In this study, Dahong pitaya fruit were treated with different concentrations of MT (0.2, 0.4, 0.8 mmol/L) and stored at (7±1) ℃ and 75%-85% RH to clarify the effect of MT on its preservation. The results showed that 0.2 and 0.8 mmol/L MT could decrease the rot rate (DI) of pitaya fruit, while MT could decrease the respiratory rate (RR) and inhibit the increase of relative conductivity (RC). 0.2 mmol/L MT could effectively delay the decrease of the content of ascorbic acid (AsA), inhibit the increase of the content of malondialdehyde (MDA) and the formation of hydrogen peroxide (H2O2) and superoxide anion (), and increase the activity of antioxidant enzymes (SOD, CAT, APX), effectively promote reactive oxygen species (ROS) metabolism, scavenging free radicals, improve fruit antioxidant capacity. At the same time, 0.2 mmol/L MT could effectively maintain the activity of disease-resistance-related enzymes (PAL, POD and PPO), and induce and improve the disease resistance of pitaya fruit. In addition, 0.2 mmol/L MT could increase the contents of soluble sugar (SS) and flavonoids, but there was no significant difference in weight loss rate (WLR) between CK and MT. The correlation analysis showed that there were significant correlations among the 19 indexes, and the rotting rate of pitaya fruit was closely related to ROS metabolism disorder and membrane peroxidation. The results of principal component analysis showed that the score of 0.2 mmol/L MT was higher than that of CK at all storage periods, and the cumulative comprehensive score of 0.2 mmol/L MT was the highest, indicating that the effect of 0.2 mmol/L MT was the best. In conclusion, 0.2 mmol/L MT could delay senescence and maintain quality of pitaya fruit by maintaining ROS metabolism balance and improving disease resistance. This study would lay a foundation for the further research and application of MT technology in hylocereus longus storage at low temperature.

