The aim of the study was to investigate the differences in fruit quality and conduct a comprehensive evaluation of major mango cultivars across different regions in Guangxi. Four cultivars (Jinhuang, Guifei, Tainong, and Guiqi) from four producing areas (Baise, Nanning, Yulin, and Qinzhou) were selected as the research subjects. The quality of mangoes was assessed using national standard analytical methods. Systematic analyses were performed via correlation analysis, cluster heatmap analysis, and principal component analysis (PCA). Jinhuang exhibited higher average values in single-fruit weight (748.86 g), peel thickness (2.30 mm), stone weight (98.37 g), edible rate (89.91%), fruit shape index (1.92), firmness (10.53 N), and sugar-acid ratio (52.73). Guiqi showed superior performance in color difference (19.30), SSC (22.67%), Vc (52.73 mg/100 g), total sugar (52.73 mg/g), and β-carotene (39.30 mg/g). Significant regional differences (P<0.05) were observed in peel thickness, sugar-acid ratio, Vc, total sugar, and β-carotene among the same cultivars from different areas. Correlation analysis revealed strong positive correlations between single-fruit weight and stone weight, edible rate, and fruit shape index (r=0.78); color difference and SSC (r=0.75); SSC and total sugar (r=0.81); and Vc and β-carotene (r=0.87). Fruit shape index was negatively correlated with Vc and β-carotene (r=-0.85), while titratable acidity showed a strong negative correlation with sugar-acid ratio (r=-0.80). Cluster analysis categorized the 13 indices into four groups, morphological traits, peel characteristics, physicochemical properties, and nutritional quality. PCA extracted four principal components (cumulative variance contribution: 88.41%), capturing the majority of original quality information. Comprehensive scores ranked cultivars as Guiqi>Jinhuang>Tainong>Guifei and regions as Baise>Nanning>Yulin>Qinzhou. Significant quality variations existed among cultivars, with Guiqi demonstrating superior sweetness and nutritional quality compared to the more acidic Guifei. Guiqi from Baise, Jinhuang and Guifei from Nanning, and Tainong from Yulin exhibited optimal fruit quality traits, highlighting regional and cultivar-specific advantages.

为探究广西不同区域主栽芒果品种果实品质差异,以广西百色、南宁、玉林、钦州4个区域的金煌、贵妃、台农、桂热82号(桂七)芒果品种为研究对象,采用国家标准分析方法测定芒果品质,并结合相关性分析、聚类分析及主成分分析(PCA)进行系统评价。结果表明:金煌品种单果质量(748.86 g)、果皮厚度(2.30 mm)、果核质量(98.37 g)、可食率(89.91%)、果形指数(1.92)、硬度(10.53 N)、固酸比(52.73)的平均值均高于其他品种,桂七品种色差值(19.30)、可溶性固形物含量(22.67%)、维生素C含量(52.73 mg/100 g)、总糖含量(52.73 mg/g)、β-胡萝卜素含量(39.30 mg/g)的平均值均高于其他品种。不同区域同一品种芒果果实果皮厚度、固酸比、维生素C含量、总糖含量、β-胡萝卜素含量差异显著(P<0.05);相关性分析表明,单果质量与果核质量、可食率、果形指数呈强正相关(r=0.78),色差值与可溶性固形物呈强正相关(r=0.75),可溶性固形物与总糖呈强正相关(r=0.81),维生素C与β-胡萝卜素呈强正相关(r=0.87),果形指数与维生素C、β-胡萝卜素呈强负相关(r=-0.85),可滴定酸与固酸比呈强负相关(r=-0.80);聚类分析将13项指标分为4类,分别为外观形态描述、皮层描述、理化性质描述、营养品质描述。主成分分析结果表明,提取4个主成分(累计方差贡献率为88.41%),能够代表原品质性状的绝大部分信息;综合得分结果显示,品种品质得分排序为:桂七>金煌>台农>贵妃,区域品质得分排序为:百色>南宁>玉林>钦州。综上,不同品种之间具有显著的品质特征,桂七较甜,贵妃偏酸,桂七在营养品质及综合表现上具显著优势,百色桂七、南宁金煌、南宁贵妃、玉林台农果实品质特性较佳。

