮是镰刀菌属真菌产生的次级代谢产物,且在许多高等植物体内也存在。ZEN污染较为广泛,毒性大[7],可通过霉变的谷物及副产品被动物吸收,也可直接或间接地进入人体,且在体内有一定的残留和蓄积,从而使动物出现亚急性和慢性中毒,对人类健康造成危害[8]
黄曲霉毒素(aflatoxin)主要由黄曲霉和寄生曲霉等真菌经代谢产生的一组结构类似的化合物。它具有很强的致癌性、致突变性和致畸毒性,在已发现的20余种黄曲霉毒素及其衍生物中,以黄曲霉毒素B1的毒性最大[9]。黄曲霉毒素引起的不良反应被称为黄曲霉毒素中毒,其特征是严重的肝损伤、黄疸、出血、水肿和死亡;慢性亚致死暴露会引起免疫抑制、营养功能障碍和癌症[10]。在农作物的生长收获、运输、贮存及加工过程中均有可能发生黄曲霉毒素的污染。被污染的农作物及农副产品包括动物饲料通过食物链造成动物性产品污染,最终威胁人体健康[11]
脱氧雪腐镰刀菌烯醇又名呕吐毒素,20世纪70年代在一次赤霉病大麦中毒事件中被发现,由禾谷镰刀菌等真菌产生。研究表明,DON虽然无明显的致癌、致突性,但具有广泛的毒性,对动物免疫功能具有明显的影响,DON可引起免疫抑制或免疫刺激[12]。研究表明,DON引起的肠道菌群变化主要与代谢和消化功能有关[13-14]。近几年的研究表明人类食管癌、免疫球蛋白A肾病的患病原因可能与DON有关,严重威胁了人类和动物的健康[15-16]
苯并[a]芘是一种常见的高活性间接致癌物,对人体健康有很大威胁[17]。有研究表明,食品在加工过程中产生的苯并[a]芘是构成食品污染的主要因素,对食品的安全造成很大的危害,流行病学调查提示苯并[a]芘与肺癌、膀胱癌、皮肤癌和乳腺癌等的发生密切相关[18-19]
食用变质或霉变的食物可能会引起过敏、中毒,甚至癌变的风险。食品添加剂苯甲酸及山梨酸为常见防腐剂,具有防腐和保鲜的作用;糖精钠为常见甜味剂,可增加食物甜度,改善其风味。但长期或过量摄入添加剂会对人体造成一定伤害,因此添加剂的规范使用及限量标准,需受到严格的监管及监测[20-21]
本研究以随机采购的三亚市面销售瓶装天然椰子水饮料为研究对象,检测食品中常见的添加剂苯甲酸(防腐剂)、山梨酸(防腐剂)及糖精钠(甜味剂)的使用情况,以及检测致癌物苯并[a]芘污染情况。同时,监测在低温4~8 ℃条件下,随着存储时间的增加,瓶装椰子水中菌落总数以及真菌毒素玉米赤霉烯酮、黄曲霉毒素B1、脱氧雪腐镰刀菌烯醇含量变化情况。本研究旨在通过国家标准方法,检测低温条件下椰子水污染及有害因素,以期为保障食品安全提供有效依据及经验。
主要试剂:瓶装椰子水饮料YZ01和YZ02(随机在海南三亚的不同商家采购,每个商家的样品至少由3个椰子水混匀后再分装成若干份,并用封口机封装);苯甲酸(1000 μg/mL,BePure);山梨酸(1000 μg/mL,中国计量科学研究院);糖精钠(1000 μg/mL,中国计量科学研究院);苯并[a]芘(benzo[a]pyrene,1000 μg/mL,坛墨质检科技股份有限公司);乙腈中黄曲霉毒素B1溶液(10 μg/mL,坛墨质检科技股份有限公司);乙腈中黄曲霉毒素B1-13C17(0.5 μg/mL,阿尔塔科技有限公司);脱氧雪腐镰刀菌烯醇溶液(1000 μg/mL,阿尔塔科技有限公司);脱氧雪腐镰刀菌烯醇-13C15溶液(25 μg/mL,阿尔塔科技有限公司);乙腈中玉米赤霉烯酮溶液(1000 μg/mL,阿尔塔科技有限公司);溴化钾(光谱纯,天津市科器高新技术公司);平板计数琼脂(PCA)。