本研究以大红火龙果为试验材料,经不同浓度的褪黑素MT(0.2、0.4、0.8 mmol/L)处理,在温度(7±1)℃、相对湿度75%~85%的条件下贮藏,明确MT对其保鲜效果的影响。结果表明:0.2、0.8 mmol/L MT处理有效降低了火龙果果实腐烂率(DI),MT处理能有效降低呼吸速率(RR),抑制相对电导率(RC)的增加。0.2 mmol/L MT可有效延缓抗坏血酸(AsA)含量下降,抑制丙二醛(MDA)含量的增加及过氧化氢(H2O2)、超氧阴离子()的生成,提高抗氧化酶(SOD、CAT、APX)活力,有效促进活性氧(ROS)代谢,清除自由基,提高果实抗氧化能力。同时,0.2 mmol/L MT可有效维持抗病相关酶(PAL、POD、PPO)活力,从而诱导提高火龙果果实抗病能力。此外,0.2 mmol/L MT能增加可溶性糖(SS)、类黄酮(flavonoids)含量,但CK和MT处理果实的失重率(WLR)无显著差异。相关性分析表明,19个指标间存在显著相关性且火龙果果实腐烂率与ROS代谢紊乱、膜质过氧化密切相关。主成分分析表明,0.2 mmol/L MT处理的火龙果各贮藏时期得分均高于CK,且其累计综合评分最高,表明其综合保鲜效果最好。综上,0.2 mmol/L MT处理主要通过维持ROS代谢平衡及提高火龙果果实抗病性来延缓衰老并维持其品质。本研究为MT处理技术在火龙果低温贮藏保鲜中的深入研究及应用推广奠定基础。

本研究以大红火龙果为试验材料,经不同浓度的褪黑素MT(0.2、0.4、0.8 mmol/L)处理,在温度(7±1)℃、相对湿度75%~85%的条件下贮藏,明确MT对其保鲜效果的影响。结果表明:0.2、0.8 mmol/L MT处理有效降低了火龙果果实腐烂率(DI),MT处理能有效降低呼吸速率(RR),抑制相对电导率(RC)的增加。0.2 mmol/L MT可有效延缓抗坏血酸(AsA)含量下降,抑制丙二醛(MDA)含量的增加及过氧化氢(H2O2)、超氧阴离子()的生成,提高抗氧化酶(SOD、CAT、APX)活力,有效促进活性氧(ROS)代谢,清除自由基,提高果实抗氧化能力。同时,0.2 mmol/L MT可有效维持抗病相关酶(PAL、POD、PPO)活力,从而诱导提高火龙果果实抗病能力。此外,0.2 mmol/L MT能增加可溶性糖(SS)、类黄酮(flavonoids)含量,但CK和MT处理果实的失重率(WLR)无显著差异。相关性分析表明,19个指标间存在显著相关性且火龙果果实腐烂率与ROS代谢紊乱、膜质过氧化密切相关。主成分分析表明,0.2 mmol/L MT处理的火龙果各贮藏时期得分均高于CK,且其累计综合评分最高,表明其综合保鲜效果最好。综上,0.2 mmol/L MT处理主要通过维持ROS代谢平衡及提高火龙果果实抗病性来延缓衰老并维持其品质。本研究为MT处理技术在火龙果低温贮藏保鲜中的深入研究及应用推广奠定基础。

In this study, Dahong pitaya fruit were treated with different concentrations of MT (0.2, 0.4, 0.8 mmol/L) and stored at (7±1) ℃ and 75%-85% RH to clarify the effect of MT on its preservation. The results showed that 0.2 and 0.8 mmol/L MT could decrease the rot rate (DI) of pitaya fruit, while MT could decrease the respiratory rate (RR) and inhibit the increase of relative conductivity (RC). 0.2 mmol/L MT could effectively delay the decrease of the content of ascorbic acid (AsA), inhibit the increase of the content of malondialdehyde (MDA) and the formation of hydrogen peroxide (H2O2) and superoxide anion (), and increase the activity of antioxidant enzymes (SOD, CAT, APX), effectively promote reactive oxygen species (ROS) metabolism, scavenging free radicals, improve fruit antioxidant capacity. At the same time, 0.2 mmol/L MT could effectively maintain the activity of disease-resistance-related enzymes (PAL, POD and PPO), and induce and improve the disease resistance