为探究广西不同区域主栽芒果品种果实品质差异,以广西百色、南宁、玉林、钦州4个区域的金煌、贵妃、台农、桂热82号(桂七)芒果品种为研究对象,采用国家标准分析方法测定芒果品质,并结合相关性分析、聚类分析及主成分分析(PCA)进行系统评价。结果表明:金煌品种单果质量(748.86 g)、果皮厚度(2.30 mm)、果核质量(98.37 g)、可食率(89.91%)、果形指数(1.92)、硬度(10.53 N)、固酸比(52.73)的平均值均高于其他品种,桂七品种色差值(19.30)、可溶性固形物含量(22.67%)、维生素C含量(52.73 mg/100 g)、总糖含量(52.73 mg/g)、β-胡萝卜素含量(39.30 mg/g)的平均值均高于其他品种。不同区域同一品种芒果果实果皮厚度、固酸比、维生素C含量、总糖含量、β-胡萝卜素含量差异显著(P<0.05);相关性分析表明,单果质量与果核质量、可食率、果形指数呈强正相关(r=0.78),色差值与可溶性固形物呈强正相关(r=0.75),可溶性固形物与总糖呈强正相关(r=0.81),维生素C与β-胡萝卜素呈强正相关(r=0.87),果形指数与维生素C、β-胡萝卜素呈强负相关(r=-0.85),可滴定酸与固酸比呈强负相关(r=-0.80);聚类分析将13项指标分为4类,分别为外观形态描述、皮层描述、理化性质描述、营养品质描述。主成分分析结果表明,提取4个主成分(累计方差贡献率为88.41%),能够代表原品质性状的绝大部分信息;综合得分结果显示,品种品质得分排序为:桂七>金煌>台农>贵妃,区域品质得分排序为:百色>南宁>玉林>钦州。综上,不同品种之间具有显著的品质特征,桂七较甜,贵妃偏酸,桂七在营养品质及综合表现上具显著优势,百色桂七、南宁金煌、南宁贵妃、玉林台农果实品质特性较佳。

The aim of the study was to investigate the differences in fruit quality and conduct a comprehensive evaluation of major mango cultivars across different regions in Guangxi. Four cultivars (Jinhuang, Guifei, Tainong, and Guiqi) from four producing areas (Baise, Nanning, Yulin, and Qinzhou) were selected as the research subjects. The quality of mangoes was assessed using national standard analytical methods. Systematic analyses were performed via correlation analysis, cluster heatmap analysis, and principal component analysis (PCA). Jinhuang exhibited higher average values in single-fruit weight (748.86 g), peel thickness (2.30 mm), stone weight (98.37 g), edible rate (89.91%), fruit shape index (1.92), firmness (10.53 N), and sugar-acid ratio (52.73). Guiqi showed superior performance in color difference (19.30), SSC (22.67%), Vc (52.73 mg/100 g), total sugar (52.73 mg/g), and β-carotene (39.30 mg/g). Significant regional differences (P<0.05) were observed in peel thickness, sugar-acid ratio, Vc, total sugar, and β-carotene among the same cultivars from different areas. Correlation analysis revealed strong positive correlations between single-fruit weight and stone weight, edible rate, and fruit shape index (r=0.78); color difference and SSC (r=0.75); SSC and total sugar (r=0.81); and Vc and β-carotene (r=0.87). Fruit shape index was negatively correlated with Vc and β-carotene (r=-0.85), while titratable acidity showed a strong negative correlation with sugar-acid ratio (r=-0.80). Cluster analysis categorized the 13 indices into four groups, morphological traits, peel characteristics, physicochemical properties, and nutritional quality. PCA extracted four principal components (cumulative variance contribution: 88.41%), capturing the majority of original quality information. Comprehensive scores ranked cultivars as Guiqi>Jinhuang>Tainong>Guifei and regions as Baise>Nanning>Yulin>Qinzhou. Significant quality variations existed among cultivars, with Guiqi demonstrating superior sweetness and nutritional quality compared to the more acidic Guifei. Guiqi from Baise, Jinhuang and Guifei from Nanning, and Tainong from Yulin exhibited optimal fruit quality traits, highlighting regional and cultivar-specific advantages.