主要仪器设备:傅里叶变换红外光谱仪(株式会社岛津制作所);DM2500照相显微镜(LEICA),液质联用仪(QTRAP 4500,安捷伦科技有限公司);液相色谱仪(LC-20AD,株式会社岛津制作所);高压蒸汽灭菌器(MLS-3781L-PC,松下);生化培养箱(LRH-250F,上海一恒科学仪器有限公司);超净工作台(SW-CJ-1FD,苏净空气技术有限公司);酸度计(METTLER TOLEDO)。
将样品YZ01和YZ02放置在4~8 ℃冰箱中存储,于首日对样品中添加剂、污染物及真菌毒素等含量进行测定,随后每隔7 d定期监测1次真菌毒素含量变化,连续监测3周。同时,使用显微镜及红外光谱仪对其进行表征,并用酸度计监测pH。
参照《食品安全国家标准 食品中苯甲酸、山梨酸和糖精钠的测定》(GB 5009.28—2016)(第一法),称取2 g椰子水,测定椰子水中防腐剂苯甲酸、山梨酸和甜味剂糖精钠的含量。
参照《食品中苯并[a]芘的测定》(GB 5009.27—2016),称取1 g椰子水,测定椰子水中苯并[a]芘含量。
(1)玉米赤霉烯酮(ZEN)测定。参照《食品安全国家标准 食品中玉米赤霉烯酮的测定》(GB 5009.209—2016)的第一法液相色谱法,称取10 g椰子水,测定椰子水中玉米赤霉烯酮含量。
(2)脱氧雪腐镰刀菌烯醇(DON)测定。参照《食品安全国家标准 食品中脱氧雪腐镰刀菌烯醇及其乙酰化衍生物的测定》(GB 5009.111—2016)的第一法同位素稀释液相色谱-串联质谱法,称取2 g椰子水,测定椰子水中脱氧雪腐镰刀菌烯醇含量。
(3)黄曲霉毒素B1(AFT B1)测定。参照《食品安全国家标准 食品中黄曲霉毒素B族和G族的测定》(GB 5009.22—2016)的第一法同位素稀释液相色谱-串联质谱法,称取5 g椰子水,测定椰子水中黄曲霉毒素B1含量。
参照《食品安全国家标准 食品微生物学检验 菌落总数测定》(GB 4789.2—2022),量取椰子水,通过不同稀释倍数,用平板计数法测定椰子水中菌落总数。
将分装好的椰子水待测液摇匀,使用移液枪吸取200 μL待测液滴在载玻片上,盖上盖玻片,避免产生气泡,用吸水纸吸去多余液体,随后放置在显微镜载物台上观察。
使用KBr压片法测试椰子水的红外光谱。使用3 mL一次性吸管吸取2滴待测液与2 g KBr粉末混匀,使用玛瑙研钵进行研磨,充分研磨后,放入常压干燥箱中60 ℃条件下烘干24 h,随后抽真空减压干燥,60 ℃条件下继续干燥12 h。将干燥后的样品进行压片,并放入红外光谱仪的样品室中进行测试。
分装好的YZ01和YZ02按照上述添加剂、污染物、真菌毒素、菌落总数、显微镜及红外光谱检测方法取完样后,剩余的样品进行pH测定。将电极浸入待测溶液中,轻轻搅拌以确保电极与溶液充分接触。等待读数稳定后,记录其pH。
回收率计算公式:

图1A、图1B为新鲜椰子在无菌取样后,60 min内用显微镜观察的椰子水情况,新鲜的椰子水澄清无异味,并有细小的圆形颗粒物,主要为椰子水中丰富的多糖及蛋白质等营养物质,未观察到有活体微生物。图1C、图1D为瓶装椰子水4~8 ℃冰箱中存储1 d后的显微镜图,此时在样品YZ01中可观察到有蠕动的杆状细菌。瓶装椰子水在4~8 ℃冰箱中放置3 d后,YZ01及YZ02样品均可明显观察到活体微生物,由于不同商家卫生条件不一,观察到YZ01中活体细菌数量较YZ02多,细菌等微生物呈聚集状态(图1E、图1F)。
椰子水在椰子果腔内部是无菌的,但开口后的椰子水会受到器具及环境的污染,椰子水中富含糖类营养物质可供各种微生物利用并繁殖[22],受微生物污染的椰子水在短时间内能快速繁殖,在4~8 ℃环境中放置1 d后的瓶装椰子水不建议再饮用。
采用平板计数法检测无菌开启的新鲜椰子水、商家自然开启的新鲜椰子水及瓶装椰子水在4~8 ℃冰箱中储存数天后的菌落总数,结果见表1。通过对照试验可知,商家现开启的新鲜椰子水菌落总数高于无菌开启的新鲜椰子水,表明椰子在开启时易受刀具、器皿、椰子壳表面微生物污染。在4~8 ℃下存储1 d的瓶装椰子水YZ01及YZ02的菌落总数分别为1.0×104、7.6×103 CFU/mL,与新鲜开启椰子水菌落总数相比,瓶装椰子水菌落总数呈几十倍甚至上百倍增长。放置2 d和3 d后,瓶装椰子水外观变得浑浊,伴有轻微胀气现象,发生明显变质。
椰子水为易腐食品,椰子开启过程中极易受微生物污染,微生物污染椰子水,即使在常规密封冷藏的条件下,1~3 d内也能快速繁殖。杨一冲等[23]发现在室温条件下自然发酵的椰子水中微生物增殖旺盛,细菌的增殖在第1天可达峰值,真菌数量在第3天达到峰值。这与本研究显微镜观察到的微生物增长趋势一致。因此,建议鲜切椰子的瓶装椰子水应在当天饮用。
图2可知,椰子水在3380、2930 cm-1处特征吸收峰分别代表O-H及C-H伸缩振动。1411、1250 cm-1吸收峰是由于羧基中COO-对称振动及羧基中的C-O拉伸振动所引起的[24-25],同时观察到放置久了的椰子水羧基的吸收峰变宽,可能是椰子水自然发酵过程中总酸总体趋势变高引起的[26]。在1720 cm-1处有弱的羰基C=O吸收峰。这些均与椰子水中富含多种醇类、酸类、酯类及醛类的结果相吻合[27-29]。4~8 ℃冰箱中储存21 d后,在700、850、946 cm-1处出现了新的特征吸收峰,表明椰子水已变质,此时的椰子水肉眼可观察变得浑浊,且有明显的沉淀物。
根据GB 5009.28—2016(第1法)检测椰子水中防腐剂苯甲酸、山梨酸和甜味剂糖精钠的含量。定量限为0.01 g/kg,定量限曲线点为0.4 μg/mL,本试验目标物标准曲线范围为0.4~50.0 μg/mL,线性均在R2=0.9970以上(图3A),均未检测出添加剂苯甲酸、山梨酸、糖精钠。为控制数据质量,在YZ02样品中加入苯甲酸、山梨酸及糖精钠各40 μg,测得加标样品苯甲酸、山梨酸及糖精钠浓度分别为0.82、0.85、0.85 μg/mL,回收率均在99%以上(图3B)。
根据GB 5009.27—2016的方法检测椰子水中污染物苯并[a]芘情况。谷物及其制品中苯并[a]芘定量限为0.5 μg/kg,定量限曲线点为0.25 ng/mL。本试验目标物标准曲线范围为0.10~20 ng/mL,线性R2=0.9999(图4A)。从液相色谱图可知,样品中均未检出苯并[a]芘。同时,在YZ02中加入3 ng标准物质苯并[a]芘,测得加标浓度为1.22 ng/mL,稀释倍数为2,回收率为81.6%(图4B)。