of pitaya fruit. In addition, 0.2 mmol/L MT could increase the contents of soluble sugar (SS) and flavonoids, but there was no significant difference in weight loss rate (WLR) between CK and MT. The correlation analysis showed that there were significant correlations among the 19 indexes, and the rotting rate of pitaya fruit was closely related to ROS metabolism disorder and membrane peroxidation. The results of principal component analysis showed that the score of 0.2 mmol/L MT was higher than that of CK at all storage periods, and the cumulative comprehensive score of 0.2 mmol/L MT was the highest, indicating that the effect of 0.2 mmol/L MT was the best. In conclusion, 0.2 mmol/L MT could delay senescence and maintain quality of pitaya fruit by maintaining ROS metabolism balance and improving disease resistance. This study would lay a foundation for the further research and application of MT technology in hylocereus longus storage at low temperature.

火龙果(Hylocereus monacanthus)属仙人掌科(Cactaceae)三角柱属(Hylocereus),原产于中南美洲及西印度群岛等地区,是一种攀援型重要热带经济果树[1],其果实是一种典型的非呼吸跃变型水果[2]。火龙果果实颜色亮丽、口感清甜嫩滑,营养丰富多样,深受消费者的青睐[3]。目前,我国火龙果以鲜销为主,伴随着夏秋季炎热多雨的天气,果实采后代谢旺盛且易受机械损伤,这加速果实衰老腐烂,缩短果实贮藏期,增大采后综合损耗,严重影响火龙果的销售。因此,延缓果实衰老和提高贮藏品质对火龙果保鲜研究具有重要意义。
我国火龙果采后保鲜技术主要包括低温保鲜[4-5]、热处理[6]、涂膜[7]、包装保鲜[8]、化学保鲜剂保鲜[9-10]、生物保鲜[11-12]及复合保鲜[13]等。随着人们安全知识和环保意识逐渐提高,人们认识到传统的化学杀菌剂长期使用不仅危害人类健康,而且在长期使用过程中造成环境污染,同时也导致大量耐药微生物的形成,使人类控制果实病害的难度不断增加。因此,开发安全、绿色、高效的采后保鲜方法迫在眉睫。
褪黑素(melatonin,MT)是一种高效的生物信号分子,广泛存在于植物的不同部位,参与种子萌发、光合作用、根部生长、果实成熟衰老以及生物和非生物胁迫的响应等多种生命活动的调控[14]。近年来MT处理作为一种绿色、高效的处理方式,已在多项研究中被证明能有效延缓果蔬采后衰老、维持贮藏品质、增强果实抗病及抗逆性,具有良好的应用前景[15]。WANG等[16]研究表明,用MT处理采后甜樱桃果实可抑制其腐烂率、呼吸速率、质量损失,增加内源MT水平并增强其抗氧化酶活力,从而有效延缓果实衰老;MT处理可增强番石榴几丁质酶和苯丙烷代谢途径相关防御酶的活力,增强果实的抗氧化能力,进而保持番石榴果实的品质并增强其抗病能力[17];MT处理白桑葚,可提升其总酚、类黄酮、抗坏血酸含量,增强果实抗氧化能力,从而延缓衰老并维持其贮藏品质[18]。此外,MT处理还可通过激活茉莉酸信号通路,增强防御相关酶活力,进而提升番茄果实对灰霉病的抗性[19]
以上研究表明,褪黑素具有良好的保鲜效果,但在火龙果的应用研究上还较少。为此,以大红火龙果为试材,采后经不同浓度MT处理,探究其对火龙果果实采后品质及抗病性的影响。研究结果有助于明确MT在火龙果保鲜、抗病中的生物学机制,为其在火龙果的贮藏保鲜中的应用提供理论基础。
大红火龙果购于海南昌江黎族自治县尚岭农业科技有限公司果园,八成熟采摘,采摘后立即运回实验室进行处理。试验果选取果形一致、大小均匀、果面干净且无物理损伤及病虫害侵染的果实。