芒果(Mangifera indica L.)是漆树科(Anacardiaceae)芒果属(Mangifera)常绿果树,属于典型的呼吸跃变型果实,素有“热带果王”的美誉[1]。芒果在中国的种植可以追溯至唐代,当时从印度引种,具有1300多年的栽培历史[2]。中国的芒果种植区主要包括广东、广西、海南、云南、四川、福建等省(区),目前广西芒果栽培面积和总产量均位于国内首位,对推动广西地方经济起到重要作用[3-4]。在广西14个市区中,百色是芒果种植面积和产量最多的市区,但随着芒果品种及种植技术的不断更新,目前,南宁、钦州、玉林市区的芒果种植面积也在扩大,据不完全统计,南宁、钦州、玉林芒果种植面积超6667 hm2。然而,随着芒果种植面积的扩大以及品种的增多,果实品质参差不齐问题随之出现。因此,研究不同区域主栽芒果品种果实品质特性,并进行综合评价,对广西不同区域芒果品种推广具有重要意义。
芒果品质特性参数主要包括单果质量、色泽、可溶性固形物、维生素C、总糖等物理特征参数和生化特征参数[5]。众多研究通过分析这些品质参数来评价芒果的品质特性,以挖掘出不同品种的品质特点。石胜友等[6]对中国热带农业科学院南亚热带作物研究所芒果种质圃的33份种质进行13个芒果品质性状分析结果表明,芒果果实品质性状变异丰富,品质性状之间存在相关性,但同时也具有独立性,以葡萄糖、果糖、总酚等8个品质参数为主要性状;柳觐等[7]对云南60份芒果栽培种质的单果质量、果皮厚度、果核质量、可食率、可溶性固形物含量、总糖含量和可滴定酸含量等7个品质性状参数的测定结果表明,大多数品质性状为独立性状,果核质量、可食率与单果质量三者之间、可溶性固形物含量与总糖含量间存在极显著正相关;李曦等[3]对百色地区栽培的17份芒果种质23个品质性状的分析结果表明,芒果果实数量性状变异丰富,变异系数范围为12%~96%,可食率与果实质量呈显著正相关,与β-胡萝卜素呈显著负相关,主成分分析结果表明,有9个性状为果实的主要性状,通过聚类分析可将芒果种质分成3个类群。由于不同产地种植环境所处的积温、降雨、光照、土壤等条件不同,种植出的果实品质也会存在差异。孙达等[8]对11个脐橙产地收集到的22份纽荷尔脐橙果实样品进行可溶性糖、有机酸和主要苦味物质的测定结果表明,果实糖酸品质在不同产地间有一定差异;廖秋红[9]对我国17个产地的纽荷尔脐橙常规营养品质及矿质元素、糖酸组分、部分氨基酸组分含量等营养品质的研究结果表明,不同产地纽荷尔脐橙单果质量、果形指数和可溶性固形物、可滴定酸、维生素C含量,以及果皮、果肉中的矿质元素、糖酸组分、部分氨基酸组分含量等质量因子具有显著的地理差异性。谢若男等[10]对海南省(三亚、乐东、东方、昌江)两大芒果品种(台农、贵妃)品质特性的研究结果表明,不同产区同一品种芒果果实的糖类、维生素C含量品质性状差异显著,13个品质指标存在正相关或负相关,得出不同品种之间品质特征鲜明,不同区域品质特性最佳的区域。
目前,尚未见针对广西不同区域主栽芒果果实品质特性分析的研究报道,本研究拟通过对广西百色、玉林、南宁、钦州4个区域、4个芒果品种桂热82号、金煌、台农、贵妃的13个指标参数进行果实品质性状分析,并通过相关性分析、聚类分析、主成分分析来确定广西不同区域芒果品种的品质差异,为广西芒果品种布局及品种选育提供参考。
试验芒果样品分别采自广西百色、玉林、南宁、钦州4个区域,品种为桂热82号(桂七)、金煌、台农、贵妃。百色区域每个品种采集样品8份,玉林、南宁、钦州区域每个品种采集样品4份,样品共计80份。采摘时芒果达七八成熟[11]。样品编号如下:南宁贵妃(NNGF)、玉林贵妃(YLGF)、钦州贵妃(QZGF)、百色贵妃(BSGF)、南宁金煌(NNJH)、玉林金煌(YLJH)、钦州金煌(QZJH)、百色金煌(BSJH)、南宁台农(NNTN)、钦州台农(QZTN)、玉林台农(YLTN)、百色台农(BSTN)、钦州桂七(QZGQ)、南宁桂七(NNGQ)、玉林桂七(YLGQ)、百色桂七(BSGQ)。