根据GB 5009.209— 2016的方法,粮食和粮食制品中ZEN定量限17 μg/kg,定量限曲线点为6.8 ng/mL。本次试验目标物标准曲线范围为8~200 ng/mL,线性R2=0.9999(图5A)。从试验数据可知,密封良好的椰子水在4~8 ℃环境下存放3周,均未检出ZEN。同时,在YZ02样品中加入2 μg标准物质ZEN,测得加标浓度为74.08 ng/mL,回收率为92.6%(图5B)。
食物在适宜的温度及湿度条件下,易导致禾谷镰刀菌、拟轮枝镰刀菌等病原真菌产生聚酮类次级代谢产物ZEN[30]。本次瓶装椰子水样品均未检出ZEN,说明可能椰子在成长采摘前,开口及封装过程中未受到相关镰刀菌的侵染,且低温(4~8 ℃)储存条件下也不利于真菌繁衍。
根据GB 5009.111—2016的方法,DON的定量限为20 μg/kg,定量限曲线点为10 ng/mL。本试验目标物标准曲线范围为5~400 ng/mL,DON离子对1线性方程为y=1.38252x+0.01530(R2=0.9986),离子对2线性方程为y=0.88151x+0.00302(R2=0.9991)(图6A)。连续监测3周,均未检出DON。同时在YZ02中加入100 ng标准物质DON,测得加标浓度为24.36 ng/mL,回收率为97.44%(图6B)。
DON耐热、耐压且耐储存,霉变的食物在储存过程中,DON仍能保留其原有的毒性[31]。本次椰子水样品均未检出DON,说明瓶装椰子水可能未受到相关禾谷镰刀菌、雪腐镰刀菌等镰刀菌的侵染。在未添加防腐剂的食物中,低温储存能有效减缓食物霉变腐败。
根据GB 5009.22—2016的方法,AFT B1的检出限为0.03 μg/kg,检出限曲线点为0.03 ng/mL;定量限为0.1 μg/kg,定量限曲线点为0.1 ng/mL。本次试验目标物标准曲线范围为0.03~20.00 ng/mL,AFT B1离子对1和离子对2线性R2均为0.9998(图7A),离子对1主要为定量离子,离子对2主要为定性离子。检测发现样品YZ01随着存放时间的增加,其AFT B1离子对1和离子对2响应信号也随之增加。在第14天时检测到YZ01中AFT B1响应信号接近检出限0.03 ng/mL,随后随着时间的增加,其AFT B1响应信号也增强,但均低于定量限,未能准确定量(图7B)。而另一份椰子水样品YZ02随着存放时间增加,其AFT B1离子对1及离子对2响应信号无明显变化,未检出AFT B1图7C)。在YZ02中加入10 ng标准物质AFT B1,测得加标浓度为2.08 ng/mL,回收率为104%。
大部分真菌在20~28 ℃均能生长繁衍,而黄曲霉是自然环境中较为常见的霉菌,其最低生长温度为6~8 ℃,其孢子可扩散至空气传播[32-33],因此受到黄曲霉侵染的椰子水,即使在低温4~8 ℃条件下依然能生存,在存放21 d过程中,不断产生黄曲霉毒素B1