仪器:GY-4型果实硬度计,艾德堡仪器公司;XMTD-204型数显恒温水浴锅(箱),江苏科析仪器有限公司;Sd30型电导率仪,梅特勒公司;5810R型高速冷冻离心机,Eppendorf公司;多功能酶标仪,TECAN公司;果蔬呼吸生理测定装置(程运江等[20])。
试剂:褪黑素(98%),上海麦克林生化科技有限公司;福林酚(2 mol/L),上海源叶生物科技有限公司;碳酸钠(分析纯),上海阿拉丁生物科技股份有限公司;没食子酸(纯度≥98%),上海安普实验科技股份有限公司;磷酸(85%),上海麦克林生化科技有限公司;三氯乙酸(分析纯),上海麦克林生化科技有限公司;氯化铁(分析纯),上海麦克林生化科技有限公司;1,10-菲啰啉(纯度98.74%),毕佳索(上海毕得医药科技股份有限公司);抗坏血酸,西陇科学股份有限公司。
将挑选好的火龙果置于室温下2 h去除田间热,用0.05%咪鲜胺浸泡消毒2 min,用清水冲洗干净后自然晾干。晾干后将火龙果随机分为4组,每组90个果,在不同浓度MT水溶液中浸果10 min,处理溶度分别为0.2、0.4、0.8 mmol/L,清水处理为对照(CK)。置于(7±1)℃,75%~85%相对湿度的冷库中贮藏,每4 d取1次样品。每次每组取9个果,取样时先用蒸馏水清洗去除残留在萼片上的MT,取赤道部位1 cm厚的切片,将果皮果肉分开,分别置于液氮中磨粉,分装后冻存,用于后续指标的测定。
腐烂率(decay incidence,DI),果实腐烂面积占整果面积的百分比超过5%定义为腐烂果,每组30个果,重复3次,计算公式:腐烂率=(腐烂果总数/果实总数)×100%。采用称重法测量果实的失重率(weight loss rate,WLR),每次每组称重20个火龙果,重复3次。W=(W0Wn)/W0×100%,式中:W为失重率;W0为初始质量(g);Wn为第n次取样的质量(g)。
硬度(firmness)测定方法参考标准NY/T 2009—2011《水果硬度的测定》。
呼吸速率(respiratory rate,RR)测定方法如下。从每组处理中取出3个果实与新型果蔬呼吸生理测定装置一起密封在塑料保鲜盒中,分别记录仪器0 min和60 min的数值,根据以下公式计算果实的呼吸速率,单位为mg/(kg·h)。呼吸速率=(A2A1)×(V1V2V3)×10–3×1.997/m×60×60。式中,V1为塑料保鲜盒的总体积(mL);V2为3个果实的总体积(mL);V3为呼吸仪的总体积(mL);A2为呼吸仪60 min时的读数(‰);A1为呼吸仪0 min时的读数(‰);m为3个果实的总质量(g)。
相对电导率(relative conductivity,RC)测定参照曹建康等[21]的方法。
采用苏州科铭生物技术有限公司的可溶性糖(soluble sugar,SS)、类黄酮(flavonoids)试剂盒测定。抗坏血酸(ascorbic acid,AsA)测定参照KAMPFENKEL等[22]的方法。甜菜色素(betalaine)总含量的测定参照HUA等[23]的方法。总酚(total phenols,TP)的测定参照王盼[24]的方法。
采用苏州科铭生物技术有限公司的丙二醛(malondialdehyde,MDA)、过氧化氢(hydrogen peroxide,H2O2)、超氧阴离子(superoxide anion,)、超氧化物歧化酶(superoxide dismutase,SOD)、过氧化氢酶(catalase,CAT)、抗坏血酸过氧化物酶(ascorbic acid peroxidase,APX)试剂盒测定。
采用苏州科铭生物技术有限公司的苯丙氨酸解氨酶(phenylalanine ammonialyase,PAL)、过氧化物酶(peroxidase,POD)、多酚氧化酶(polyphenol oxidase,PPO)试剂盒测定。
每组试验设置3个生物学重复,使用Excel 2021软件及IBM SPSS 27软件进行单因素方差分析和主成分分析,采用GraphPad Prism 9.0及Origin 2024 pro软件制图。
不同浓度MT处理火龙果后,贮藏至第12天开始腐烂。第28天,MT处理组(0.2、0.4、0.8 mmol/L)与CK组腐烂率分别为25.28%、40.83%、33.06%、41.39%,MT处理组果实腐烂率均低于CK且0.2 mmol/L MT处理组腐烂率最低(图1A)。果实呼吸速率随着贮藏期的延长呈下降趋势,与CK相比,MT处理组呼吸速率在大部分贮藏期均显著降低(图1B)。整个贮藏期火龙果果实失重率在不断上升,MT与CK相比无显著差异(图1C)。硬度是衡量采后果实品质的重要指标,与果实的质地及构成有关。火龙果果实硬度随着贮藏期的延长逐渐下降,与CK相比,0.2 mmol/L MT处理组仅在贮藏第16天和第28天显著高于CK;0.4 mmol/L MT处理组仅在贮藏第20天和第24天显著高于CK(图1D)。在大部分贮藏期内,MT处理组相对电导率显著低于CK,这说明MT处理能有效抑制相对电导率的增加(图1E)。