主要试剂:氢氧化钠、氢氧化钾、偏磷酸、草酸(分析纯,国药集团化学试剂有限公司);2,6-二氯靛酚、标准抗坏血酸、酚酞(上海泰坦科技股份有限公司);甲醇、乙腈(色谱纯,美国Fisher公司);甲基叔丁基醚、正己烷(色谱纯,济南斯贝特化工有限公司);果糖、葡萄糖和蔗糖标准品(上海安谱实验科技股份有限公司);α-淀粉酶、木瓜蛋白酶(山东诺杰生物科技有限公司)。
主要仪器设备:色差仪LS173(深圳市林上科技有限公司);超声清洗器(广东洁盟超声实业有限公司);Waters e2695液相色谱仪(配置Waters 2414 RID示差折光检测器,美国Waters公司);C18色谱柱(4.6 mm×250 mm,5 μm)、氨基色谱柱(4.6 mm×250 mm,粒径5 μm,氨基硅烷键合硅胶为填充剂)(广州绿百草科学仪器有限公司);Fresco21高速冷冻离心机(赛默飞世尔科技公司)。
每个品种随机选取大小均一、无机械损伤的果实10个,用天平进行称量(精确至0.01 g)并记录;以果实的纵径和横径的比值作为果形指数;用游标卡尺测量果实厚度;以可食部分与单果质量的比值作为可食率;利用色差仪测定芒果表皮中L*a*b*值,其中L*表示亮度,a*表示红绿度变化(+a*表示红色,-a*表示绿色),b*表示黄蓝度变化(+b*表示黄色,-b*表示蓝色),根据公式计算色差值ΔE[12]。计算公式为:,式中,L*a*b*表示成熟芒果果肉的测定值,L0*a0*b0*表示标准色板的值(L*=82,a0*=12,b0*=52);使用硬度计测定样品果肉硬度,果实沿着赤道轴中心处将果皮削去,将探头沿中心测定上、中、下3点位置的硬度,硬度单位以牛顿(N)表示,以上指标平行测定3次。
(1)可溶性固形物、可滴定酸、固酸比、维生素C含量测定。可溶性固形物、可滴定酸含量分别参照标准GB/T 8210—2011《柑桔鲜果检验方法》中的手持式糖量计法和指示剂法进行测定;固酸比为可溶性固形物含量除以可滴定酸含量;维生素C含量参照GB 5009.86—2016《食品中抗坏血酸的测定》中2,6-二氯靛酚滴定法进行测定。
(2)总糖含量测定。总糖含量测定参照GB 5009.8—2016《食品安全国家标准食品中果糖、葡萄糖、蔗糖、麦芽糖、乳糖的测定》中高效液相色谱法。取混匀试样2.0 g,放置100 mL比色管中加入50 mL水,再缓慢加入5 mL乙酸锌溶液和5 mL亚铁氰化钾溶液,涡旋混匀,超声30 min,转移至100 mL容量瓶中并用水定容至刻度,混匀,静置,将提取液用滤纸过滤获取上清液后,用0.45 μm水性滤膜过滤至样品瓶,随后用高效液相色谱仪进行分析,根据样品峰面积和标准曲线来计算糖组分的含量,用高效液相色谱法对每个样品平行测定3次。总糖参照穆茜等[13]的方法计算。总糖(mg/g)=葡萄糖+果糖+蔗糖。
(3)β-胡萝卜素含量测定。参照GB/T 5009.83—2016食品中胡萝卜素的测定方法,以色谱条件二(食品中β-胡萝卜素的测定)计算结果,每个样品平行测定3次。
通过Excel 2021软件对数据进行收集整理,采用SPSS 22.0软件进行单因素方差分析(ANOVA),采用Duncan’s法进行多重比较分析(P<0.05);品质综合评估方法:首先对初始数据进行标准化预处理以消除量纲差异,运用Z-Score法实现数据规范化,然后运用主成分分析技术(PCA)从多维指标中筛选核心成分,通过计算各品质参数的特征值及其方差贡献率,并应用最大方差正交旋转法获取旋转后的因子载荷矩阵,继而采用汤姆逊回归模型估算各主成分得分值,根据Kaiser准则(特征值阈值设为1)确定有效主成分数量,最终以各主成分方差贡献率占比为加权系数,对各主成分得分实施线性加权运算,由此得出不同区域主栽芒果样本的果实品质综合评价值,以因子载荷≥0.8为显著贡献指标,主成分得分用于品种综合排名[14],并用Origin软件制作综合得分图;用Origin软件通过Pearson相关系数分析13项指标间的相关性,并进行聚类分析。