新鲜椰子水的初始pH一般为4.50~5.30,本研究检测的新鲜椰子水pH为5.29~5.32。在4~8 ℃储存条件下,椰子水pH变化如表2所示。通过pH监测,发现在低温条件下存放1~3 d的椰子水pH变化不大。这与耿蕾等[34]的研究在4 ℃下储存的椰子水pH较为稳定结果一致。另有杨一冲等[23]研究表明,室温环境下存放的椰子水pH前3 d下降趋势明显。因此建议开口后的椰子水若不能即刻饮用完毕,应放置在低温环境中暂存,低温有利于延缓椰子水的变质。
椰子水作为重要的天然饮料,其食品安全及风险监测尤为重要。然而,国内外对椰子水品质跟踪监测方面的研究较少,耿蕾等[34]通过探究37、24、14、4 ℃温度下贮藏破壳后的椰子水吸光值、pH、白利糖度和电导率4个指标的变化,对比发现,破壳后的椰子水随储存温度降低,吸光值和pH保持稳定的时间段均延长,低温有利于开壳椰子水的贮藏,4 ℃为最佳贮藏温度,这与本研究中低温储存所监测的pH较为稳定的结果一致。SUGANTHI等[35]利用LC-MS/MS监测5~10 mL/100 mL浓度的戊唑醇根施椰子树后,3 d内其椰子水及椰子果仁农药残留情况均低于欧盟所规定的最大残留限值0.05 μg/g。而椰子水在真菌毒素、致癌物苯并[a]芘及添加剂方面的监测却鲜有报道。《食品安全国家标准 食品中真菌毒素限量》(GB 2761—2017)中明确规定了多种食物脱氧雪腐镰刀菌烯醇、玉米赤霉烯酮、黄曲霉毒素B1的限量指标,如谷物小麦、大麦及麦片等的脱氧雪腐镰刀菌烯醇限量为1000 μg/kg,玉米赤霉烯酮限量为60 μg/kg,而黄曲霉毒素B1限量值更为严格,谷物小麦、大麦、调味品酱油、醋等的黄曲霉毒素B1限量为5 μg/kg,婴幼儿谷类辅助食品、孕妇及乳母营养补充食品(只限于含谷类、坚果和豆类的产品)等特殊食品的黄曲霉毒素B1限量为0.5 μg/kg。同时,《食品安全国家标准 食品添加剂使用标准》(GB 2760—2024)也严格规定了食品添加剂苯甲酸、山梨酸及糖精钠的使用原则、使用范围及最大使用量,标准中未明确规定的可添加食品,则不允许使用添加剂。《食品安全国家标准 食品中污染物限量》(GB 2762—2022)明确规定了谷物及其制品、肉及肉制品、乳及乳制品等的苯并[a]芘限量值。因此,对开口后的椰子水添加剂及有害物质进行监测具有重要意义。
本研究以随机采购的瓶装天然椰子水为研究对象,在样品中均未检测出防腐剂苯甲酸、山梨酸及甜味剂糖精钠,也未检测出致癌污染物苯并[a]芘。对存放在4~8 ℃冰箱中的椰子水每隔7 d监测1次玉米赤霉烯酮、黄曲霉毒素B1、脱氧雪腐镰刀菌烯醇的含量,连续监测3周,均未检出玉米赤霉烯酮及脱氧雪腐镰刀菌烯醇。在未添加防腐剂的食物中,低温储存能有效减缓食物霉变腐败。而黄曲霉最低生长温度为6~8 ℃,在YZ01中,监测到随着存放时间的延长,其黄曲霉毒素B1响应信号呈增长趋势,但含量均低于国家标准规定的定量限。通过测定菌落总数,在4~8 ℃下存储1 d的瓶装椰子水菌落总数与新鲜开启的椰子水菌落总数相比,瓶装椰子水菌落总数呈几十倍甚至上百倍增长。电子显微镜监测发现,存放1~3 d的瓶装椰子水已滋生大量微生物。椰子水为易腐食品,在椰子开启过程中极易受微生物污染,各商家卫生条件不一,因此建议鲜切椰子的瓶装椰子水应在当天饮用。鉴于低温有利于椰子水保持pH及吸光值稳定,开口后的椰子水若不能即刻饮用完,应放置在低温环境中暂存。本研究旨在通过国家标准方法检测低温条件下椰子水污染及有害因素,以期为保障食品安全提供有效依据及经验。