火龙果可溶性糖含量随着贮藏期的延长先短暂上升后缓慢下降,在大部分贮藏期MT处理组可溶性糖含量均高于CK,0.2 mmol/L MT处理组除了第12天外均显著高于CK,说明MT处理均能有效维持可溶性糖含量且0.2 mmol/L MT处理效果最好(图2A)。火龙果AsA在贮藏过程中易氧化损失,其整体含量在8 d前呈现上升趋势,8 d后逐渐下降。除第12天外,0.2 mmol/L MT处理组AsA含量均显著高于CK,且贮藏第24天后,0.2 mmol/L MT处理组AsA含量最高,为32.50 mg/100 g,比CK高11.91%,说明0.2 mmol/L MT处理可延缓采后火龙果AsA的氧化(图2B)。总酚含量在贮藏前8 d呈现先上升后下降的趋势,8 d后又出现先上升后逐渐下降。其中,0.2 mmol/L MT处理组总酚含量在大部分贮藏期显著高于CK,而0.8 mmol/L MT处理组在大部分贮藏期低于CK(图2C),说明低浓度的MT能促进总酚含量的升高,而高浓度的MT具有抑制效果。黄酮类化合物是植物中的次生代谢产物,具有较强的抗氧化特性,能清除羟自由基。随着贮藏期的延长,类黄酮含量呈现先下降后上升的趋势,贮藏中后期MT处理组类黄酮含量均显著高于CK(图2D),说明MT处理能有效提升火龙果果实贮藏中后期类黄酮含量,提升果实的抗氧化特性及自由基清除能力。甜菜色素含量在整个贮藏期维持平稳(图2E)。
MDA是细胞内脂质过氧化的最终结果,可以作为脂质氧化水平的指标。随着贮藏期的延长,MDA含量呈现先上升后下降的趋势(图3A)。大部分贮藏期0.2 mmol/L MT处理组MDA含量均显著低于CK,由此可以推测0.2 mmol/L MT处理有效抑制了火龙果果皮的过氧化程度。H2O2在整个贮藏期呈现先上升后下降的趋势,且12 d后,MT处理组H2O2含量均显著低于CK。与CK相比,MT处理组(0.2、0.4、0.8 mmol/L)火龙果在贮藏期结束时,H2O2含量分别降低了16.3%、13.7%、6.8%(图3B),说明MT处理均能有效抑制低温贮藏中后期火龙果H2O2含量的升高,且0.2 mmol/L MT处理效果最好。生产速率在整个贮藏期间呈上升趋势,0.2 mmol/L MT处理的火龙果生产速率均显著低于CK。第28天时,0.2 mmol/L MT处理组O2-生产速率与CK相比降低了16.7%(图3C)。说明0.2 mmol/L MT能有效抑制火龙果O2-生产速率升高,维持ROS代谢稳态。
随着贮藏期的延长,SOD活力在第4天后呈现先短暂上升后逐渐下降的趋势。MT处理组在整个贮藏期间SOD活力均高于CK,且在第12天后差异显著,这说明MT处理能有效维持贮藏中后期SOD活力(图3D)。CAT活力在整个贮藏期内呈现先缓慢下降后上升的趋势,在贮藏20 d后,MT处理组的活力均显著高于CK,说明MT处理能有效提高贮藏中后期CAT活力(图3E)。APX活力在整个贮藏期间呈现先上升后下降的趋势,且0.2 mmol/L MT处理组在整个贮藏期间酶活力均显著高于CK。第28天,0.2 mmol/L MT处理组与CK酶活力分别为1654.38、1473.90 U/g,相比CK升高12.2%(图3F)。
PAL活力在整个贮藏期呈现逐渐升高的趋势,0.2 mmol/L MT处理组酶活力显著高于CK,第28天PAL活力为12.31 U/g,相比CK升高27.8%,说明0.2 mmol/L MT可以有效提高PAL活力,从而增强果实抗病性(图4A)。在大部分贮藏期,MT处理组的POD活力均显著高于CK。第28天,0.2、0.4、0.8 mmol/L MT处理组和CK组酶活分别为417.24、338.8、433.97、304.95 U/g,MT分别比CK酶活力高36.8%、11.1%、42.3%(图4B)。PPO可以催化植物细胞中木质素和酚类物质的形成,从而减少ROS的积累。PPO活力在整个贮藏期呈现先下降后上升的趋势,0.2 mmol/L MT处理组酶活力在大部分贮藏期显著高于CK,且第28天0.2 mmol/L MT处理组酶活力为95.30 U/g,而CK为107.22 U/g,相比CK升高12.5%,说明0.2 mmol/L MT可以有效提高或维持PPO活力(图4C)。
图5可知,腐烂率与MDA、APX呈显著正相关,与相对电导率、失重率、类黄酮、、PAL呈极显著正相关,与呼吸速率呈显著负相关,与硬度、AsA、总酚、SOD、POD呈极显著负相关。呼吸速率与硬度呈显著正相关,与SOD、CAT、PPO呈极显著正相关,与相对电导率、可溶性糖含量、失重率、甜菜色素、MDA、H2O2、APX、PAL呈极显著负相关。相对电导率与腐烂率、失重率、可溶性固形物、甜菜色素、MDA、H2O2、APX、PAL呈极显著正相关,与呼吸速率、硬度、AsA、总酚、SOD、CAT、POD、PPO呈极显著负相关。