表1可知,不同区域单果质量金煌和贵妃之间差异显著,桂七、台农之间差异不显著,桂七的单果质量变化范围为247.80~322.30 g,变异系数为5.65%,变异系数最小;钦州区域的4个品种单果质量均值最大,金煌的单果质量变化范围为382.50~1009.90 g,变异系数为27.50%,变化区间最大;品种单果质量均值表现为:金煌>贵妃>桂七>台农。4个品种不同区域果皮厚度之间差异显著,桂七、台农之间差异不显著,桂七的果皮厚度变化范围为0.98~3.41 mm,变异系数为45.97;钦州区域的桂七、金煌果皮厚度最小,百色区域的台农果皮厚度最小,南宁区域的贵妃果皮厚度最小;变异系数最小的是金煌,为25.97%,变化范围为1.42~3.41 mm;品种果皮厚度均值表现为:金煌>桂七>贵妃>台农。不同区域果核质量金煌之间差异显著,台农之间差异不显著,桂七的果核质量变化范围为63.43~78.99 g,变异系数为6.02%,变异系数最小;钦州区域的金煌、台农果核质量最大,玉林区域的桂七、贵妃果核质量最小;品种果核质量均值表现为:金煌>贵妃>桂七>台农。不同区域可食率贵妃之间差异显著,贵妃的可食率变化范围为68.32%~79.77%,变异系数为4.04%,桂七、金煌、台农之间差异不显著;不同区域比较,百色区域桂七的可食率最高,南宁区域金煌的可食率最高,玉林区域台农的可食率最高,钦州区域贵妃的可食率最高;品种可食率均值表现为:金煌>台农>桂七>贵妃。
不同区域果形指数金煌和台农之间差异显著,桂七、贵妃之间差异不显著,桂七的果形指数变化范围为1.21~1.32,变异系数为2.75%,变异系数最小,金煌的果形指数变化范围为1.78~2.09,变异系数为4.70%,变异系数最大;百色、钦州区域的桂七果形指数均值最大,南宁区域的金煌、台农果形指数最大,玉林区域的贵妃果形指数均值最大;品种果形指数均值表现为:金煌>贵妃>台农>桂七。不同区域的色差值贵妃之间差异显著,桂七、金煌、台农之间差异不显著,贵妃的色差值变化范围为4.24~10.50,变异系数为28.34%,变异系数最大;南宁区域的桂七色差值均值最大,玉林区域的金煌、台农色差值最大,钦州区域的贵妃色差值均值最大;品种色差值均值表现为:桂七>台农>金煌>贵妃。不同区域硬度金煌、台农之间差异显著,桂七、贵妃之间差异不显著,金煌的硬度变化范围为8.53~19.89 N,台农的硬度变化范围为13.33~31.92 N,变异系数分别为29.37%、31.92%;百色区域的桂七、金煌、台农之间硬度均值最大,玉林区域的贵妃硬度均值最大;品种硬度均值表现为:金煌>贵妃>桂七>台农。
不同区域桂七、金煌、贵妃之间可溶性固形物含量差异显著,台农之间差异不显著,桂七的可溶性固形物含量变化范围为20.50%~25.80%,变异系数为7.40%,金煌的可溶性固形物含量变化范围为12.60%~18.90%,变异系数为7.18%,贵妃的可溶性固形物含量变化范围为10.00%~15.60%,变异系数为14.03%,变异系数最大。百色区域的桂七可溶性固形物含量均值最大,钦州区域的金煌、台农、贵妃均值最大;品种可溶性固形物含量均值表现为:桂七>台农>金煌>贵妃。不同区域的可滴定酸含量桂七、金煌、台农之间差异显著,贵妃之间差异不显著,桂七的可滴定酸变化范围为0.41%~0.69%,变异系数为19.04%,金煌的可滴定酸含量变化范围为0.21%~0.55%,变异系数为33.03%,变异系数最大,台农的可滴定酸变化范围为0.51%~1.04%,变异系数为27.55%,贵妃的变异系数为8.23%,变异系数最小。百色区域4个品种的可滴定酸含量均值最小;品种可滴定酸含量均值表现为:台农>桂七>金煌>贵妃。不同区域的固酸比4个品种之间差异显著,桂七的固酸比变化范围为29.71~59.53,变异系数为24.71%,变异系数最大,金煌的固酸比变化范围为32.36~78.10,变异系数为23.41%,台农的固酸比变化范围为18.08~36.18,变异系数为19.10%,贵妃的固酸比变化范围为38.89~68.10,变异系数为15.23%,变异系数最小;百色区域的桂七、金煌的固酸比均值最大,玉林区域的台农固酸比均值最大,钦州区域的贵妃固酸比均值最大;品种固酸比均值表现为:金煌>贵妃芒>桂七>台农。
不同区域的维生素C含量4个品种之间差异显著,桂七的维生素C含量变化范围为26.78~45.70 mg/100 g,变异系数为13.73%,变异系数最大,金煌的维生素C含量变化范围为10.16~16.54 mg/100 g,变异系数为14.25%,台农的维生素C含量变化范围为25.89~26.33 mg/100 g,变异系数为10.87%,贵妃的维生素C含量变化范围为17.68~22.32 mg/100 g,变异系数为6.62%,变异系数最小;钦州区域的桂七维生素C含量均值最大,百色区域的金煌、台农维生素C含量均值最大,钦州区域的贵妃维生素C含量均值最大;各品种维生素C含量均值表现为:桂七>台农>贵妃>金煌。不同区域总糖含量4个品种之间差异显著,桂七的总糖含量变化范围为148.85~275.43 mg/g,变异系数为20.35%,金煌的总糖含量变化范围为99.28~200.68 mg/g,变异系数为18.75,台农的总糖含量变化范围为140.71~202.61 mg/g,变异系数为13.15,变异系数最小,贵妃的总糖含量变化范围为79.19~169.36 mg/g,变异系数为22.70,变异系数最大;钦州区域的桂七总糖含量均值最大,百色区域的金煌、台农总糖含量均值最大,钦州区域的贵妃总糖含量均值最大;品种总糖含量均值表现为:桂七>台农>贵妃>金煌。不同区域β-胡萝卜素含量4个品种之间差异显著,桂七区域的β-胡萝卜素含量变化范围为32.55~46.78 mg/g,变异系数为10.71%,金煌的β-胡萝卜素含量变化范围为7.89~12.32 mg/g,变异系数为13.06%,台农的β-胡萝卜素含量变化范围为13.43~16.99 mg/g,变异系数为7.45%,贵妃的β-胡萝卜素含量变化范围为17.87~21.87 mg/g,变异系数为6.84%,变异系数最小;百色区域的桂七、台农β-胡萝卜素含量均值最大,钦州区域的金煌、贵妃β-胡萝卜素含量均值最大;品种β-胡萝卜素含量均值表现为:桂七>贵妃>台农>金煌。
由不同区域主栽芒果品种的相关性分析(图1)可知,果实13个品质指标参数间存在相关性。单果质量与果核质量、可食率、果形指数之间呈强正相关(r=0.78,r=0.80,r=0.73,P<0.0001),说明单果质量越大,果核也越重,可食率也越高,果形指数也越大;果皮厚度与固酸比呈中度正相关(r=0.46,P<0.0001),说明果皮厚度越大,固酸比可能越高;果核质量与果形指数呈中度正相关(r=0.54,P<0.0001),说明果核质量越高,芒果果实纵径越大,显得果越肥大;可食率与果形指数呈中度正相关(r=0.62,P<0.0001),说明纵径越大,可能芒果可食率越高;色差值与可溶性固形物呈较强正相关(r=0.75,P<0.0001),说明色差变化大可能是成熟的标志之一,成熟后的芒果可溶性固形物含量也高;可溶性固形物与总糖呈强正相关(r=0.81,P<0.0001),说明总糖含量高时,可溶性固形物含量也高;可溶性固形物与维生素C、β-胡萝卜素呈中度正相关(r=0.65,r=0.65,P<0.0001),说明总糖含量高的芒果,维生素C、β-胡萝卜素含量也可能高;维生素C与β-胡萝卜素呈强正相关(r=0.87,P<0.0001),说明营养元素之间有一定的相关性,维生素C含量越高,β-胡萝卜素也越高。果形指数与维生素C、β-胡萝卜素呈较强负相关(r=-0.85,r=-0.78,P<0.0001),与可溶性固形物、可滴定酸呈中度负相关(r=-0.63,r=-0.64,P<0.0001);可滴定酸与固酸比呈强负相关(r=-0.80,P<0.0001)。
聚类分析是一种通过对样本进行分类的方法,能够基于相似性对样本进行分组,从而全面、客观且科学地反映研究对象之间的内在关系[15]。由图2可知,不同区域的贵妃、金煌、台农、桂七4个品种能够很好地聚成一类。而13个品质参数可以分为4类进行描述:单果质量、可食率、果形指数、果核质量归为一类;果皮厚度、硬度、固酸比归为一类;色差值、可溶性固形物、总糖、可滴定酸归为一类;维生素C、β-胡萝卜素归为一类。不同区域的贵妃色差值、可溶性固形物、总糖、可滴定酸含量较低,果核质量相对最高,南宁贵妃固酸比含量最高;不同区域金煌芒果单果质量、可食率、果形指数、果核质量含量相对较高,特别是南宁金煌单果质量、果核质量较高,维生素C、β-胡萝卜素含量较低,百色金煌硬度最大;不同区域的台农果皮厚度、硬度、固酸比含量相对较低,百色台农的果皮厚度最低,南宁台农的可滴定酸含量最高;不同区域桂七的可溶性固形物、总糖、维生素C、β-胡萝卜素含量相对较高,果形指数较小,百色桂七的总糖、β-胡萝卜素含量最高。