采用Pearson法对19种指标进行主成分分析。由表1可知,从19种指标中提取到4个主成分,累计贡献率高达78.57%,保留了大部分信息,符合分析要求。主成分1的特征值为8.91,方差贡献率最高,为46.88%,代表WLR、RC、、SOD、AsA、firmness、PAL、MDA、DR、POD、RR、APX、PPO、SS、TP、CAT;主成分2的特征值为3.40,方差贡献率为17.87%,代表flavonoids;主成分3的特征值为1.59,方差贡献率为8.36%,代表H2O2;主成分4的特征值为1.04,方差贡献率为5.46%,代表betalaine。
综合评分结果显示,0.2 mmol/L MT处理的火龙果果实贮藏期间综合评分均高于CK,且28 d后累计综合得分CK与各处理组(0.2、0.4、0.8 mmol/L)为–1.47、0.78、0.23、0.5,其中0.2 mmol/L MT处理得分最高,因此其综合保鲜效果最好(图6)。
果蔬采收后仍是鲜活的生命体,仍要进行一系列的生理代谢以维持正常的生命状态,在呼吸作用和蒸腾作用的影响下,导致果蔬失重和失鲜。FAN等[25]研究发现,MT处理苹果果实可有效抑制呼吸速率,减少失重率,降低可溶性固形物、可滴定酸含量的损失。在本研究中,0.2 mmol/L MT处理组有效降低了火龙果腐烂率、抑制了呼吸速率,从而延缓了果实衰老。此外0.2 mmol/L MT处理可提高可溶性糖、总酚及类黄酮水平,维持AsA含量稳定,进而提高果实的抗氧化能力,保持火龙果的贮藏品质。这些发现与前人研究一致,如向妙莲等[26]研究表明MT处理显著降低了梨果实腐烂率、呼吸速率,且维持可溶性固形物含量,延缓AsA降解。然而,本研究结果中,MT处理的失重率与CK差异不显著,说明在低温环境中MT对火龙果失重率影响不大。巴良杰等[8]研究表明,2种火龙果在(20±0.5)℃,湿度80%~90%的条件下贮藏10 d后,MT处理组紫红龙果实失重率约为8.5%,景红龙果实失重率约为8%,分别比CK低31.5%和17.2%,与本研究结果有差异,这可能是由于低温抑制了果实的呼吸作用,且果实品种、呼吸类型、处理方式等不同引起的。
果实的衰老过程中,自由基逐渐积累,打破了植物体内自由基的产生和清除之间的稳态。当自由基积累持续到一定程度时,其对细胞内不饱和脂肪酸氧化分解增加,导致植物膜结构损伤[10]。MT除了能直接清除植物体内多余的自由基外还能通过调控其他抗氧化物质的活性的方式间接影响植物抵御过氧化的进程[15]。TAN等[27]研究表明MT处理大白菜能显著抑制相对电导率、MDA、H2O2含量及产生速率的上升,并增强ROS清除系统,从而延缓大白菜叶片衰老。本研究发现0.2 mmol/L MT处理能有效缓解火龙果贮藏期相对电导率、MDA、H2O2含量及产生速率的上升,说明0.2 mmol/L MT处理能保持火龙果果实细胞膜的完整性,维持ROS稳态,从而减轻品质劣变,这与橙[28]、草莓[29]、枣[30]、荔枝[31]等中的研究结果类似。SOD、CAT、APX是清除ROS的关键抗氧化酶,其中SOD清除,CAT、APX协同清除H2O2,起到维持细胞稳态,保护植物正常生长的作用[32-33]。刘顺枝等[34]研究表明低温下火龙果果实延缓衰老可能归因于SOD、CAT、APX活力的增强。在本研究中,相对于CK,0.2 mnol/L MT处理有效增强SOD、CAT、APX在贮藏中后期的活力,延缓了火龙果果实的衰老。
PAL、POD、PPO在保护植物免受氧化损伤、植物抗逆、病原菌侵害中起着重要作用。PAL是植物苯丙烷代谢途径第一步的关键酶,而POD与PPO是苯丙烷代谢途径下游关键酶,它们不仅参与ROS代谢途径,同时能催化生成木质素、植保素等抗菌物质,增强植物抗病性,从而保护植物免受病菌侵害,降低果实腐烂率,延长果蔬贮藏期[35]。本研究表明,0.2 mmol/L MT处理有效提高了火龙果果实的PAL、POD、PPO活力,防御酶活力的增强提升了火龙果果实的抗病性,从而抑制果实的腐烂。
相关性分析表明19个指标间存在显著的相关性,且火龙果果实腐烂与ROS代谢紊乱、膜脂过氧化密切相关。因此维持ROS稳态、减轻细胞膜损伤是保持火龙果品质、延长货架期的关键。通过主成分分析对19个检测指标数据进行有效降维,并对不同浓度MT处理进行综合评价,综合评分最高为0.2 mmol/L MT处理组,说明其保鲜效果最好。本研究表明,0.2 mmol/L MT处理可以通过提高火龙果相关抗氧化酶活力,维持ROS稳态,从而减轻膜质过氧化程度。同时,0.2 mmol/L MT处理可以有效激活火龙果抗病相关酶系统,避免ROS过度积累,从而保持果实品质,减少采后病害。研究表明,MT参与生物体的多种代谢过程并且在较大剂量范围对人体无毒[36],因此,MT作为一种绿色的新型化学保鲜剂具有很高的研究价值和潜在开发前景。