由不同区域主栽品种13个品质性状的主成分分析(表2)可知,以特征值大于1为标准,提取到4个主成分,第一主成分(PC1)的特征值为3.386,方差贡献率为20.465%,累计方差贡献率为26.045%;第二主成分(PC2)的特征值为3.163%,方差贡献率为24.322%,累计方差贡献率为50.377%;第三主成分(PC3)的特征值为2.700,方差贡献率为20.733%,累计方差贡献率为71.150%;第四主成分(PC4)的特征值为2.244,方差贡献率为17.625%,4个主成分的累计方差贡献率为88.414%,能够代表原品质性状的绝大部分信息(达85%以上),综合反映不同区域主栽品种的果实品质性状特性,可以作为评价的综合指标。
由芒果品质变量因子负荷量(图3)可知,主成分载荷系数的绝对值越大,主成分对该变量的代表性越大,PC1特征向量所凝聚的生物学信息主要是β-胡萝卜素、维生素C、果形指数、可食率;PC2特征向量所凝聚的生物学信息主要是色差值、可溶性固形物、总糖;PC3特征向量所凝聚的生物学信息主要是固酸比、硬度、可滴定酸;PC4特征向量所凝聚的生物学信息主要是果核质量、单果质量。综上所述,可将4个主成分命名如下:PC1为β-胡萝卜素、维生素C、果形指数、可食率的相关因子;PC2为色差值、可溶性固形物、总糖的相关因子;PC3为固酸比、硬度、可滴定酸的相关因子;PC4为果核质量、单果质量的相关因子。
不同区域主栽品种综合得分计算需要用到每个主成分特征值来计算每个主成分权重[16],即:W(权重)=PCX1/(PCX1+PCX2+PCX3+PCX4),X1、X2、X3、X4代表各PC值的特征值,综合得分=WX1×PCX1(置换值)+WX2×PCX2+WX3×PCX3+WX4×PCX4。由图4可知,不同区域主栽品种综合得分排名为:百色桂七>南宁桂七>钦州桂七>玉林桂七>南宁金煌>南宁贵妃>百色金煌>玉林金煌>钦州金煌>百色贵妃>玉林贵妃>玉林台农>百色台农>钦州台农>南宁台农>钦州贵妃。得分分别为1.2155、0.5195、0.5058、0.402、0.215、0.181、0.1472、0.1082、-0.1331、-0.2049、-0.372、-0.3929、-0.4862、-0.5271、-0.5802、-0.5977。
芒果经济价值的体现由果实品质性状参数来决定,果实的品质包括外观和内在2个方面,外部品质特征包括单果质量、硬度、形状等,内部品质特征包括可溶性固形物、糖、酸、可食率等[17]。本研究主要是从外部(单果质量、果皮厚度、果形指数、色差值、硬度)和内部(果核质量、可食率、可溶性固形物、可滴定酸、固酸比、维生素C、总糖、β-胡萝卜素)13个品质特征进行分析。本研究中固酸比是由可溶性固形物与可滴定酸的比值计算所得,而糖酸比是通过总糖与有机酸的比值计算所得,本研究选择固酸比而不选择糖酸比,有研究通过相关性分析表明糖酸比与固酸比呈显著正相关,可以用可溶性固形物与固酸比代替可溶性糖及糖酸比表示芒果的品质[10,16,18]。而类胡萝卜素中存在很多种类,在本研究中选择β-胡萝卜素是因为β-胡萝卜素主要让果实呈现橙色,也有研究表明,芒果中β-胡萝卜素含量与芒果Lab颜色值具有较高的相关性[19]。单果质量和果形指数是果实商品品质及价值重要体现参数[20-21]。本研究中,品种单果质量均值表现为:金煌>贵妃>桂七>台农,品种果形指数均值表现为:金煌>贵妃>台农>桂七。表明在果实大小及形状上,金煌与贵妃相对较突出,这与康专苗等[22]的研究结果基本一致。相关性分析结果也表明,单果质量与果形指数呈强正相关(r=0.80)。聚类分析结果表明单果质量与果形指数归为一类进行描述。果实风味和口感与可溶性固形物、总糖、总酸含量息息相关[23]。相关性分析研究结果表明,可溶性固形物与总糖呈强正相关(r=0.81,P<0.0001),说明总糖含量高时可溶性固形物含量也高。芒果果实含糖主要是葡萄糖、果糖、蔗糖,这些糖类统称为可溶性糖[24]。果实中的可溶性糖不仅对果实的甜度影响很大,而且对果实酸、类胡萝卜素等营养成分的合成也很关键[25]。本研究相关性分析结果也表明,总糖含量与维生素C、β-胡萝卜素呈中度相关,与酸呈中度负相关。有研究表明,果实品质由糖分积累的种类和含量决定,而蔗糖代谢相关酶是重要的影响酶类,主要包括转化酶(invertase,Ivr)、蔗糖合成酶(sucrose synthase,SS)和蔗糖磷酸合成酶(sucrose phosphate,SPS),蔗糖的积累会随着SS基因(CitSUSA)表达的增强而增加[26-27]。后期可对SS、SPS及相关的基因表达进行研究。
同一品种在不同区域的品质表现存在显著差异。赵家桔[26]通过对不同产区的金煌、贵妃、台农1号芒果果实品质的研究结果表明,金煌果实品质以云南保山较佳,福建晋宁较差,贵妃果实品质以海南乐东较好,三亚较差;而台农1号果实品质以广西南宁较好,湛江较差,其原因可能是由于受不同产区的纬度、气候、生态环境等气候条件及栽培管理、立地条件措施等影响有关。在本研究中,百色桂七的固酸比、总糖、β-胡萝卜素及维生素C含量均高于其他区域,可能得益于其独特的气候条件(如光照强度与积温)及微酸性土壤环境[28-29],百色的地理区域靠近云南,地势存在中间低,南北高的态势,年均日照时数为1869 h,年均气温达21.9 ℃,降雨量少[30],独特的地理位置可能是芒果品质较高的原因之一。钦州贵妃芒的可溶性固形物与固酸比最高,可能与当地水热资源丰富促进糖分积累有关[31-32]。黄立标等[33]通过主成分分析法对台农、象牙、金煌3种芒果构建主要品质综合评分模型结果表明,综合得分排序为:台农>金煌>象牙。本研究主成分分析结果表明,百色区域芒果在4个主成分的综合得分最高,体现了区域生态因子对品质的协同提升作用[34]。主成分分析与聚类分析结果表明,13项指标可归纳为形态、皮层、理化及营养4类,与李曦等[3]的研究结果相一致。维生素C与β-胡萝卜素的强正相关性(r=0.87)表明二者可能存在共享类异戊二烯代谢通路[11],这可能为后续研究同步提升营养品质提供调控靶点。在分子机理研究方面,AZAM等[35]使用17个简单序列重复(SSR)位点,鉴定出与16个表型性状(包括果实质量、果实宽度和可溶性固形物含量)相关的标记,PADMAKAR等[36]在48份芒果核心种质中研究31个SSR标记对各种果实性状(包括果实质量和果肉含量)的影响,并发现一个标记与果实质量相关。ELTHAR等[37]使用高质量的单核苷酸多态性(SNP)标记鉴定出与果实品质性状显著相关的标记,对这些显著标记附近的基因进行注释,揭示参与各种途径的不同蛋白质、酶和转录因子,编码丝裂原活化蛋白激酶(MAPKs)、丝裂原活化蛋白激酶(MAPKs)的3个基因LOC123211358、LOC123220493和LOC123200811在包括果实发育和果实大小性状在内的各种细胞过程中起着关键作用;通过研究与芒果果实品质性状相关的SNP标记和候选基因,根据群体结构和主成分分析(PCA)将芒果种质分为两组,一组是东南亚地区品种,另一组是南美洲品种,另外还识别出几个混合品种,这些品种是自然杂交、基因流和遗传漂变的结果。本研究结果表明,同一品种在广西百色、南宁、钦州、玉林的品质性状表现存在显著差异,但果实性状差异的机理还未明确,后期可对这些方面采用相应方法作进一步研究。
广西不同区域主栽芒果品种果实品质特性具有显著差异。桂七具有可溶性固形物、总糖及营养成分(维生素C、β-胡萝卜素)含量高的特点,是综合最优品种;金煌具有大果形、高可食率特性,商品性优势较高;贵妃具有低酸性的特点,适合鲜食市场需求。区域评价表明,百色产区的桂七、金煌综合得分最高,南宁贵妃与玉林台农次之。
